Grilling can be a fun, family activity during weekends.Spend your lazy afternoons in your backyard, and take outthose grillers for a grilled chicken for your dinner. Learning how to grill is not as hard as you would seeon television. All you need is the proper temperature foryour griller especially if you are using an electric grill.Nevertheless, if you have the conventional griller, try tofind some dried wood or charcoal. Ignite the coals orwood by placing crumpled papers below each coal andthen set the papers on fire. Do not pour gasoline on thecoals or dried wood. The smoke coming from the coalswill give a gasoline-like aroma to your grilled meat. Theseare your best weapons in grilling. Choose the best part of the chicken. I usually usechicken thighs and legs since they are the fattiest parts ofthe chicken. These parts will yield a juicy, barbecuedchicken. Although these may sound unhealthy, the taste isincredibly delicious. Some would still prefer grillingchicken breasts with the skins on. Before you start grilling your chicken, do not forget tomarinate them at least overnight. Yes, overnight. This isbecause the longer you marinade your meat, the betterabsorption of flavors happens. Drain the chicken in acolander and reserve the marinade for basting duringgrilling. Basting is necessary so that the chicken won’t dryout. The marinade can also be made as a sauce by makinga basic roux. This is simply done by placing a tablespoonof butter on a non-stick pan and let it cook for minutes.Pour over the marinade and whisk until the sauce thick-ens. Taste the sauce and adjust the seasonings accordingly. You can also opt to make a dry, rub marinade. This dryrub is comprised of herbs and spices and a little oil. Forchicken, dried or fresh tarragon and rosemary blendstogether very well. If you want a spicier, grilled chicken,add a pinch of chili powder and cayenne pepper. There arelimitless marinades for grilled chicken. A little imagina-tion and creativity are the keys. Make sure that whengrilling the chicken, never let the flame flare up. This willresult in burnt chicken. This does not appeal both to theeyes and to the palate. If this occurs, sprinkle a little waterover the flame. Some also like their grillers to be coveredduring the grilling process. Personally, I liked mine uncovered. There is justsomething about the smoke which is, for me, the essenceof grilling. Grilled foods are best served warm, right offthe grill with some salads or other vegetables of yourchoice.

Tilapia Florentine by Kraft Recipes

Ingredients

10 RITZ Reduced Fat Crackers, crushed (about 1/2 cup)4 tilapia fillets (1 lb.)1 tub (10 oz.) PHILADELPHIA Savory Lemon & HerbCooking Creme, divided2 Tbsp.milk1 pkg. (6 oz.) baby spinach leaves

Directions

Heat oven to 400°F.Place fish in shallow foil-lined pan; top with 1/2 cupcooking creme and crumbs. Bake 12 to 15 min. or until fish flakes easily with fork.Meanwhile, cook and stir remaining cooking creme andmilk in large skillet on medium heat 2 min. Stir in spinach; cook 2 min. or just until wilted, stirringfrequently. Serve fish over spinach.

BBQ Ribs Start With A Bottled Sauce2 lbs spareribs, cut into strips, salt and pepper
