Our mission at My Hometown Estrella has remained the same for almost four years now, “To connect residents to each other and to key resources with the goal of building community.” It’s a process we’ve nourished and balanced from our very first issue with the help of your insightful contributions.

As we reap what we have sown, you’ll find this issue loaded with tips offered by neighbors throughout the community that will help you transition your homes and your lifestyles from summer into the new season with simplicity. Our cover story features two skilled soc-cer professionals who are harvesting their passion and

knowledge so young players may be skill-fully competitive as athletes and positively developed as citizens, enabling them to be contributing role-models both on the soc-cer field and within their communities.

We think you’ll enjoy reading about the Golf Club of Estrella’s Grounds Crew Recognition celebration and learning how new community-minded organizational groups are forming within our local pub-

lic schools. Now is the time to sign up for the Casino Night fundraiser, a great night of fun at the Starpointe Residents Club with proceeds benefiting Westar and Estrella Mountain Elementary schools. It’s also the season to enrich your own creativity with an interesting course offered by the Creative Arts Academy.

worldnetsoccer corp club president, gustavo martinez, is excited to announce the new additions

to league play. coach sharif leads a boys 13-year-old team, while rhodes coaches a boys 19-year-old

team. both coaches bring a wealth of positive impact to build player and team development.

coach Joseph “Joe” rhoades

Coach Rhoades has nearly a decade of involvement in soccer in different areas throughout the Valley. Originally from San Diego, California, Coach Rhoades ventured into Arizona in 2000. As a player, he was involved in numerous soccer clubs in the Valley includ-ing, Scottsdale United, SC DEL SOL under former English Premier League player and England International, Paul Mariner. Coach Rhoades earned a soccer scholarship to the College of the Southwest in Hobbs, New Mexico, later graduating from Arizona State University. While at ASU, he helped his club soccer team become victorious in the national championship and was named “All Tournament Team.” Joe also played with AZ Inferno, the Harrisburg City Islanders, and USL.

Coach Rhoades moved into a successful coaching career at Greenway High School, his alma mater, but he is best known in this community as Social Studies teacher and Girl’s Varsity Soccer Coach at Estrella Foothills High School. As Girl’s Varsity Soccer Coach dur-ing the 2009/2009 season, Coach Rhoades led the team to capture two straight regional titles and a state championship. In 2009, Coach Rhoades switched gears and became the head Boy’s Varsity Soccer Coach at Estrella Foothills High School, bringing this team to their first regional championship and subsequent progression through the state tournament to the quarterfinals.

Coach Rhodes has been awarded the status, “Region Coach” three times from 2007 to 2009. In 2008, he was named “Coach of the Year,” along with Arizona Republic’s “Small School Coach of the Year” and West Valley “Coach of the Year.” Coach Rhoades enjoys the sport as a participant in adult league play, saying, “Being a player is even more fun than being a coach.” He believes that being a player, as well as a coach, has taught him life skills that include the importance of self-discipline, good work-ethic and camaraderie among players and peers. He added that the most important thing that the game of soccer has taught him is, “The harder you work, the greater your gain.”

Coach Sharif also carries and extensive background as a soccer coach and trainer, with a coaching career dating back to 2000. His career began in Bradford, UK and includes Club Developmental Coerver coaching in Minnesota and Arizona.

Coach Sharif brought his effective leadership skills and training methods (incorporating the Coerver method of coaching to build skill development, ball handling, conditioning, footwork and mobility tech-nique) to Goodyear, Arizona as the Boy’s Varsity Head Soccer Coach at Desert Edge High School. He has been leading the Scorpions since 2009. As the high school’s first season coach, he brought the team to the first round of the 4A-Division 2 State Playoffs.

Coach Sharif ’s biggest rewards as a soccer coach? “Working with young kids, developing them and seeing them move on within the sport.” He recalls the positive experience of coaching a group of 10 year olds back in the UK, taking them all the way to third place in the state playoffs and feeling a sense of accomplishment when seeing the kids again on their local high school team, grown up and mature in the sport. Coach Sharif stated that “Soccer is life!” and with that mantra, he will continue to pursue making a living teaching the sport. His parents once told him that there was no career in soccer. Yet, Coach Sharif continues his dream of a career in soccer, working from the bottom and moving up.

