FREE BASIC RECIPES: TOFFEE BARS

¾ cup of Butter + ½ cup of Brown Sugar + ½ tsp of salt = beaten until soft.3 tbsp of Milk + 1 tsp of Vanilla Essence = added to the beaten mixture.1 ½ cup of Flour = added to all the above beaten mixture.¼ cup of Vegetable Oil (not Olive) = added to the floured mixture and beaten until well mixed.

1 cup of Hazelnuts or Pecan or Walnuts or Peanuts = OPTIONAL to add at this point.OR

½ cup of Cherries or Berries or Raisins or Fruits of your choice = OPTIONAL to add at this point.

*Bake at 180 degrees Celsius or 350 Fahrenheit, for 20-25 minutes*Once cooked (where the edges are lightly browned & slightly crusted), let it rest for 2 minutes.

½ cup of Melted Chocolate = OPTIONAL to spread on top.½ cup of grated nuts = OPTIONAL to sprinkle on top of the melted chocolate.

FREE BASIC RECIPES: CHOCOLATE-BASED BROWNIES

¾ cup of Butter + ½ cup of Melted Chocolate + ½ tsp of salt = beaten until smooth in one bowl.5 tbsp of Milk + 1 tbsp. of Cocoa Powder = added to the above mixture until smooth.

3 Eggs + 1 ½ cups of Sugar + ¼ Veg. Oil = In another bowl, beat eggs and sugar until sugar dissolves.

*Then add both mixtures together and beat until smooth.* *The mixture by now should look like one delicious molten chocolate mix*

1 cup of Flour +1 tsp Baking Powder = fold in flour and baking powder into the above mixture.1 cup of Hazelnuts or Pecan or Walnuts or Peanuts = OPTIONAL to add at this point.

OR½ cup of Cherries or Berries or Raisins or Fruits of your choice = OPTIONAL to add at this point.

*Bake at 180 degrees Celsius or 350 Fahrenheit, for 30-35 minutes*

Once cooked (where the edges are darkened, browned & slightly crusted), let it rest for 2 minutes.½ cup of Melted Chocolate = OPTIONAL to spread on top.

FREE BASIC RECIPES:

PLAIN BUTTER COOKIES

1 cup of Flour + ½ cup of Butter + ½ cup of Sugar + 1 tsp of Vanilla Essence + ½ tsp of salt = mix with a fork until resembles fine crumbs.

Mold into a TIGHT round-cylinder shape and wrap with plastic-foil to be refrigerated for ½ hour.When chilled, unwrap the molded mixture and cut into 1-2 inches thick slices.Should get about 12-15 slices (depending on thickness of each slices).Place on baking pan and let rest until the cut slices reaches room temperature before baking.

*Bake at 165 degrees Celsius or 325 Fahrenheit, for 23-25 minutes*½ cup of Melted Chocolate = OPTIONAL to spread on top.

OR3 tsp of Icing Sugar = OPTIONAL to dust on top.

ORDecorated with Fondant.

FREE BASIC RECIPES:BEST SAVOURY OATMEAL

½ tbsp of Butter + ½ tsp of Salt + ½ tsp of Chopped / Grounded Garlic & Onions = in a small soup pan on medium heat, sauté all ingredients until butter slightly darkens.

*Sea Salt, Pepper, Chili Flakes, Meat Slices/Cubes, Chopped Sausages, Mushrooms, Peas, etc = OPTIONAL to just add flavor or balance flavor to your preference at this point.*

¾ cup of Water + ¼ cup of Milk = add to the sauté mixture and stir. Once boiling starts, stop stirring and bring down the heat to low.

1 cup of Oatmeal = add to the boiling mixture (in slow heat) and stir until oatmeal starts to absorb the liquid.

¼ cup of Cheddar Cheese or any hard cheese = add to the oatmeal mixture and stir until cheese dissolves. Ready to serve in a bowl and enjoy every rich spoonful.

