I would like to thank everyone that participated in the Auction at the Miami-Dade County Youth Fair. Once again it was a huge success. I was able to attend this event and see first hand how much work goes into making one night so successful, from securing donations to purchasing items for auction, arranging for food to be served and locating a space large enough to hold it in. This is truly amazing. This is a great social event that allows us to interact with vendors, concessionaires, carnival and fair staff on a more personal level. This is why NICA was formed, to bridge the gaps in our industry. As we go through this year I am going to ask you to get more involved by helping to set up Communication meetings or attending Zone meetings or State Association meetings. By doing these things we can help the industry become more aware of our concerns and help them with some of the problems they may be facing. If you need help or suggestions on how to become involved with any of these, please contact the office or myself for assistance. With the spring season coming to a close, most of us will be traveling further and spending more time away from home. I would like to wish everyone a safe and successful season.

And remember, “Together We Can”.

The Winter Season Fairs have certainly had their ups and downs this year. I don’t ever remember having so much cold weather and I mean really cold for this part of the country. Of course, the same can be said about the rest of the country, it has been a brutal winter and we’re all looking forward to Spring. Today has been one of those Chamber of Commerce days that everyone in the Fair and Festival business appreciates so much.

Weather hasn’t slowed the NICA office down a bit. We took a day to visit the Florida Strawberry Festival. Attendance was good and business was brisk for our concessionaires. As always, Paul, Ellany and all the folks there do a great job. Dave & Kay Daggett were working the Okeechobee Youth Livestock Show & Fair. We are glad to have them back in our NICA family. NICA was very well represented at the Collier County Fair, the Moreland’s, Eagle Foods, Larry Habeck, Justin Sattler and, Howard (Moon) Kilgore just to name a few. The folks at the Miami - Dade County Fair experienced just about all the weather conditions Florida has to offer, no hurricanes but high winds and temperatures ranging from the 30’s to the 80’s. However, through it all, The Fair is an outstanding event. The Auction on Tuesday night was quite a learning experience. I learned that you better hold on to your stuff, lock it up, nail it down, secure it some way, otherwise you may find yourself in a bidding war to get it back. Mr. Auctioneer, Frank Parnell, CCE, kept the auction moving right along. The night was a lot of fun, very cold but a very successful night. Continued on Next Page>>

As I visit with our members, I ask “what can we do for you?” Several things are consistent, first being, DEPOSITS, large deposits so far in advance; second, percentages with no regard to the cost of doing business; third, overbooking products, reducing the opportunity to generate revenue. I have had the opportunity to talk with several Fair / Concession Managers in the past couple of months. I completely understand the Fair’s need to generate income and I believe you, as Independent business owners, do as well. I’ve asked these managers to consider our part in this business. One Manager said they hadn’t had a new building on their grounds in 10 years, I can name several Concessionaires at that same Fair that work every day in a trailer over 20 years old. The response was, “it looks brand new”. This look comes with careful maintenance, daily cleaning and improving the appearance with new siding, wraps, new color schemes just to mention a few. Opening a day early on very short notice can be an issue to scheduling deliveries, and staffing. Rearranging the footage, straight line footage to turning the corner is the same number of feet but losing the depth can be disastrous. One of the questions, maybe request, is a better word, that I’ve asked of these managers is, “Before you make major changes to the Fair, would you talk to your concessionaires and other partners?”

As a Fair Manager, I relied on all my partners, the Carnival provider, the Independent Concessionaires, the Advertising reps and the sponsors for many things. Their years of experience was invaluable. I truly believe, as partners, we will grow and be better together than any one of us will ever be alone. You will hear me say it, see it in writing, “ya’ll do this everyday, I do it for 10 days, you travel all over the country and I stay here, when you see an ad program at another Fair, send me anything you can, when you see a special gate promotion that works, call me.” And they did call and they did send all kind of things to me, many of those ideas are still working well today. Did we always get it right, no but we were always open to suggestions. In the Fair Industry, the competition is not with each other. It is with events outside. In order to compete with those outside events, we must do a better job and we will only be better by working together. Remember, Good isn’t good enough when you can do better, and better isn’t enough til you’ve done your best. Together we can be the best.