Coach Sharif intends to build his reputation as a leader by getting to know the kids, building his reputation as a coach, and eventually becoming involved in the college side of things. For now, it’s all about making sure that any young person who wants to play soccer has the opportunity to do so.

4th annual estrella kid’s triathlon

Estrella Multisport Club, Inc. announces the 4th Annual Kid’s Triathlon designed for kids ages 5-13 to compete non-competitively in the areas of cycling, running and swimming. The event will take place on Halloween, October 31, beginning at 8 am at the Starpointe Residents Club.

There’s no better way to jumpstart ‘trick or treating’ than with physical exercise in a positive environment with specially-designed courses through-out the Estrella community. Don’t miss out on the raffle after the last race, offering up some great prizes! Numerous local sponsors are contributing to the success of this event and volunteers are needed.

kids fitness fall classes forming

Personal Fitness Trainer Dawn Terry is devoted to keeping your chil-dren healthy and active with Kids Fitness classes at the Starpointe Residents Club this fall. Classes are forming now. Kindergarteners through third graders will meet at the club on Wednesdays from 1:45 to 3 pm. Local elemen-tary schools have early release days on Wednesdays, so this time is designed to transition the kids from mental to physical enrichment. Studies show that active children have stronger muscles and bones, leaner bodies and are less prone to obesity. Additional health

benefits of physical exercise for youngsters also includes better sleeping patterns, as well as a better ability to handle daily physical and emotional challenges. Contact [email protected] to reserve a spot for your youngster.

estrella Players recognize golf club of estrella grounds crew

During 2010, residents and golfers from around the country have had the opportunity to play one of the best layouts and best conditioned courses in the Valley. Recently, regular players at The Golf Club of Estrella got the idea that much of their enjoyment was attributable to the course’s Grounds Crew that is up before dawn every day preparing the course for play. In recognition of their efforts, George Cuzalina, Estrella resident and Men’s Club regular, suggested special recognition was in order for the outstanding course conditions this year.

George contacted Dean Hall, the golf course Superintendent, and

proposed a couple of options to recognize Dean and his crew for all their work. Shortly thereafter, agreement was reached to host a recognition event on Friday, August 13 at South Lake Park. The event’s attendees included a number of the regular players along with the Grounds Crew after finishing the crew’s workday at 11 am.

Players provided the funds, the crew provided food, the chef, and drinks. The cooking was done by Grounds Crew Foreman, Ramiro Santiago, and all attendees enjoyed an out-standing lunch consisting of carne asada with all the traditional Mexican fixings.

Amazingly, thirty pounds of steak was con-sumed by the participants,

with only a few liquid refreshments remaining at the conclusion of the festivities. The players enjoyed the opportunity to recognize a group most responsible for their enjoyment of our community’s outstanding golf course and the Grounds Crew appreciated the recognition and opportunity to con-nect with players.

Last month, we featured A.J. Berry in our Meet Your Neighbor sec-tion as a citizen in the community to know. A.J. has since retired from his position within the community with Capital Consultants Management Corporation. But, he didn’t slip into retirement without a large hometown-style ‘send off ’. Estrella resident, Rachel Neumann shares her story about the going away party:

No, I’m not a post-summer illusion created by your weary, over-worked, half sun-baked, fatigued mind. Yes, you really did see something unusual. I’m that peculiar pelican -- the brownish one that you may have seen stand-ing close to the water’s edge on North or South Lake during the earliest

morning or latest eve-ning hours on any given day the past several months. I’ve let you and my friends at the Yacht Club get fairly close to me, as I am accustomed to hanging out in groups with other pelicans and being surrounded by

movement. But, you see, I’m lost. I’m fortunate enough to have found two bodies of water where I can seek refuge until I am brave enough to find my way back home to either California or the Gulf of Mexico where the sun is warm and I can be sur-rounded by other pelicans, as well as abundant water and fish supply.

