Rainbows are wonderful for many reasons, but for me they are always a sign of hope. In the Old Testament the rainbow is a sign of the covenant God made with Noah and his family following the flood. God’s promise to Noah was “the waters shall never again become a flood to destroy all flesh (Genesis 9:8-17).” Regarded with awe and admiration for its beauty, the rainbow became a feature of scenes of heaven. In Revelation 4:3 in his vision John writes “At once I was in the Spirit, and there before me was a throne in heaven with someone sitting on it. And the one who sat there had the appearance of jasper and carnelian. A rainbow, resembling an emerald, encircled the throne.” In the magnificent Wade Chapel in Lakeview Cemetery in Cleveland, OH this scene is depicted in opalescent glass by Louis Comfort Tiffany. As Christians we have the ultimate hope in Jesus Christ who, in complete faithfulness to God our Father, overcame death and the grave. In him we have the hope of everlasting life. I have found that most of the time I have to look for the rainbows. In other words, after the rain I have to go out and search the sky if I’m going to see the rainbow’s glory. We have to look not only for hope, but for the peace, joy and love around us gifts of God’s grace that we can share with others. During this past week we saw a beautiful

for many reasons, but for me they are

Pastor Carol’s Farewell - Open House For all the Church community and others for whom Carol has provided love, support and counseling, we will host an Open House at the Lions Pavilion on Stissing Lake on Saturday, November 17 from 2:00- 4:00 pm. Light refreshments will be provided. All are welcome, no RSVP is necessary. Anyone willing to help with refreshments that day should call Kathy Bartles at 398-7568 or leave a msg on the church office phone at 398-7117. Thanksgiving Eve Service We are hosting the service at our church this year. It will be on Wednesday Nov. 21 at 7 pm.

Book Buddies

An opportunity to make a difference for a child. Literacy Connections is bringing a new program to the Seymour Smith school in Pine Plains. They are seeking volunteers to spend one hour a week with 1 or 2 children, reading to them or having them read to you. Men and women welcome! They are working with a contact at the School, and will provide training, materials, etc. You can call them directly at 845-452-8670 and ask for Katherine Stikkers. Women’s Bazaar

The Women’s Association wishes to thank everyone for their help and support at this year’s Christmas Bazaar. We made a total of $3,584.00 which includes $1,011. made on the bake sale.

There was also a raffle by the Women’s Assoc. at the turkey dinner. Dot Whitaker won a quilt made by Rosann Kemp, and a Nativity scene made by Jan Brooks was won by Janet Fitzgerald. The raffle at the dinner took in an additional $80 for the bazaar sales.

We could never pull off such an accomplishment without help from so many! We thank you!

Pastor Carol’s Farewell Luncheon

Dear Members and Friends, Thank you so much for the wonderful retirement party. It was a blessing to me and a very special gift to have you there as well as folks from Ozone Park, Fr. Cartier and his wife and my family. Thank you for all your love and support at this time of transition into retirement. Thank you for allowing me to serve as your pastor these last eleven years. Turkey Dinner The final $$ tally has not yet been calculated but we sold 175 meals (63 sit-down and 112 take-out) which is less than usual but there were several other big events going on that night which probably drew people away from ours. Still, the dinner went like clockwork and the food was delicious, thanks to our wonderful volunteers who baked and cooked and worked so hard to make it a success, including the help of two students from the high school. Thanks also to everyone who donated items for the dinner which help lower our costs. --- Jeanne and Dyan

Two Recipes You Should Make

It’s November! And the air has a chill. Time for hearty cooking so

bring out that crockpot and let’s get started. This month’s nutrition

corner hold recipes made by our Fabulous cooks/bakers who helped

the kitchen component for the woman’s association break a record

thousand dollar sale effort at their annual Christmas Bazaar.

Susan Newland McCarty made a delicious chili that I was told was

delish! So I take it on good authority that this is a recipe to put into

use on chilly weekends. Make before church service and come home

to good smells and your halftime meals are solved. This recipe was a

sell out so just saying….

