Tangy One-Dish Citrus Chicken with Steamed Vegetables Serves: 21¾ cup/400 mL water2 boneless, skinless chicken breasts½ lb./230 g green beans, trimmed1 red bell pepper, cut into thin stripssalt and pepper, to taste3 tbsp. Citrus Sauce (see separate recipe)

Place water in Water Tray. Place chicken in base ofTupperware® SmartSteamer; season with saltand pepper, and brush with Citrus Sauce. Placegreen beans and red pepper strips in ColanderTray. Microwave on high power 14 minutes or until chicken reaches an internal temperature of 165º F/74º C. Remove chicken to a serving platterand brush with Citrus Sauce. Toss the vegetableswith 1 tbsp. Citrus Sauce and serve with chicken.

Citrus SauceMakes ½ cup/125 mL½ cup fresh basil leaves1 green onion2 tbsp. flat-leaf parsley2 tbsp. capers, drained1 tbsp. fresh lemon juice1 clove garlic, peeled3 tbsp. extra-virgin olive oilsalt and pepper, to taste

Place all ingredients except salt and pepper in the base of the Chop ’N Prep Chef. Replace cover, twist to seal and pull cord 4–5 times to blendto a coarse puree. Remove blade and transfersauce to a small bowl and season with salt andpepper to taste.