Because I am not injured or distressed, I won’t be removed from my temporary habitat here in Estrella by officials from the Arizona Game and Fish Department. And because I’ve become disoriented, quite possibly from being blown off-course from a monsoon windstorm, it would save me any further distress to remain near the water’s edge until I feel comfortable enough to leave on my own. Please don’t throw objects at me or attempt to scare me away. Eventually, if I am not harmed by humans or animals, I will feel comfortable enough to leave on my own. I am conditioned for warm weather because of my hollow feathers and I’m enjoying the fish in both lakes for temporary nutrition.

Pelican is derived from the Greek work pelekys, meaning ax. This applies to birds that cut wood with their bills or beaks.

There are eight different species of pelicans that inhabit warm •regions – the brown pelican is notably the smallest.

Pelicans are found in all continents except Antarctica.•

Pelicans swim well because of their short, strong legs and feet; they •have four webbed toes and a short-square tail.

Pelicans can commute 100 miles to feeding areas.•

They usually plunge or dive for its prey.•

White Pelicans, usually found on the coastline, have been seen in •the Gila River.

The retirement party that was organized by caring community members for A.J. Berry was an amazing success, mostly due to the wonderful, caring people here at Estrella. A.J. was sent off to his retirement with a lot of love and good wishes.

I had contacted only about 20 families and put up a couple of flyers in the Starpointe Residents Club. There was no way to know how many people would show up. I thought at best that there would maybe be about 40 people that would come and go throughout the afternoon. I booked one room that held only forty people.

By three o’clock that Sunday afternoon, the room was literally packed wall to wall with well wishers. We couldn’t even get to the food table! When the management at Estrella saw how big the crowd was, someone in authority pulled some magic and opened up all three event rooms to accommodate the huge crowd.

We couldn’t actually count the people who came (and sometimes left quickly because it was so crowded), but we are quite sure there were at least ninety people that showed up to show their respect and gratitude to A.J.!! Once the rooms were opened up, people came and stayed for the whole after-noon!

The success of this event says something so positive and heart warming about the community at Estrella! I am still full of so many good feelings because of the wonderful people that showed up with great food, bright smiles and enthusiastic well wishes. It’s a day that I will always remember with a smile of sweet nostalgia. Community does still exist! Imagine that! Thank you Estrella Community!

Something new is taking place at both local elementary schools this year. Parent Coffee Talk with the Counselors offers a great opportunity for parents to build relationships with school counselors as well as other parents in the community. These meetings will incorporate specific topics of interest and will be alternated each month between Estrella Mountain Elementary School and Westar Elementary School. Mark your calendars for upcoming outlined events.

We have had the pleasure of serving the students of the Buckeye Union High School District for more than a few years now. In our administrative roles, we have enjoyed watching young people as they participate in learn-ing experiences in the classroom and extra-curricular activities that extend their day. We have seen the pride in their faces as they have excelled in the classroom, in the athletic arena, and in front of audiences in the arts. We appreciate that the young people we interact with are the future of our com-munity and want to provide them with the best preparation possible to face the challenges they will need to conquer in the not too distant future. To do this, we know that we need to have a highly qualified staff, keep class sizes low, maintain safe campuses, and offer extra-curricular activities that make the high school experience meaningful for students.

The state of Arizona allows voters in a community to provide addition-al funding to their local schools in order to do those things that we know are vital. In 1990, the voters of the Buckeye Union High School District passed an M&O Override to support the educational programs in the dis-trict. That override was renewed in 1996, 2001, and 2006. On November 2, 2010, the voters of the district will again determine if they will continue

that support. That support, that currently costs the owner of a $100,000 home $19 per year, provides the district $1.7 million annually to maintain staffing and programs.

We recognize that families are struggling in this economy. In addition, we know that Arizona residents in May passed a proposition to minimize cuts that the state was making to educational funding, but the override is an important part of the district’s funding. Even with the passing of the sales tax initiative in May, the district’s budget has still been cut by $620,000. Since 2007, budget cuts from the state level have amounted to a loss of over $1.5 million in funding for the district. On August 23, Mayor Cavanaugh and the Goodyear City Council presented to Larry Cervarich and Elizabeth Ridenbaugh, Goodyear White Tanks Rotary Club members and citizens of this fine community, the Citizens Community Service Award. rotary sponsored interact group forming at estrella foothills high school

Members of the Goodyear White Tanks Rotary Club held a meeting of interest presenting a new interactive group at Estrella Foothills High School On August 17, 33 students came to the meeting, stating inter-est in forming a group. The community service club called “Interact” has a goal to encourage and foster the advancement of international understanding and goodwill through a world fellowship of youth united in the ideal of service.

