KÖLN. Was tut sich in der weiten Weltder Nahrungs- und Genussmittel? Umdiese Frage zu beantworten, habensich die Anuga-Organisatoren der Koelnmesse einiges einfallen lassen.So präsentierten im 100. Jahr der welt-größten F&B-Schau nicht nur 7500Austeller aus 106 Ländern ihre Neu-heiten. Eine internationale Fachjurywählte zudem aus mehr als 2000 Pro-dukten die 64 innovativsten aus, dieden Besuchern vorgestellt wurden.Die wichtigsten Trends, die sich da-raus ableiten lassen: Vegan wächst,neue Proteinquellen werden genutzt,der Convenience-Grad steigt, Naturund Nachhaltigkeit sind angesagt.
Auch wenn Gastronomen und Ho-teliers auf dieser Messe klar in derMinderheit waren, gab es für sie dochwieder einige spannende Programm-punkte. Beim 29. Forum Systemgas-
tronomie formulierte DEHOGA-Prä-sident Guido Zöllick in seinem Be-richt aus Berlin mit Nachdruck diezentralen Anliegen der Branche. Dazugehören gleiche Steuern auf Essen undflexiblere Arbeitszeiten. „Lebensmit-tel, ob auf der Hand oder auf dem Por-zellanteller, das darf keinen Unter-schied machen“, so Zöllick. Carsten
Linnemann, Vorsitzender der CDU/CSU-Fraktion im Deutschen Bundes-tag, stimmte Guido Zöllicks Wunschnach mehr Flexibilität zu, ohne aller-dings verbindliche Zusagen zu ma-chen. Dafür attestierte er der Gastro-
nomie in Deutschland eine große ge-sellschaftliche Bedeutung. In Zeitender Polarisierung und der virtuellenWelten sei die Gastronomie ein Platzfür echte Begegnung und Austausch.
Positiv fiel auch die Bilanz von Jo-chen Pinzker, Senior Vice PresidentFoodservice Europe bei derNpdgroup Deutschland, aus: Ein Um-
satzplus von 3,9 Prozent im ZeitraumJanuar bis August im Vergleich zumVorjahr verkündete der Marktfor-scher. Und: „Die Gäste kommen öfterund sind bereit, mehr Geld auszuge-ben“, so Pinzker. Die Beste beim Azu-
bi-Award der Systemer war NadineHeissig vom Café Amsl in Passau.
Premiere hatte der Forum DigitalDay des DEHOGA auf der Live Stagein Halle 7. Thema war unter anderem,wie sich das Geschäft mit dem Essenim modernen Zeitalter clever organi-sieren lässt. Denn in Zukunft ist es re-alistisch, mithilfe von intelligentenKassensystemen im Restaurant Datenzusammenzuführen, auszuwertenund daraus Optimierungsschritte ab-zuleiten. Zum Beispiel, was die Aus-lastung, den Wareneinsatz oder diePersonalplanung angeht.
Ein Highlight der Messe war einmalmehr der NachwuchswettbewerbKoch des Jahres, den der SchweizerDominik Sato für sich entschied. Erbegeisterte die hochbesternte Jury vorallem mit seinem Vanille-Soufflé, ei-ner Süßspeise, die unter engen Wett-bewerbsverhältnissen extrem schwie-rig herzustellen ist.
