packagingAll our herbs, spices, and teas are sealed in non-gas-permeable bags to preserve freshness, aroma, and potency. 95% of our powdered materials are sealed in FDA-approved foil bags. Oils are bottled in glass: cobalt blue bottles or amber boston rounds. Quantities ordered as 25 pounds or more of any one item may be packed into a single 25-pound unit.

Essential oils are obtained through an expression, extraction, and/or a distillation of the plant’s volatile oils. Oolong TeaOolong translates from the Chinese word to literally mean “black dragon tea.” It is so-named because the leaves, which are a cross between black and green teas in terms of oxidation, are long, dark and curly. Oolong tea blends the flavorful and aromatic elements of both teas, with hearty and sweet overtones that are characteristic of black tea complimented by earthy notes reminiscent of green tea. Perhaps this is why oolong tea is the preferred beverage served in most Chinese restaurants.

Oolong tea does possess one distinctive quality over other varieties, though. Unlike most teas, oolong improves the more you steep it. In fact, it is common to brew three or four pots of tea from the same leaves—the last being more flavorful than the first!

1. Preheat oven to 375°F. Grease and lightly flour 2 12-cup muffin pans.

2. Cream the butter and sugar in a large mixing bowl. Add eggs and mix well.

3. Combine the flour, baking powder, salt, and cinnamon. Add flour mix-ture a little at a time to the butter and egg mixture, blending well each time. Add the apple cider and chopped apples, stirring until combined.

4. Divide the batter evenly among the muffin cups.

5. To make the topping, combine the brown sugar, flour and cinnamon in a small bowl. Cut in the butter just until the mixture forms course crumbs. Sprinkle the topping over the muffins.

history: While most people are familiar with this kitchen spice, the cinnamon purchased in western supermarkets is actually cassia and not true cinnamon, which is why this species is sometimes called “False Cinnamon.” In fact, some confirmed purists go as far as calling cassia “Bastard Cinnamon.” In contrast, true cinnamon (C. vernum) is native to Sri Lanka and cultivated in China, Vietnam, Brazil, Egypt and India, while the cassia cinnamon available in the U.S. is obtained from Indonesia.

Cassia cinnamon holds a place of prominence in Traditional Chinese Medicine, where it is regarded as one of the 50 Fundamental Herbs refer-enced in ancient medical texts. It is considered to be a “warm” herb related to “fire,” making it appropriate for treating ailments associated with the kidneys. In Europe, cinnamon is commonly used to treat gastrointestinal disorders, including nausea, diarrhea, and appetite loss. In fact, the German E Commission has approved cinnamon for these conditions.

Currently, cinnamon is being studied for its apparent ability to improve glucose metabolism in type II diabetics. This action is thought to be due to the presence of proanthocyanidins, which stimulate cell membrane insulin receptors and significantly increase glucose uptake and reduce serum glucose levels. In one recent study, cinnamon also reduced triglyceride levels by 18% and lipoprotein (LDL) by 7%, suggesting that the spice may also lower the risk of heart disease,

The sedative action of lemon balm is due to the presence of rosmaric acid, which inhib-its an enzyme involved in the triggering symptoms of anxiety and other mood disorders called GABA transaminase. However, this means that lemon balm may increase the effect of anti-anxiety medications, so the two should never be combined.

Rubbing lemon balm leaves over the skin deters pesky insects, namely mosquitoes. The herb is also useful in treating insect bites, a remedy first proposed by the Greek physician, Dioscorides. The long-held belief that placing the fresh leaves upon a wound, or using the tea to combat colds and fevers is supported by the plant’s antiviral and antihistamine activity due to the presence of eugenol. This substance has also demonstrated effec-tiveness in checking viral replication in cold sores and lesions, including those induced by the Herpes Simplex virus. Some studies suggest the herb might even prevent cell division in some kinds of tumors, although King Charles might argue this point.