Once the group is established, students will volunteer to assist in a variety of essential projects, perhaps dealing with local youth homelessness, etc.

Stay tuned to learn how these young people, along with guidance and sponsorship from their faculty and Rotary Club Advisors, will work together to make a positive difference for young people in need.

west Valley home art & studio tour features estrella residents

This month, three Estrella residents share featured artwork in the West Valley Home Art & Studio Tour. The tour features a total of six artists, three in Litchfield Park and three in Estrella. The three local residents participating in the self-guided tour scheduled for October 24 are Harmony Mendelow, Frank Williams and Debra Goley. These local artists will open their homes and studios that day from 11 am to 5 pm. A limited number of tickets are available for this self-guided tour through six homes for $25 each. “Each home is an amazing display of a lifetime of creating and collecting,” says Julie Richard, President & CEO of the West Valley Arts Council. Patrons will be able to purchase artwork directly, if desired.

The Creative Arts Academy of West Valley is a not-for-profit organization whose mission is to reach the west side with the arts! We are excited to be able to offer an amazing cur-riculum to students and adults right here in our community.

Safeway is opening its doors this month at the Mountain Ranch Marketplace. To kick off the celebration, Safeway will be sponsor-ing a free fireworks display on Wednesday, October 20. Free food, beverages and music will start at 5 pm and the lakeside fireworks will start promptly at 7 pm. The official grand opening and ribbon cutting will take place on Friday, October 22 at 8 am at the store. On Saturday, October 23, mammo-grams and flu shots will be offered as well as a variety of tastings throughout the store. Safeway will also be sponsoring its first Estrella golf tournament on Friday, October 29. The tournament will benefit the Safeway Foundation and local schools. The opening of this new store will undoubtedly bring a whole new level of convenience to many of us here in Estrella. In plenty of time for the holidays, the beautiful new almost 50,000 square foot Safeway at Mountain Ranch Marketplace is opening its doors. Landscape Modifications and Submittalsare you planning on adding some landscape modifications to

all modifications to an exciting residence within estrella, includ-ing front, side, or rear landscaping or any other physical alteration to the property must be pre-approved in advance by the Drc (Design review committee). this requires our resident to submit an applica-tion (located in the community office). the applicant should provide the Drc with as much information as possible: including locations, color, size, setbacks, and/or material description. the submittal may also include photographs, product samples, or other materials that will help the Drc understand the requested modification.

the Drc meets every 2nd and 4th wednesday of the month. the committee will process the application as quickly as possible. however, incomplete information will cause delays in processing the application.

who are the

people in your neighborhood

Meet Dennis and Mary Ann Brungardt, residents of the Arroyo Vista neighborhood since July 2005. During their 30-year working careers with AT&T, they had the pleasure of living in numer-ous locations around the country, includ-ing Denver, San Francisco (three times), Seattle, Atlanta and San Diego.

Before retiring, Dennis and Mary Ann began looking at new locations from the Southeast to the Southwest. After finally settling on Arizona, they spent several months looking before choosing Estrella, which they selected based on the physical beauty of the location, proximity to family relatives and the cost of hous-ing.

Dennis and Mary Ann have one grown son named Kevin. He is mar-ried to Mimmi (from Sweden) and they have two children (Grace and Elliot, ages 4 and 1). The grandchildren are the love of Dennis and Mary Ann’s lives. They see them occasionally and wish they could spend more time with them with each and every visit. However, Kevin, Mimmi and the grandchildren live in Stockholm, Sweden. The good news is, annual summer trips present a great opportunity to escape the Arizona summers, while seeing parts of Europe and enjoying the grandchildren. In addition, Christmas provides an opportunity for Kevin’s family to escape the harsh Swedish winters to enjoy Arizona!

