We thank everyone for their patience as we work towards safely re-opening the Centre, which will be done in stages and in consultation with our tutors, hirers and Maribyrnong City Council. For the start of term 3 we will continue to offer online programs. Please visit our webpage or Facebook page for updates on these programs. Whilst we hear positive news regarding businesses, cafes etc re-opening, we need to continue to be mindful of the 1.5m social distancing requirements. We really appreciated hearing your stories. The winners are: Claire, Ruth, Neha & Family and Tomoyo & Family. You will receive your prize shortly. Chat to a Youth Worker The Phoenix Youth Centre is currently closed due to COVID 19, but the Youth Services team are working and will continue to provide Maribyrnong young people with individual support during this time. Head over to their website for further details. https://bit.ly/2Ux4BwK Method Topping Preheat oven to 170c and lightly spray a 12-count cupcake tin with baking spray. Evenly divide butter into the bottom of each cupcake well. Sprinkle each well with 1 Tablespoon of brown sugar. Rim the bottom of each pan by laying 4 pineapple chunks in a flower pattern over the butter and brown sugar. Press a Maraschino cherry into the centre of each "flower". Set aside. Cupcakes Prepare your cupcakes by beating together butter and sugar in a medium- sized bowl until creamy and well- combined. Add eggs, beating one at a time until combined. Stir in vanilla extract. In a separate bowl, whisk together flour, baking powder, and salt. Alternate adding flour and buttermilk, starting and ending with flour and mixing until just combined after each addition (I prefer to do this part by hand with a spatula to be sure not to over-mix). Evenly divide the cupcake batter into your prepared pan. The batter will be thick, so use a spoon to spread it evenly into each cupcake well. Fill each cupcake well all the way to the top. Bake on 170c for 22-25 minutes. Remove, allow to cool for 5 minutes, and then place a wire cooling rack over the cupcake tin, covering each cupcake. Carefully, using potholders as the tin will be very hot, keep the cooling rack pressed against the tin and invert. Lift the muffin tin, the cupcakes should release easily. Method

Topping

Preheat oven to 170c and lightly spray a 12-count cupcake tin with baking spray. Evenly divide butter into the bottom of each cupcake well. Sprinkle each well with 1 Tablespoon of brown sugar. Rim the bottom of each pan by laying 4 pineapple chunks in a flower pattern over the butter and brown sugar. Press a Maraschino cherry into the centre of each "flower". Set aside.

Cupcakes

Prepare your cupcakes by beating together butter and sugar in a medium-sized bowl until creamy and well-combined. Add eggs, beating one at a time until combined. Stir in vanilla extract. In a separate bowl, whisk together flour, baking powder, and salt. Alternate adding flour and buttermilk, starting and ending with flour and mixing until just combined after each addition (I prefer to do this part by hand with a spatula to be sure not to over-mix). Picture Right and below: Ruth’s entry, After 30 years building up a rich social support at the community centre, it pro-vided me with physical, mental and social activi-ties and internet skills (with Jason’s help). Am now having adopted 2 furry friends, busy keeping them happy and doing jigsaw puzzles when not on the phone or doing solo walks. I'm also following programs from the community centre. I do look forward to closer contact with real people.
