Summer ResidentRecipe Exchange!
Crispy Chicken WrapsIngredients• 1/3 cup mayonnaise, light
or regular• 1/4 cup chopped fresh cilantro• 3 scallions, sliced very thin• 2 tablespoons sour cream, light
or regular• 2 teaspoons hot sauce (this does
not make them spicy but addsgreat flavor!)
• 1 rotisserie chicken shreddedinto bite-sized pieces (3 cups)
• 2 cups shredded cheddar cheese(the sharper the better, inmy book)
• 4 (12-inch) flour tortillas
Directions• Whisk the mayonnaise, cilantro,
scallions, celery, sour cream andhot sauce in a large bowl. Addchicken and toss to combine.Sprinkle cheese over tortillas,leaving 1/2-inch border aroundedges, then arrange chickenmixture down the center of eachtortilla. Roll stuffed tortillas,leaving edges open. Spray thetortillas all over with cookingspray.
• Heat a large non-stick skillet (orgriddle) over medium heat for 1minute. Arrange 2 wraps,seam-side down, in pan andcook until golden brown andcrisp, about 2-3 minutes per side.Transfer to a plate and repeatwith remaining wraps. Serve.

Build a Fairy GardenSome people transform their entire
backyards into lush landscapes thatappear particularly inviting to mythicalcreatures such as fairies and gnomes.But did you know you can create yourown enchanting world to keep insideall year long? This whimsical trend iscalled a fairy garden or miniaturegarden.
Begin by choosing a container foryour tiny garden. Choose one that fitsyour space and the number of plantsand accessories you want to add. Besure the container has properdrainage.
Miniature gardens feature varioustypes of plants to give the appearanceof grass, trees and shrubs. Somepeople choose low-maintenanceplants, such as moss and succulents,while others prefer herbs or miniatureflowers. Select plants that have similarlight and watering requirements.
Fairy garden décor can be madeout of various objects. Build a fairyhouse out of stones and twigs, orcreate a pathway with pebbles oraquarium gravel. Look around yourhome for small objects to incorporatein your garden—perhaps buttons ormarbles. Get creative!
Garden centers and craft storesare also a good source for fairygarden accessories. Consider addinga bench or chair, a fence or a bridge,a wishing well or a birdhouse—thepossibilities are endless. Just don’tovercrowd your garden. Be sure toleave room for the plants to grow.

Riding the WavesSince its early days in ancient
Polynesia, surfing has been more thanjust a sport—it’s a way of life.
Although an integral part ofHawaiian culture, surfing fell out ofstyle during the 1800s, whenEuropean influence replaced manyisland traditions. However, thanks to agroup of Waikiki “beach boys” whocontinued to practice the sport, surfingwas rejuvenated in the early 1900s.
Olympic swimmer DukeKahanamoku, called the father ofmodern surfing, was instrumental inintroducing surfing to other parts ofthe world, including Australia, NewZealand and California.
By the 1960s, surfing hadpermeated American culture, withfilms like “Gidget” and “Beach Party”finding success at the box office.Surfing lingo—such as “dude” and“gnarly”—caught on with teenagers
wanting to emulate the carefreelifestyle of a surfer. Jan and Deantopped the charts with “Surf City” and“Honolulu Lulu,” while the Beach Boyswere singing “Surfin’ U.S.A.” and“California Girls.”
Today, surfing remains a popularcompetitive sport as well as a hobbyfor many thrill-seekers. While trickssuch as aerial flips provide plenty ofexcitement, the biggest rush for manysurfers is simply experiencing thepower of the ocean while searchingfor the perfect wave.