A MESSAGE FROMDON KENNAWhen I was 13 years old I rode my bike from the south end of Tampa to the old Florida State fairgrounds near downtown. I used my hard earned money from mowing yards to pay my way in. One of my first sights was an Indiana cookhouse. What impressed me were the employees with their paper hats, white shirts and pressed aprons. Little did I know what one day that would be me. I was later to find out that very cookhouse was owned by my wife’s family. What stirred these memories for me was the “Blast from the Past” photos in the April issue of the NICA News. These photos set off numerous phone calls discussing who owned the cookhouse as well as who was in the photo. Some aspects of the photo that we discussed were the Pepsi top, the counters and stools, the Coke bottle on the counter, the lettering on the lumber and the buildings in the background. So be forthcoming with your photos from the past and present for others to enjoy!

Reliving those memories also brings me to what a wonderful time of year this is. As I travel from the Eastern Seaboard and throughout the Midwest I see the progression of Spring. I see the Azaleas and Dogwoods blooming in the Southeast and I know the signs of Spring are here. This for many will be the end to the Winter blues. For me this brings a happy hearted feeling for I know what

is coming. I think of the joy of watching kids eating ice cream, families riding rides and I see the pride in a 4Her’s eyes as he or she displays their project they have worked hard on. What an awesome industry we are privileged to be a part of.

As I am traveling I also make mental notes of the state of my equipment, what repairs need to be made, what I need to do to be compliant with the ever changing rules and regulations that cover so many aspects of our business.

As with most members of NICA, we wear many hats. For me and many others, one of my hats is that of a Commercial Motor Vehicle Driver. As such, it is important to keep abreast of the new rules and regulations that constantly affect our industry. As I drive a commercial motor vehicle, both during the “season” pulling my equipment, and during our off season, I have become aware of the new Hours of Service Rules to take effect starting July 1, 2013. For those not familiar with the new hours of service regulations, here is a brief summary.

LIMITATIONS ON MINIMUM 34 HOUR RESTART: The prior rule is: no limits on 34 hour restarts: the new rule is… 1: Must include two periods between 1 am - 5am home terminal time. 2: May be only used once per week.

REST BREAKS: Prior rule states none except as limited by other rule provisions: the new rule is … May drive only if 8 hours or less have passed since end of drivers last off duty period of at least 30 minutes.

Through the years, 20 to be exact, the members of NICA have developed several very good projects. As you know, when you have an idea, you want others to get on board and help you bring the idea into a project. The old saying, “it takes a village to raise a child” is so very true and just like the child, this idea takes life through a lot of heart and hard work by many people. The original idea will always belong to one person, and as we’ve all heard people say “that’s your Baby”. We sincerely hope you will enjoy Frank’s story about “His Baby”.

HAPPY BIRTHDAY BABY

My baby’s 15th birthday is this month. My baby was born in May of 1998 in Marathon, FL. My baby has grown from an infant to the wonderful thing she is today. My baby’s name is WIN (Women In NICA).

Like all babies, my baby needed a caretaker, someone to nurture and help her grow. Her first caregiver was Linda McKinney of Hughes Springs, Texas. As an infant she was very fragile and Linda’s strong hand and guidance helped make her in to what she is today.

My baby has had many caregivers in her lifetime, all of which I am extremely proud of for the job they did. My baby’s current caregiver is Heather Sattler, CCE. And under Heather’s watchful care she continues to grow. My baby has never been a troublesome child, always to willing to not only do everything that is asked of her, but to go the extra mile anytime it was needed to help NICA grow.

For those of you who don’t know what WIN is, WIN is a standing committee consisting of the ladies of NICA, who help support and promote NICA in their professional life as they do their husbands and children in their personal lives.

All female NICA members are automatically WIN members. WIN does not require any dues, but WIN does request your support and participation, in order to keep her thriving and healthy.

My baby never has, nor will she ever disappoint us. She is not only my baby, but she is your baby as well.

My baby has exceeded all my expectations and I am sure she will continue to do so. I am very proud of WIN and each and every person who has helped to make it what it is today.