Lemon balm has also demonstrated an ability to prevent the produc-tion of thyroid-stimulating hormone (TSH), which may make it useful in treating an overactive thyroid. Of course, you’ll want to check with your doctor before supplementing with this herb if you have a history of thyroid trouble, especially if you are taking any prescription thyroid medications.

recipes: LEMON BALM

Chicken with Lemon Balm & VegetablesServes 4

4 boneless, skinless chicken breast halves2 cups fresh lemon balm leaves1/2 cup sliced red onion1/2 cup dry white wine1 1/2 cups sliced mushrooms1/2 cup coarse mustard1 tbsp. Worcestershire sauceJuice of 2 lemons1 tbsp. olive oil1 tbsp. butter or margarine

1. Marinate the chicken breasts in the lemon juice for 1-2 hours.

2. Meanwhile, heat the butter (or margarine) and oil in a large skillet. Sauté the mushrooms and red onion just until tender; set aside.

3. Add the chicken and lemon juice to the pan. Cover and cook over low-medium heat 15-20 minutes, turning once, until lightly browned. Remove the chicken and keep warm.

4. Add the wine, mustard, and Worcestershire sauce to the pan and bring to the boil. Reduce heat and simmer, uncovered, until the sauce thickens.

5. Return the chicken and vegetables to the pan. Layer the lemon balm leaves on top of the mixture and continue to sim-mer until the leaves are just wilted. Serve at once over rice or mashed potatoes.

LEMON BALM: The Calming Herban exerpt from our July 10 newsletter Lemon balm may be known as the “calming herb” because of its mild sedative action in people, but it sure gets bees in the garden buzzing while keeping mosquitoes at bay. Country cooks use the herb to flavor bever-ages, baked goods and meat dishes. The herb is featured in medicinal formulas and spirits that have survived for centuries, and one member of royalty indulged in a daily cup of lemon balm tea—and lived more than a century himself.

Lemon Balm (Melissa officinalis), also known as Sweet Mary, Honey Plant and Cure-All, is a member of the mint family that is native to Europe and the Mediterranean. For more than 2,000 years, this herb has been cultivat-ed as a culinary and medicinal plant. It is regarded as a “calming” herb and traditionally used to combat anxiety, stress and insomnia, to treat wounds, ease indigestion and to stimulate the appetite.

The Greeks called lemon balm “melisophyllon,” which marries the words melissa meaning “honeybee” and phyllon for “leaf.” The Romans knew the plant as “apiastrum” from apias, to mean simply “bee.” By now you’ve probably figured out that bees have a strong association with this plant.

Sixteenth-century gardeners certainly knew this since they rubbed the leaves of the plant on beehives to increase the production of honey inside. Pliny also observed that because bees so often colonize in its proximity, sighting the plant while in flower could be useful in locating the hive. Today, many gardeners consider lemon balm the hub of the flower garden because its nectar-filled flowers not only attract bees to promote pollina-tion, but hummingbirds and butterflies as well. However, some people make the mistake of calling this herb bee balm when that common name is actually reserved for a species of Monarda.

Lemon balm tea has enjoyed a long reputation as a rejuvenating tonic. In fact, the Prince of Glamorgan and King Charles V of France reput-edly drank lemon balm tea daily to ensure good health and longevity. Unfortunately, the king suffered from an abscess in his left arm that was thought to be the result of an attempted poisoning, and he died when he was only 42. The prince, on the other hand, fared much better, having enjoyed many cups of lemon balm tea until his death at the age of 108.

The 17th century Carmelite nuns made their famous Carmelite Water by combining lemon balm with lemon zest, angelica root, nutmeg and corian-der. This formula was sold for hundreds of years under the name Eau de Me`lisse de Carmes and was used to treat various nervous disorders. It still appears in German shops as Klosterfqu Melissengeist. The extract of lemon balm is sometimes referred to as the “spirit” or “compound” of Melissa and is still listed in Germany’s Pharmacopoeia. However, it has been largely dis-placed commercially by citronella oil (Cymbopogon nardus), a less expen-sive alternative with similar properties.

