In March, on spring vacation, we went to the Sarasota Yacht Club for a day. It was an experience we will never forget. We got a tour of the club and we couldn’t wait to get started! The dockmaster got us set up and we went kayaking on Sarasota Bay. We then went to the pool, which had the strangest lifeguard we have ever seen – a giant tropical bird! He watched us for a while, and then his shift ended and he went off for his lunch break. We got hungry too, so we hit the popcorn machine and then we went for lunch. Lunch was very good and the dining room was decorated with miniature ships. After we ate, we went to see the yachts parked behind the club. We will ask our parents for one this Christmas, we think. We hope they say yes! Before we left, we played a couple games of foosball at the foosball table, where our parents were badly crushed. If you go to Sarasota, you should really visit this club, but bring your own foosball ball!

This month we welcome Drew Estate Cigars to our patio with special guest Willy Herrera. Willy has his own line, Herrera Esteli, and was announced 2 years ago as the master blender for Drew Estate. Come pick Willy’s brain and enjoy some cigars on the PAC Patio.

Cocktail Of the month

INGREDIENTS: DIRECTIONS In a 7-quart cast iron Dutch oven, heat oil over medium-high heat. Sprinkle in flour and, using a wire whisk, stir constantly until brown roux is achieved. Do not allow roux to scorch. Should black specks appear in roux, discard and begin again. Once roux is golden brown, add onions, celery, bell pepper and garlic. Sauté approximately 3-5 minutes or until vegetables are wilted. Add andouille; blend well into vegetable mixture and sauté an additional 2-3 minutes. Add claw crabmeat and stir into roux. This will begin to add seafood flavor to the mixture. Slowly add hot shellfish stock, one ladle at a time, stir-ring constantly until all is incorporated. Bring to a low boil, reduce to simmer and cook approximately 30 minutes. Add additional stock if necessary to retain volume. Add green onions and parsley. Season to taste using salt, pepper, Worcestershire and Tabasco. Fold shrimp, lump crabmeat, oysters and reserved oyster liquid into soup. Return to a low boil and cook approximately 10 minutes. Adjust seasonings and serve over cooked rice.

3/4oz Rhum Barbancourt 8yr 3/4oz Myer’s Dark Rum 3/4oz Shellback Silver Rum 3/4oz Honey Syrup * 3/4oz Fresh Lime Juice 3/4oz Grapefruit 1/2oz All-Spice Dram Splash of Club Soda

DIRECTIONS:

Combine all ingredients in a mixing cup full of ice. Shake and strain into a glass full of ice. Garnish with orange or orchid.

Seafood Gumbo

1 pound (35-count) shrimp, peeled and de-veined 1 pound jumbo lump crabmeat 2 dozen shucked oysters, reserve liquid 3 quarts shellfish stock 1 cup vegetable oil 1 cup flour 2 cups chopped onions 1 cup chopped celery 1 cup chopped bell pepper 1/4 cup diced garlic 1/2 pound sliced andouille sausage 1 pound claw crabmeat 2 cups sliced green onions 1/2 cup chopped parsley salt and cayenne pepper Tabasco sauce Worcestershire sauce

Notes:* Honey Syrup: 1 part Honey 1 part hot water Combine in a glass bowl and whisk together. Cool and

store in refrigerator.