Road Check 2013 - June 4th, 5th and 6thBy Fred Simcic

Roadcheck is the largest enforcement program on commercial vehicles in the world, with approximately 14 trucks or buses being inspected, on average, every minute from Canada to Mexico during a 72-hour period in early June. Each year, approximately 10,000 CVSA-certified inspectors at 1,500 locations across North America perform the truck and bus inspections. CVSA sponsors Roadcheck with participation by the FMCSA, Pipeline and Hazardous Materials Safety Administration, Canadian Council of Motor Transport Administrators, Transport Canada, and the Secretariat of Communications and Transportation (Mexico).

Since its inception in 1988, the roadside inspections conducted have numbered over 1 Million, resulting in more than 220 lives saved and 4,045 injuries avoided.

ROAD CHECK CHECKLIST FOR DRIVERSThe seriousness of violations is more than monetary, unless you’re willing to pay with your life. And we’re not just talking about your life. When you gamble, you are also gambling your family’s future and the future of many other innocent parties. Don’t take that gamble, it’s just not worth the risk.

SAFETY TIPSBuckle up! It is your last line of defense!

Pre-inspect the condition of your vehicle before and check for load securement. Maximize the vision around your truck with properly adjusted mirrors; Be sure your mirrors are properly set and clean.

Get in a safe mindset! Obey speed limits and traffic signs. Excessive speed reduces your ability to avoid a crash, extends your vehicle’s stopping distance, and increases the severity of a crash when it occurs. Slow down in bad weather and at construction zones.

Maintain a safe following distance. Follow other vehicles at a safe distance. Make sure to constantly check your mirrors.

Make only safe and necessary lane changes. Pick a lane and stay in it for as long as possible. Lane changes increase one’s risk of an accident. Focus on your driving and avoid or minimize in-truck distractions such as cell phone use, changing CDs, eating, or other activities that can remove your attention from the road.

Never drive under the influence! Watch out for other motorists whose driving behavior suggests they may have been drinking.

Get enough sleep. Sleep deprivation and fatigue can cause lapses in attention, slowed awareness and impaired judgment.

VEHICLE SAFETY TIPS:

BRAKESCheck for missing, non-functioning, loose, contaminated or cracked parts on the brake system; Check for “S” cam flipover; Be alert for audible air leaks around brake components and lines; Check that the slack adjusters are the same length (from center of “S” cam to center of clevis pin), and that the air chambers on each axle are the same size. Check brake adjustment; Ensure the air system maintains air pressure between 90 and 100 psi; Measure pushrod travel; Inspect required brake system warning devices, such as ABS malfunction lamps and low air pressure warning devices; Inspect tractor protection system, including the bleedback system on the trailer.

COUPLING DEVICESSafety Devices-Full Trailers/Converter Dolly(s): Check the safety devices (chains/wire rope) for sufficient number, missing components, improper repairs, and devices that are incapable of secure attachment. On the Lower Fifth Wheel check for unsecured mounting to the frame or any missing or damaged parts; or any visible space between the upper and lower fifth wheel plates. Verify that the locking jaws are around the shank and not the head of the kingpin and that the release lever is seated properly and that the safety latch is engaged. Check the Upper Fifth Wheel for any damage to the weight bearing plate (and its supports) such as cracks, loose or missing bolts on the trailer. On

the Sliding Fifth Wheel check for proper engagement of locking mechanism (teeth fully engaged on rail); also check for worn or missing parts, ensure that the position does not allow the tractor frame rails to contact the landing gear during turns. Check for damaged or missing fore and aft stops.

FUEL & EXHAUST SYSTEMSCheck your fuel tanks for the following conditions: Loose mounting, leaks, or other conditions; loose or missing caps; and signs of leaking fuel below the tanks. For exhaust systems, check the following: Unsecured mounting; leaks beneath the cab; exhaust system components in contact with electrical wiring or brake lines and hoses; and excessive carbon deposits around seams and clamps.

