METODĂ TRADIŢIONALĂ DE OBŢINERE A CVASULUI

REZUMAT
Cvasul este o băutură răcoritoare, slab alcoolizată, foarte populară la ruşi. Preparat din
pâine (de secară, orz, grâu), din fructe (pere, cireşe, lămâi), din fructe de pădure (afine, coacăze,
zmeură, mure), cvasul este apreciat atȃt ȋn iernile geroase, cȃnd conţinutul bogat în vitamine al
băuturii imunizează şi fortifică organismul, cȃt şi ȋn verile arzătoare, când muncile câmpului
devin un calvar, cvasul răcoritor şi tonifiant reîmprospătȃnd forţele şi îmbunătăţind performanţa
muncii. Cvasul a fost considerat un remediu ce previne şi tratează boli ale sistemului cardio-
vascular, reglează funcţionarea tractului gastrointestinal, stopează înmulţirea agenţilor patogeni.
Ȋn cercetarea realizată, mi-am propus să studiez efectul diferitor concentraţii de drojdie
asupra calităţii produlului, pornind de la o reţetă tradiţională aplicată la scară de laborator, ȋn
vase de 2 litri, ȋn care ingrediente au fost apa distilată, pȃinea neagră, zahărul şi drojdia. După
pregătirea materiilor prime şi dozarea acestora, a urmat fermentaţia, filtrarea şi trecerea ȋn sticle
ȋnchise, care au fost apoi păstrate la rece, ȋn frigider. Ȋn cursul fermentaţiei şi apoi al stocării am
monitorizat pH-ul, aciditatea, conductivitatea şi conţinutul de glucide.

ABSTRACT
Kvass is a low alcohol soft drink, very popular with Russians. Prepared from of bread
(made from rye, barley, wheat), fruits (pears, cherries, lemons), berries (blueberries, raspberries,
blackberries), kvass is appreciated both in cold winters, when this beverage rich in vitamins
immunizes and strengthens the body and warm summers, when working in the fields become an
ordeal, kvass refreshing and revigorating the whole body and improving work performance.
Kvass was considered a remedy that prevents and treats diseases of the cardio-vascular, regulates
the functioning of the gastrointestinal tract, stops the multiplication of pathogens .
In this research, I studied the effect of different yeast concentrations on the product
quality, based on a traditional recipe applied at laboratory scale, in 2-liter pots, in which
ingredients were: distilled water, black bread, sugar and yeast. After their preparation and dosing
of raw materials, followed fermentation, filtering and the transfer on closed bottles, which were
then kept cold, in the refrigerator. During fermentation and subsequent storage we have
monitored the pH, acidity, conductivity, and the carbohydrates’ content.