Having retired relatively early, Dennis and Mary Ann continue to seek out opportunities to be active and involved in their community. Mary Ann has worked part-time for four years at the entry desk at the Starpointe Residents Club. She can be seen several mornings each week opening the center at 5:30 a.m. Mary Ann is very fond of the residents she has met and the friendships established with both residents and fellow employees.

Boredom was setting in for Dennis a couple of years ago, so he attended both the City of Goodyear’s Citizens and Citizens Police Academies. These are great ways to learn about the operation of the City of Goodyear and its police department. With these experiences, Dennis has become a “volunteer junkie.” It began with volunteering to become Arroyo Vista’s Voting Member, followed by participation in the VCA Covenants Review Committee, then being elected the Resident Director of the VCA Board and, most recently, becoming a member of the Estrella Budget/Finance

dennis & mary ann brungardt Committee. Dennis thoroughly enjoys all of his new activities.

For fun, the couple enjoys traveling, playing golf (they are annual pass holders at the Golf Club of Estrella) and spending as much time as possible with their grand-children. While they indeed feel fortunate for having lived in some of the best places in the country, there are many places in the United States that they would still love to visit.

Besides the natural beauty of Estrella and its many amenities, they most enjoy their outstanding neighbors. Whether vol-

unteering to look after a neighbor’s home while they are away, sharing tools or techniques for growing things in the desert, getting together to try out a new restaurant or just sharing an impromptu glass of wine, they feel part of an extended family.

Managing Shrubs

the growing season

During the summer growing season, shrubs around the Valley are lush, healthy and blooming. When cool fall and winter temperatures set in, our desert shrubs slow their growth dramatically. During roughly November through April, the shrubs on our properties are seasonally pruned to reduce their size before the next year´s growing season. Some landscape manage-ment providers choose to shear shrubs into shapes such as: cones, balls, flat tops and beer kegs, throughout the growing season. The advantage to the landscape provider is that employees need little training, knowledge or supervision to simply shear every plant on the property each time they are in an area. This practice is detrimental to the health of the plant as the plant requires more water to recover the lost foliage.

DLC Resources, Inc.’s approach is different. Seasonal pruning and shrub renovation consist of trimming shrubs back to roughly half their

size. On some species, like the Red Bird of Paradise, even more pruning is needed. This type of pruning permits plants to grow back into their space during the following growing season. Shrub renovation allows residents to enjoy the seasonal color of common area plants because they are not being trimmed during their flowering season. Shrubs that encroach on streets or sidewalks, or obstruct lines of sight at intersections and near road signs, are pruned as necessary to ensure safety.

Looking for some fresh ways to bring a little fall flavor to your home? Start at your front door. Look for a wreath, garland, or swag that has items such as fall leaves, nuts, small gourds or other fall items. Perhaps you’d like a wreath of twigs or straw embellished with fall-colored ribbon.

On the porch, use a pumpkin or a group of pumpkins along with pots of mums or plants with colored leaves, such as coleus. A small scarecrow could be added along with a decorative hay bale or straw bundle. These items can become easily changed to Halloween decorations by carving at least one of the pumpkins, adding a ghost and removing the plants as the month closes with Halloween.

Inside your home there are several things you can do to add a splash of fall. Indoor plants can be decorated in arrangements by adding gourds and pumpkins. Try a basket with candles in orange, gold, brown or cream colors, along with decorative gourds, small pumpkins, dried corn, nuts in their shells and fresh flowers (all of which can be purchased at the grocery store). How about adding cinnamon sticks to an arrangement by the entry wall, on a hall table, coffee table or dining table for subtle hints of fragrance?

Fall is the ideal time to add a cozy throw over the back of your favorite chair. A few toss pillows in fall colors could also be added to the theme. Burn

For many of us, summer is over and now we are hoping to take a breath-er from using our A/C and those high electric bills. Hopefully, winter won’t be too cold and we will avoid turning on our heating systems all together. Inevitably though, there are usually some days or evenings when turning on the heat and taking the chill out of the air is necessary and desired.

After summer is over it is very important to get your system ready for winter. First, you need to know what type of heating system you have. There are typically two types of heating systems in Estrella. You either have an electric heat pump or a gas furnace.

IF YOU HAVE A GAS FURNACE: It is highly recommended that you have a seasonal maintenance of your furnace, which is usually located in an attic, closet or garage. Maintenance should include an inspection of your furnace, cleaning of your burners and checking the gas pilot on the system.