One of the primary actions of lemon balm is to produce a mild seda-tive effect. Homer made reference to this in The Odyssey, and Culpeper praised the virtue of the plant as a sedative when he wrote that it “...driveth away all troublesome cares and thoughts out of the mind, aris-ing from melancholy...” The Roman emperor, Charlemagne, or Charles the Great, appreciated the calming effect of this herb so much that he proclaimed that it should be grown in every medicinal herb garden within

Thank God for tea, indeed. Not surprisingly, the author quoted above, Sydney Smith, was British. The vision of English ladies and gentleman pausing for afternoon tea, even while on safari, is stereotypical, but true. American colonists dumping tea into Boston Harbor was an iconic act of rebellion, though it had nothing to do with early Americans disliking tea (au contraire), but rather with resistance to English taxation. You can practi-cally hear the rebels tossing crates of dried leaves and shouting, “Not for all the tea in China!”

Citizens in the United Kingdom consume 10 times more tea than Americans, whose preferred stimulant beverage is coffee. While health ben-efits exist for coffee, the research on tea is more compelling. Although more research has been devoted to the health benefits of green tea, black tea, the favored type of the Brits, has merits too.

Asians seem to be better connoisseurs of the various types of tea. Last sum-mer, I studied Chinese medicine in Shaanxi Provence, China, where most of the doctors kept a bottle of tea at their desks. The choice of teas at gro-cery stores and teashops was downright dizzying.

Types of TeaThe average American is likely to encounter only three or four main types of tea: green, black, oolong, and white. All come from the same species – Camellia sinensis -- a shrubby plant indigenous to Southeast Asia that is

related to the ornamental camellias growing in the U.S. The differences arise from the way the tea is processed.

With green tea , the young leaves are harvested, heated (usually steamed or pan-fried, roasted), rolled (or cut and rolled), and dried using hot air. Heat treatment prevents fermentation by polyphenol oxidase, an enzyme that breaks down green tea polyphenols (also called catechins), the chemicals thought to be particularly healthful.

White tea comes from a special variety of tea plant and is picked earlier, when the leaves are still unopened buds covered by fine white hair. The processing is simpler; the leaves are dried in the sun or baked at low heat. It’s typically scarcer, sweeter, & more expensive than the other teas. Some sources claim white tea has the highest levels of polyphenols and other antioxidants.

To create black tea, the harvested leaves are first spread out and allowed to wither in the sun, allowing most of the water to evaporate. Then they’re rolled, cracking open the leaves to encourage oxidation. The oxidation or fermentation process breaks down the green polyphenols (catechins) to theaflavins and thearubigins, which contribute to the color and flavor of black tea and have health benefits of their own.

Oolong tea has a shorter period of fermentation than black tea, yielding a lighter brown color, a milder flavor, and a catechin content is halfway between green and black tea.

Tea’s Health-promoting ChemicalsThe main active ingredients in tea are complicated fla-vonoids (polyphenols) called catechins, the most important of which is thought to be epigallocatechin gallate

(EGCG). These catechins have antioxidant, astringent, and anti-inflam-matory effects. According to emerging research, they also protect against cardiovascular disease, cancer, and other disorders.

Tea contains a host of other ingredients, including caffeine, amino acids, vita-mins, and minerals. The caffeine content is lowest for green tea and highest for black tea, which still has less caffeine per cup than coffee. Another reason tea seems to cause less jitteriness than coffee is that it contains L-theanine, an amino acid with calming effects. The L-theanine may also explain why coffee (and straight caffeine) can raise blood pressure, but tea does not.

Potential Health BenefitsMost of the research on tea comes from laboratory (tests on animals and cells in culture) and from observations of people who regularly drink tea versus those who don’t. However, data from human studies is mounting, and with intriguing results.

