Method:

1. Attach the K-Beater to the Kenwood kitchen machine.2. Place the sugar, glucose, egg whites, cinnamon and almonds into the bowl, and put the machine on to speed 3. Mix the ingredients until the mixture comes together.3. Take the mixture out of the bowl and wrap in cling fi lm.4. Place into the refrigerator for at least 6 hours.

To bake:1. Preheat the oven to 180°C.2. Take the paste out of the refrigerator, and place onto a fl oured surface.3. Using a rolling pin, roll out to a 5mm thickness.4. Cut the paste using a star shaped cutter. Remember to make a small hole at the top to

thread the ribbon through.5. Place the biscuits onto a baking tray lined with greaseproof paper.6. Bake in the oven for 6-10 minutes.7. Once browned, remove from the oven and leave to cool on a cooling rack.

To decorate:1. Mix the icing sugar with a little water until you have a thick paste. You can colour it with any colour you desire.2. Fit a small piping tube to a pastry bag, and add the icing.3. Once the biscuits are fully cooled, pipe your design onto the biscuit.4. Thread the ribbon through the holes.

1 free-range bronze turkey breast, 1kg in weight6-8 slices Parma ham30g butterSalt and pepper

For the stuffi ng100g sausage meat1 shallot, very fi nely chopped1 small apple, cored, peeled and coarsely grated50g cooked chestnuts, chopped50g fresh breadcrumbs1 egg yolkhandful of sage leaves, fi nely chopped

Method:

Pre heat the oven to 190°C Circo-Roasting with Low Added steam1. First make the stuffi ng: Put all the stuffi ng ingredients in a bowl. Season well then mix together with your hands. Keep refrigerated until ready for use.

2. Lay the turkey breast on a chopping board and cut a pocket horizontally through the breast. Open out the turkey breast like a book and season with salt and pepper.

3. Form the stuffi ng into a sausage shape and place it in the center of the breast. Fold over and reshape the meat. Spread over the butter.

4. Lay 6 slices of Parma ham onto a sheet of cling fi lm, overlapping the slices slightly. Lay the turkey on the Parma ham and use the cling wrap

to surround the turkey breast in the Parma ham, keeping the stuffi ng into the middle. Wrap as tightly as possible in the cling wrap. Refrigerate for several hours.

5. Remove the cling wrap. Place on the wire shelf in the oven on shelf level 2 with the universal pan underneath. Roast for 30 minutes then turn the oven down to 170°C. Cook for a further 30 minutes.

6. To test if the turkey is done, insert a skewer into the thickest part of the meat. Any juices that come out should be clear.

7. Allow to rest for 20 minutes in a warm place. Carve and serve warm with the pan juices.