FRAME, VAN & OPEN-TOP TRAILERSInspect for corrosion fatigue, cross member(s) cracked, loose or missing, cracks in frame, missing or defective body parts. Look at the condition of the hoses, check suspension of air hoses of vehicle with sliding tandems. On the frame and frame assembly check for cracks, bends, sagging, loose fasteners or any defect that may lead to the collapse of the frame; corrosion, fatigue, cross members cracked or missing, cracks in frame, missing or defective body parts. Inspect all axle(s). Inspect for non-manufactured holes (i.e. rust holes, holes created by rubbing or friction, etc.), for

broken springs in the spring brake housing section of the parking brake. For vans and open-top trailer bodies, look at the upper rail and check roof bows and side posts for buckling, cracks, or ineffective fasteners. On the lower rail, check for breaks accompanied by sagging floor, rail, or cross members; or broken with loose or missing fasteners at side post adjacent to the crack.

LIGHTINGInspect all required lamps for proper color, operation, mounting and visibility.

SECUREMENT OF CARGOMake sure you are carrying a safe load. Check tail board security. Verify end gates are secured in stake pockets. Check both sides of the trailer to ensure cargo is protected from shifting or falling. Verify that rear doors are securely closed. Where load is visible, check for proper blocking and bracing. It may be necessary to examine inside of trailer to assure that large objects are properly secured. Check cargo securement devices for proper number, size and condition. Check tie down anchor points for deformation and cracking.

STEERINGCheck the steering lash by first turning the steeringwheel in one direction until the tires begin to pivot.

Then, place a mark on the steering wheel at a fixed reference point and then turn the wheel in the opposite direction until the tires again start to move. Mark the steering wheel at the same fixed reference point and measure the distance between the two marks. The amount of allowable lash varies with the diameter of the steering wheel.

SUSPENSIONInspect the suspension for: Indications of misaligned, shifted, cracked or missing springs; loosened shackles; missing bolts; unsecured spring hangars; and cracked or loose U-bolts. Also, check any unsecured axle positioning parts and for signs of axle misalignment. On the front axle, check for cracks, welds and obvious misalignment.

‘Tis the Season for Gearing up for the Fair Season!

LOBBYING FOR IMMIGRATION REFORMNICA members Lucky Henner, Tony Guadadgno, Chris Lopez, Jimmy Baballe and Teresa and Rich Brander were part of a delegation that went to Washington D.C. on March 18 and 19 to speak with our elected officials regarding the importance of reinstating the H2B Guest Worker Visa Program and the J-1 Visa Foreign Student Program in upcoming Immigration Reform legislation. The leaders of this conference were John Meredith, lobbyist for Small Business Workforce Alliance, Jim Judkins, JKJ Workforce, and Robert Johnson, OABA Executive Director. Upon their arrival they were carefully briefed and given on-your-feet training before they went to speak with Senator Barbara Boxer, Senator Diane Feinstein and various House of Representatives’ members including Rep. John Garamendi and Rep. Gary Miller. Stephanie Vance, author of “The Influence Game,” taught them to be friendly, stay on topic, use personal stories, say thank you and collect business cards for following up. Lucky said the conference was “well conducted and well organized.” Even though he had never done anything like this before he continued, “I felt well trained and comfortable to present to the two Senators from California.” The importance of this topic to our industry was also discussed at our annual Advisory Committee meeting held in Las Vegas last fall.

Wanting to present some new products he participated in the Sysco Food Testing and Business Review program at the Sysco San Francisco Operating Company’s kitchen. The Sysco Chef, Don, and his team cooked up and sampled about 50 different products from which Don chose Shark-Bites, Mini Crab Cakes, Lobster Corn Dogs and deep-fried avocado as new items to sell. According to Sean McGinity, Sales Manager, “the test kitchen demonstrations and business reviews are a free benefit to your NICA members that are signed up to make purchases using the NICA Sysco Marketplace master distribution agreement.”

SERVING OUR COMMUNITIESRemember Don Long and his son Ryan resting up after a long day at the Western Fairs Convention. Well now we know why: They were preparing to ride in the 18 day motorcycle ride “Run for the Wall” that begins May 15.