One general positive finding is that people who regularly drink green tea live longer than those who don’t. Cardiovascular disease is the number-one cause of death in America. Tea seems to protect the arteries from clogging with fatty sludge. Tea drinking is associated with lower blood levels of total cholesterol, triglycerides (fat), LDL cholesterol (the kind that causes ath-erosclerosis), and increased high-density lipoprotein (the kind that protects against atherosclerosis). People who consume more flavonoids, including those from black or green tea, are also less likely to die of heart attacks. The risk of stroke, a condition related to cardiovascular disease and the number-three cause of death, is also reduced.

Cancer follows cardiovascular disease as the number-two killer. Tea drinking can reduce the risk of some kinds of cancer. Studies in animals, cultured human cancer cells, and some human studies suggest that green tea extracts help prevent cancers of the bladder, mouth, liver, ovaries, prostate. The relationship between green tea consumption and breast cancer development is murky. While test-tube studies show anti-cancer effects, the outcome in real live women may have to do with the timing of

tea drinking with respect to menopause. Lab studies suggest that tea poly-phenols taken internally or applied externally may help avert the ill effects of ultraviolet radiation, including the risk of skin cancers. Five on the list of causes of death is diabetes, a disease that has become more common as Americans have grown fatter. People who consume more caffeine, whether from coffee or tea, have a reduced risk of the disease. The reasons aren’t clear. However, some research does show that green tea extracts help regulate blood sugar levels and discourage fat deposition, and may help some people lose weight.

Many Americans are sleepy. While nothing substitutes for adequate sleep, sipping tea during the day helps maintain mental alertness. But don’t overdo it. If you’re sensitive to caffeine, stay away from black tea. And, to ensure a good night’s sleep, don’t drink tea in the late afternoon or evening. Tea polyphenols have a protective effect on brain cells. Drinking tea may help reduce the risk of age-associated cognitive dysfunction (a..k.a., losing your marbles); caffeine from tea and other beverages reduces the risk of Parkinson’s disease, a progressive neurologic disorder.

Another risk of advancing age, especially for women, is osteoporosis, a dis-ease of brittle bones that break easily. Tea consumption is associated with greater bone density.

Tea can also help prevent and manage some infections. For instance, a time-honored use of tea is to control diarrhea. The benefits may be due to a combination of astringent and antimicrobial effects. A proprietary green tea extract reduced the risk of developing the common cold and influenza. In a Japanese study, women who drank more green tea were less likely to die of pneumonia.

Green tea extract has activity against the wart virus (a.k.a., human papilloma virus or HPV), a virus linked to cervical and anal cancer. One study found that a special extract prepared as an ointment applied three times a day for up to 16 weeks helped clear genital warts. Another found that taking an

encapsulated green tea extract by mouth or topically applying a special ointment helped treat cervical lesions caused by HPV.

Making TeaTraditionally, tea is taken as an infusion. I once observed tea prepa-ration in a San Francisco teahouse. The proprietor, originally from China, sternly advised you first briefly rinse the leaves in hot water. Add 1 teaspoon of leaves (or one tea bag) per cup of just-boiled water to the teapot. Steep for only one to three minutes. Strain. You can reuse the leaves a couple of times.

If you love a spot of milk or cream in your tea, don’t worry about destroying tea’s health benefits. Milk doesn’t seem to significantly interfere with the absorption of tea polyphenols. Studies conflict about whether milk reduces their antioxidant potential, though most show no significant effect. Young leaves are harvested, heated (usually steamed or pan-fried, roasted), rolled (or cut and rolled), and dried using hot air. Heat treatment prevents fermen-tation by polyphenol oxidase, an enzyme that breaks down green tea polyphenols (also called catechins), the chemicals thought to be particularly healthful.

Longer steeping times (15-20 min) maximize the catechin yield, but make brew a bit bitter. When I was in China, I noticed a lot of the doctors in the acupuncture clinics carried jars of tea with the tea leaves lying at the bottom – all day.