*If less liquid is desired, then continue cooking on slow heat until the desired liquid consistency is reached.*

Chopped Spring Onions, Sliced Chilies, Sunny-Side Up Eggs, etc = OPTIONAL to add on top.

FREE SHORTCUT RECIPES:SOFT CRISP FRIED CHICKEN

5pcs of medium-sized Chicken cuts + ½ tbsp. of Butter (or just a touch) + ¾ tsp of Salt = cover chicken cuts with salt, then spread butter.

* Butter is a good way to go for quick shortcut marinated chicken. The butter (not melted) will add that “special” flavor to each chicken cuts when fried while the salt penetrates the chicken meat. Butter is a great carrier of flavors for marinating chicken without dissolving too much of the flavorings / marinate ingredients. For this recipe, the added butter will enhance and only slightly separate the following marinate ingredients on the outside just well enough so when

fried, the crispy bits will burst in flavour.*

1 tsp of ‘Kunyit’ + 1 tbsp. of Corn Flour + ½ tsp of Black Pepper + ½ chili flakes + ½ tsp of any non-salted flavors to your liking = firstly, mix all flavors together then add to the buttered chicken cuts. Mix well all over every piece until corn flour is absorbed in the butter.

Heat oil in a frying pan until hot then reduce heat to medium. Fry chicken cuts until cooked and golden brown. Ready to serve. Enjoy.

Rice, Noodles, Vegetable, etc = OPTIONAL to add as a side dish.

FREE BASIC RECIPE TIPS:MALAY SAMBAL BELACAN

When beginning to start putting together your ‘sambal belacan’ (prawn paste sambal) ingredients, try the following:

* Fry the onions and garlic prior to adding to the ‘belacan’. Richness in flavors are heightened and the sambal lasts longer.

* Add an inch of lemongrass-shoot or the stem. Rawness of the chili and the sharp-spiciness is reduced and balanced at a whole new level. There will be no traces of sourness. However, if lime or vinegar is added to your sambal, a small amount of lemongrass partly plays a role of enhancing the “richness” of sour ingredients.

* Add a pinch of black pepper if sugar is added to your sambal. Black pepper powder (like mustard powder) is hot, not spicy. Somehow, a pinch of it heightens the sweetness of sugar without you having to add too much sugar.

Vegetables are amazing! But depending on the climates the vegetables are grown from, some of the following suggestions may work just as well for you, as how it did here in our tropical country, Malaysia.

* Getting a mild ‘seaweed’ / “smooth ocean” taste, crunch & flavor from land plants / vegetables.

This is great when added to sandwiches, burgers, hotdogs, dry-fried rice and dry-fried noodles.

* Getting the sugary sweetness taste without the vegetable taste.This is great for cooked or raw sweet and sour dishes.

* There are vegetables that goes great with chocolate.This is great when you run low of chocolate flavorings and also for deepening

FREE BASIC RECIPES:EASY-PEASY ENERGY

BARS1¼ cup of Flour + 1 cup of Oats + ¼ or ½ cup of Fine Sugar (depending on your preferred sweetness level) + 1 tsp of Vanilla Essence + ½ cup of Raisins + 1 cup of Coconut Shreds = mix with a spoon and make a well in the middle.

½ cup of any Dried Fruits ( Apricot, Apple, Fig, Banana, etc) or Dried Sweet Vegetables (Carrots, etc), Unsalted Nuts (Peanuts, Macadamia, Walnuts, etc) = OPTIONAL to add at this point.

½ cup of Butter + 3 tbsp. of Honey + 1 tsp of Baking Powder = in a small saucepan, heat these ingredients over low heat then pour into the well of the above flour mixture. Mix thoroughly.

Line baking paper on the baking tray and you can either spread the mixture flat and patted-down or make spoon-droplets.

*Bake at 160 degrees Celsius or 325 Fahrenheit, for 15-20 minutes*

Cut into individual bars (if needed) while hot and let cool for 2-3 minutes on the baking paper. Ready to serve and enjoy!