Don will ride his Harley Davidson ‘03 Road King to Washington D.C. where he will participate in the “Sunday Thunder Parade” on May 26 along with 450,000 other riders. On their way across the country they will visit our Veterans Hospitals.

Dale and Celia Smith, Family- A- Fair owner’s, are taking popular Pink’s Hot Dogs to the Stage Coach Music Fest in Coachella and the Sprint NASCAR Race at the Auto Club Speedway in Fontana. Dale says they are so busy that “he brings every relative he has…it is truly a Family- A- Fair!”

Tony Trafton, Trafton Company owner, is usually selling turkey legs as fast as he can grill them. However, in April he is putting on a different hat as one of the producers of the Valley County Fair in Hemet from April 4-7 and the Lake Elsinore Frontier Days from April 11-14.

The Giordano family, C&C Concessions produced the 11th Annual Irish Festival at Fairplex, Home of the LA County Fair in March. This delightful festival serves Corned Beef and Cabbage, Fish and Chips, Shepherd’s Pie and Green Beer. Five stages present Irish dancers, singers and musicians and a plethora of vendors sell authentic jewelry, crafts, clothing, and knick knacks. They are now headed to Arizona where they are the master concessionaire at Firebird Raceway and the Arizona State Fairgrounds.

They send us all off with an Irish Toast: “May the luck of the Irish, Lead to happiest heights, And the highway you travel, Be lined with green lights!”

The New Form I-9 is Here!A Form I-9 is required for all new hires and establishes their identity and work authorization.

U.S. Citizenship and Immigration Services (USCIS) today published a new Form I-9, Employment Eligibility Verification. The form is available for immediate use by employers. Employers who need to make necessary updates to their business processes to allow for use of the new Form I-9 may continue to use other previously accepted revisions (Rev.02/02/09)N and (Rev. 08/07/09)Y until May 7, 2013 date. After May 7, 2013, all employers must use the revised Form I-9 for each new employee hired in the United States.

Use of an outdated form I-9 is a violation of the immigration laws.

The revised Form I-9 has several new features, including new fields and a new format to reduce errors. The instructions to the form also more clearly describe the information employees and employers must provide in each section.

HOW LONG HAVE YOU BEEN A CONCESSIONAIRE AND A NICA MEMBER?Porky’s was started in 1980 as a catering company, doing small catering and slowly growing to do catering jobs of 1500 or more. The first really large catering job was 10,000 people. I had one year to figure out how to feed that many people in two hours, thank goodness for that year! Once I figured it out, it was very easy, and later I did a catering job for a group of 22,000. My wife and I were teaching junior high school at the time, she taught Algebra, Geometry, and Girl’s PE. I taught PE and Driver’s Ed. In 1983 we had a small concession at a small fair in my hometown in Indiana. We did very well. We decided at that time that we should continue learning by doing more fairs and festivals. The next year we did six to eight fairs and festivals and we continued to add more each year. Then in the fall of 1989, we decided we were ready to try to spread our wings to see if we could survive Florida in the winter. Surprisingly, we got into every event that we tried, and we still do several of those original fairs. The South Florida Fair was the first large fair we got into. We also started to do bike rally’s at this time; Sturgis in South Dakota and Bike Week in Daytona Beach.

WHAT’S THE FIRST THING YOU REMEMBER ABOUT NICA?In 1993 the original meeting for the formation of NICA

was in the Barbeque stand of Larry Orme at the South Florida Fair at West Palm Beach. I listened to their great ideas, and thought they were really putting together an organization that would help all concessions. Communication is a great way for people to get to know each other and to get new ideas on how to make things better for everyone in the business. Everything I heard was about communicating and talking with people in this business. Communicating is the best way to solve problems, learn, and get things done. There were many problems back then and there still are now, but by communicating with each other many of our problems will get solved.

IF YOU WEREN’T A CONCESSIONAIRE, WHAT WOULD YOU BE?I’m a salesman. I’ve got another business and we do embroidery, t-shirts, and tile sublimation.

WHAT DO YOU LIKE MOST ABOUT BEING A CONCESSIONAIRE?I like that I don’t have to report to work at the same time every morning and I enjoy the few off days in between.