IF YOU HAVE A HEAT PUMP: You have electric heat. The way it works is that the same equipment that provided you with cooling in the summer has a reversing valve that causes your home to heat instead of cool. After using your system all summer in the triple digits, it is a good idea

to have your system checked out with a seasonal maintenance that includes inspection of your reversing valve; testing of your defrost control system as well as your refrigerant levels. This

yearly maintenance service is recommended for homes that have heat pumps that are over five years old. So if it has been over a year since your last ser-vice, consider having it done at the end of the cooling season.

Knowing your system and having a regular maintenance program for the equipment will ensure you get the most life out of your system and keep things running smoothly all year round.

This time of year, I often get many questions regarding allergies, colds and flu. Allergies in children are very common. If your family has a strong history of allergies, then it is very possible your children may inherit the same allergies. Allergies can manifest as many common conditions, like eczema, asthma, aller-gic rhinitis, or even food allergies.

Allergic rhinitis (or “seasonal allergies”) are typi-cally characterized by an itchy, runny nose, sneezing, and nasal congestion, along with post nasal drip. Your

child may have itchy, watery, and red eyes. It is important to realize that allergies do not cause fever. While these symptoms can be exactly the same as certain viral infections, usually, viral infections cause a fever. Children less than 2 years old are more likely to be suffering from a viral illness, if they have both a fever and the symptoms of allergic rhinitis.

Diagnosis of allergies is unfortunately difficult. However, early identi-fication of allergy problems in your child will improve their quality of life, decrease missed school days and keep you at work.

nasal congestion Allergies are the most common cause of chronic nasal congestion in chil-dren. Sometimes a child’s nose is congested (blocked) to the point that he or she breathes through the mouth, especially while sleeping. This may cause the child to not get a restful night’s sleep. If the congestion and mouth breathing are left untreated, they can cause abnormal changes in the way the teeth and bones of the face grow. Early treatment of allergies causing nasal congestion may prevent these problems.

ear infections Allergies lead to inflammation in the ear and may cause fluid accumulation that can promote ear infections and decreased hearing. If this happens when

1. If your child has asthma or severe allergy, provide your child’s action plan for emergencies to the school nurse or administrative office. Also discuss your child’s access to medication in case of an emergency.

2. Furry animals in school may cause problems for allergic children. If your child has more problems while at school, it could be the class pet.

3. Physical education and sports are a big part of the school day for many children. Children with asthma and other allergic diseases should be able to participate in any sport the child chooses, provided the doc-tor’s advice is followed. Be sure that your child is taking controller asthma medications on a regular basis. Often medication administered by an inhaler is prescribed before exercise to control their symptoms.

4. At school, children with allergic problems may need to sit away from the blackboards to avoid irritation from chalk dust.

Do you sometimes even have to “eat” your words?

Have you been feeling kind of down lately? Maybe you’re actually making yourself sick with the words you have been saying to yourself.

All of your words, whether you just think them or say them, have their own energetic vibration. If you don’t think this is so, try saying something negative about yourself out loud. Try something really strong for effect like, “I hate myself. I’m so fat and ugly and stupid that I don’t deserve to live.” Whoa! How did that feel? With constant self-talk like that, you can’t possibly feel confident, happy and powerful.

Try saying the statements below out loud for 30 days and see what a differ-ence this will make in your day, your week, and then in your month as a whole. Give yourself some encouragement. After all, it is your choice whether or not you choose to celebrate your life.

As a chef, I am constantly fascinated by what new and innovative things people are doing with food and was fascinated when I came across Verrines. “Verre” translates to glass in French and Verrine means small or tiny glass.

After doing some research, I thought it would be fun to put these little tiny explosions of flavor together myself, so I invited a few friends over for a 6 course meal in tiny glasses; Verrines. I was so inspired by this meal that I took a trip to the downtown Phoenix open-air market to secure my fresh ingredients and purchased the smoked salmon from our local Oasis Bagels.

When my guests arrived, there were place settings with tiny appetizer plates, cocktail forks and demitasse spoons. The comments were “Oh, isn’t that cute” and “What are we having?” They were intrigued. The tiny cours-es, each served in a different 2 ounce shot glass, rolled out one by one.