Black Bean ‘n’ Pumpkin Chili Crockpot on low 4-5 hours, 2 ½ quarts (10 servings)

2 T. olive oil

1 medium onion

1 Medium yellow pepper (but red or green would do)

3 garlic cloves minced

2 cans black beans rinsed and drained

1 can solid pack pumpkin

1 can diced tomatoes, juice included

3 c. chicken broth

2 ½ c cubed chicken (turkey ok too)

2 tsp. each dried parsley flakes and chili powder

1 ½ tsp. each ground cumin and dried oregano

½ tsp. salt

In a large skillet heat oil. Add onion and pepper and cook until tender. Add garlic and cook a minute

more. Put all in crockpot and add all remaining ingredients. Cook covered 4-5 hours on low. Serve and

enjoy. Top with avocado and/or green onion chopped. Think Thanksgiving leftovers!

Elizabeth Beier can always be counted on to make a treat, wrap it and tie with a bow! This year did not

disappoint. Her Oatmeal nut and raisin cookie was a hit. I ‘loved’ them and so promptly sent her an

email requesting the recipe and asking her to share in the newsletter. She was happy to do so and

included the story behind the cookie. I felt I had to share that too. So here goes….

“They’re not a family recipe, but have a nice little story behind them: I edited this recipe in Tate’s Bake

Shop Cookbook almost fifteen years ago. Do you know Tate’s Cookies? They are sold all over the place

now (in a green paper package), but when we did this cookbook they were just starting that side of the

business and were a small and beloved bake shop in Southampton, NY started by Kathleen King.

Kathleen grew up in a farm family in Noyak, New York and made money to put herself through SUNY

Binghamton by making chocolate chip cookies and selling them at her father’s farm stand. Her first

business after graduating was called Kathleen’s Cookies, but later, after a split with investors, she needed

a new company name and chose Tate’s after her father’s nickname, Tater (he was mostly a potato

farmer).

Anyway, Kathleen’s a runner and fitness enthusiast in addition to a baker. She likes to make energy bars, trail

mix, etc., and this cookie is inspired by that aspect of her life while still being a full-on cookie. You are right:

there is healthy stuff in them!

Here’s a snap of the recipe from Tate’s Bake Shop Cookbook (St. Martin’s Press, 2005). I used dark brown

sugar and altered just a bit by using pecans instead of peanuts (I’m from Texas, after all!), and best quality

chocolate (I used Callebaut—the closest brands available at Peck’s are Sharffenberger and Ghirardelli), with

half the quantity in semisweet chocolate and half the quantity in bittersweet chocolate (so 1/2 cup

bittersweet chocolate chips and 1/2 cup semisweet chocolate chips). It’s not important that they be chips—if

you can’t find bittersweet chips, which can be elusive, get a bar or chunk of bittersweet chocolate and hack it up

roughly with a knife or pulse it in a food processor to make enough to fill a half cup measure). That half

semisweet/half bittersweet chocolate is one of the best baking tricks I’ve come up with!”

The original idea was to make a trail mix into a cookie. The name corp was a nickname her friend gave them.

Corp Cookies 350 degree oven 15-17 minutes

½ c flour

¾ tsp salt

½ tsp baking soda

½ c. unsalted butter room temp.

½ c. packed light or dark brown sugar

¼ c. sugar

1 large egg

1 tsp. vanilla and 1 tsp. water

1 ½ c. rolled oats

1 c. total chocolate chips semi sweet or a mixture (See above article)

½ c. peanuts

½ c raisins

Combine dry ingredients and set aside. Cream butter and the sugars. Add the egg. Add the vanilla and water.

Mix until combined. Next add the dry ingredients and combine. Then add the chips, raisins and nut.

Remember Elizabeth used pecans but I imagine walnuts would work as well. Drop by ¼ cup full 3 inches

apart on cookie sheet then bake. Dropping by normal smaller heaping teaspoon size would work too, but

adjust the baking time. Check at 10 minutes. I think this recipe could be doubled without any problems.

Well, I was going to add my pie crust recipe but there is always next month. If you have a recipe to share pass

it along.