WHAT’S YOUR BEST SELLING FOOD ITEM?Over the years the food item that has been our signature item is our thick cut pork chop served with the bone in. Hence the name Porky’s. Brisket is now becoming very strong along with the pork parfait.

WHAT’S A PORK PARFAIT?It’s like a full meal in itself because you can walk down the street with it and eat it at the same time, which is great because seating is limited at most fairs. Three things are in it: pulled pork, barbeque sauce on that, and then we add in a dip of mashed potatoes, and then we put in another layer of pulled pork, more sauce, and a smaller dip of mashed potatoes. It’s gotten so popular we were contacted by Food Network and they did a two page spread on it in their magazine and talked about it on the air. When newspaper people come around and try different things, out of the five judges that came in one year, all separately, the pork parfait was the top rated food product and received five forks from all five judges. We have made a Porky’s parfait family! We have a pork parfait, chicken parfait, turkey parfait, brisket parfait, and a lamb parfait.

HOW HAS THE CONCESSION BUSINESS CHANGED SINCE YOU FIRST STARTED OUT? WHAT’S SOMETHING YOU WISH WOULD CHANGE?DOT is probably one of the biggest headaches, far too many rules for all of us who drive pickups. To get a class A CDL License you’ve got to know about semi tractors, not everyone drives a semi tractor and is a semi tractor mechanic that would know all about that truck. I drive a pickup, there’s no need for semi tractor knowledge. Don’t allow any rent percentages above 20% and make a high limit, when you reach a certain level, your rent actually goes down a percentage or more and could stop all together once you reach a certain level.

WHAT’S BEEN THE HIGHLIGHT OF YOUR CAREER?The Food Network coverage was an honor, but also over the years we’ve met a lot of great fair managers and concession managers. I like meeting new people all the time and I can proudly say I’ve never met a stranger. I also enjoyed my four years of being president of the National Barbeque Association. I took that association from 300 members to over 1200 members.

WHAT’S SOMETHING YOU LIKE TO DO IN YOUR FREE TIME?What free time? WHAT’S SOMETHING YOU’RE LOOKING FORWARD TO THIS YEAR?Having great weather and meeting new people.

WHAT DO YOU LIKE BEST ABOUT NICA?NICA tries to help their members with benefits like better hotel and motel rates, credit cards, tires, parts, life insurance, and others. One of the best benefits is the ability to network with other concessionaires and get ideas from others. One new idea may put a lot of dollars in your pocket. If you have problems with other concessionaires, try to sit down with them and talk out your differences, it will only get worse if you don’t talk about your problems. GIVE US A LITTLE HISTORY ON CENTURY INDUSTRIESCentury began in 1978 building mobile food concession facilities for markets other than fairs. The markets for which the first units were designed called for rugged, low-maintenance construction and durability under daily use. Soon, people saw these units and inquired if we would consider building mobile kitchens for fair industry use.

By entering the food trailer industry and the fair industry as an outsider, it allowed a fresh, unbiased look at trailer construction and materials. Unlike cargo trailers, food concession trailers must comply with DOT, health, and fire codes, and they must withstand both the cooking operation, and regular cleaning. This combination of requirements dictates the use of materials that are fire-proof, non-absorbent, water-proof, durable, and unlike normal commercial kitchens, it must bounce down the road without damage, ready for operation at the next event.

Since the food trailer industry was relatively young at the time, with only a handful of manufacturers working on these issues, the initial learning curve was relative steep. Needless to say, a great deal of innovation occurred in the early years. Consequently Century introduced a number of industry firsts - gas struts for awning supports, air-ride retractable suspension, successful welded aluminum body construction, rust and rot-free aluminum floors, standard heavy-duty stainless counters, easy-to-clean trackless windows and cabinets, high-visibility billboard marquee signs, oversized double-fold awning signs.

- features intended to simplify operation, maintain an attractive appearance to customers, and present a professional, attractive image.