We started with a summery, savory gazpacho garnished with a small green zebra heirloom tomato and moved on to 2 types of shrimp cocktail. The first one - a jumbo shrimp suspended in a tall shot glass with tangy cocktail sauce in the bottom. The other shrimp cocktail was layered with chiffonade red leaf lettuce, cocktail sauce, diced shrimp, more cocktail sauce

and shrimp and garnished with a tiny wheel of Persian cucumber, tiny red lettuce leaf and whole shrimp. Next, we had a few raspber-ries as a palate cleanser before continuing on this culinary journey.

We followed the raspberries with a refreshing, layered salad of radicchio, Belgian endive, grapefruit and orange supremes topped with citrus vinaigrette and an herbed goat cheese mixture and finished with a can-died pecan. The 5th course was an amazing savory avocado, fromage blanc and salmon fume sprinkled with snipped chives. For our

final course we had tiny strawberry shortcakes layered with pound cake, macerated strawberries and hand whipped heavy cream with vanilla topped with a strawberry and fresh mint leaf.

The beverage of choice was a crisp, fruity, floral Chardonnay, which paired beautifully with each and every course. While the courses were small, the flavor was big and everyone walked away with a newfound appreciation for Verrines.

Chef ’s note: Chiffonade – a French term; translates to ‘Made of Rags” is shredded or finely cut vegetables or herbs used especially as a garnish.

Although my personal chef service, Your Place Gourmet, is not accept-ing new clients, I regularly come across folks who need help in the kitchen. While some clients need full-on cooking service, many others just need a little help, like coming up with ideas for dinner, looking for recipes, grocery lists, or even just helpful hints. Because of this, a fellow personal chef in Delaware is about to launch Orange Pomegranate.

Orange Pomegranate is not just another recipe site. It is a tool to help you get dinner on the table. You can have your own spot called “My Kitchen”. In My Kitchen, you’ll have access to recipes provided by Orange Pomegranate, a way to add your own recipes that can be shared with the community or kept private, and the ability to create meal plans for the day, week, or month. Once your meal plan is set, print your shopping list and recipes and you’re on your way.

The Orange Pomegranate community is made up of regular folks needing help in the kitchen, people who love to cook and people who cook for a living. There is an active Facebook page where community members talk about what’s cooking right now, get help when you have an abundance of zucchini and don’t know what to do with all, or talk about BBQing in the rain.

creamy Pasta and sausage with spinach

serves 6

1 tablespoon olive oil

1 medium onion, chopped fine

4 garlic cloves, minced

1/4 teaspoon red pepper flakes, or to taste

1 pound sweet or hot Italian sausage, casings removed

2 (14.5-ounce) cans diced tomatoes with garlic, orega-no, and basil

1/2 cup white wine

2 cups low-sodium chicken broth

1/2 cup heavy cream

8 ounces penne pasta

3 cups baby spinach

1/2 cup Parmesan cheese

1/4 cup chopped fresh basil

Salt and freshly ground black pepper, to taste

Help In The Kitchen

in a large skillet, heat oil over medium-high heat. add

onion and sauté until softened, about 5 minutes. add

garlic and red pepper flakes; cook 30 seconds.

add sausage and cook until no longer pink, breaking up

meat with spatula or wooden spoon.

add tomatoes with their juices, wine, broth, cream, and

pasta. bring to a boil, reduce heat, cover skillet and sim-

mer 10 minutes or until pasta is cooked to your desired

tenderness.

stir in spinach until it wilts. add cheese and basil. taste

for seasoning.

In plenty of time for the holidays, the beautiful new almost 50,000 square foot Safeway at Mountain Ranch Marketplace is opening its doors. Estrella residents will now enjoy the convenience and ease of grocery shopping right at the main entrance of their community. To kick off this exciting grand opening weekend, Safeway is sponsoring a free fireworks display the evening of Wednesday, October 20th. There will be free beverages, food and music starting at 5 p.m., in addition to the spectacularlakeside fireworks starting promptly at 7 p.m.

The official grand opening ribbon cutting ceremony will take place