And Century has continued to innovate. While some people may not remember the introduction of the above innovations, Century is still remembered by many for Deggler’s spectacular double-decker popper and Dennis Fraleigh’s ground-breaking Butcher Boys’ double-trailer concession, both attention getters at their introduction. HOW LONG HAVE YOU BEEN A NICA MEMBER & HOW HAS IT INFLUENCED YOUR BUSINESS?Because of our association with many of the founding members, Century has been involved since the beginning of the organization, joining when NICA was first formed; when a group of visionaries determined that an organization representing independent concessionaires might effectively speak for the group and promote changes for the betterment of the industry. Since the early days, NICA membership has permitted us to associate and work with a group of outstanding professionals, people who are continually advancing and refining the state of the industry.

A primary difference between NICA and other industry associations is NICA’s focus on food concessions. And since Century is focused on food trailers for this industry, not building game trailers, rides, or bunkhouses, the association with similarly focused NICA members has been a positive one, with contact still maintained with the founders.

WHAT’S YOUR MOST POPULAR PRODUCT?Building custom food concession trailers is a relatively narrowly defined product niche. But within the food category, it is a wide open area, which has only grown over the years as creative vendors search for unique, signature products that allow a foot in the door at events.

I get calls from people new to the business contacting us to see what they can learn about getting into the food concession business, who when fishing for ideas, ask “So what’s hot.” The truth is that the traditional long-time standards, the foods that people expect to find at a fair are still the main volume and main money makers. Certainly food items that define the fair experience include items such as corn dogs, sausage sandwiches, funnel cakes, elephant ears, fries, etc.And then there are the specialty food items that are unique to a particular region of the country. While I know that people love their local fairs, it’s too bad more people have not made the effort to visit fairs in other parts of the country. I think that they would be delighted by some of the offerings outside their backyards.

WHAT’S YOUR BUSIEST TIME OF THE YEAR?Late winter and spring are the busiest and most hectic parts of the year as we work to get trailers completed for a new season and for target launch dates. As construction slows in the fall and early winter, design activity increases.

WHAT’S THE BEST PART ABOUT YOUR JOB?If forced to choose one thing above all others that I most appreciate, it has to be the great people that I have been fortunate to work with. Plus I enjoy the challenge of designing an unique image for each operator that is attractive, functional and efficient. This often entails learning a new operation, which keeps it interesting.

WHAT’S SOMETHING YOU’RE LOOKING MOST FORWARD TO THIS YEAR?Getting the trailers that are currently under construction into operation to see how customers respond, and see how the customer/operator interaction is working.

HOW HAS THE BUSINESS CHANGED SINCE YOU FIRST STARTED? Without a doubt, today’s industry standard is both more sophisticated, and more regulated. The days of a vendor being able to simply throw up a food stand and be successful are over. Today’s successful vendors are professionals.From a trailer stand point, today’s food trailers are noticeably larger and more extensively equipped. Many items that we once considered to be luxuries are now standard accessories on most new trailers. Health and fire regulations have also driven the requirement for equipment not previously found on early concession trailers.

What do you like best about NICA?For me there are two faces to NICA - The focus on professional development in addition to the social and networking aspects.

The degree to which NICA members treat each other as allies instead of competitors is very gratifying. If someone needs a hand, or has run out of an item, there is typically someone there to assist and keep them in operation. I have also seen NICA members unselfishly take new vendors under their wing and guide

them through the start-up maze, helping them put together a route and make the correct fair contacts. I have to wonder how many organizations have members of this caliber.

As an organization, I feel that the continuing education program is an important facet. Keeping members informed and up to date on new programs and new regulations serves to advance the professionalism of the group.

IS THERE ANYTHING ELSE YOU’D LIKE TO SHARE WITH NICA MEMBERS?There is still a great deal of work to be done in this industry. The fair industry continues to change and evolve, creating new challenges for everyone dependent on its success. We must keep working on creative solutions.

NICA should persist in working with the fair industry on behalf of its members, and to support the professionalism of its members through continuing education. Collectively NICA members offer a wealth of accumulate knowledge that can not be found anywhere else. I sincerely hope that NICA will continue as both a leader and a resource for the future.

I have had the pleasure and privilege of working with some very creative, dedicated, and selfless individuals. For that I am grateful.■
