Erin Go Bragh. This is the month when there are only two kinds of people: those who are Irish and those who wish they were Irish! In line with that observance, our March issue provides a flavor of Irish traditions, foods, drink and music for your interest and enjoyment. As you read through the entire issue, our writers hope you get into the “spirit of the month.” In fact, with the parades and celebrations occurring almost daily throughout the month, you might refer to March as “St. Patrick’s Month”. Indeed, since a proclamation signed by the U.S. President in 1991, the month of March is officially designated Irish-American Heritage Month. The celebrations, parties and parades kick off this year with three St. Patrick’s Day events on March 5th (Hoboken, Mt. Holly & Nutley). The traditional Belmar Parade this year takes place on Sunday, March 6th. A complete listing of all 25 NJ parades can be found in this issue. Sticking with this issue’s theme, our writer’s introduce you to the Irish sounds of Greg & Liz Ryan, an acoustic duo whose traditional Irish folksongs

are a staple at many of the Irish pubs and bars throughout Central NJ. Read more about this couple and their music in this issue’s Band Profile. On the comic side, our contributor Steve O continues with our theme and introduces you to Siobhan Fallon Hogan, an Irish comedian and actress from NJ, who has performed in virtually every type venue: TV, theater, movies and has even performed in a couple of one woman shows. You may remember her from the Seinfeld show or the movie Forrest Gump. Turn to this month’s Comic Relief for more. To listen to live traditional Irish folksongs, you don’t have to search too far. Greg and Liz Ryan are a staple here in Monmouth County. This husband and wife duo performs monthly at St. Stephan’s Green Publick House in Spring Lake Heights. Greg sings and plays an acoustic 6-string, a 12-string guitar, and an Irish bouzouki, while Liz accompanies him on the bodhrán (Irish drum). This duo is guaranteed to perform all the Irish folksong favorites that you want to hear.

Greg Ryan has been performing at the Jersey shore and around the state for more than 40 years. At the age of 19, Greg was hired by the Jersey Shore entertainer, Joe Finn and got his first performing job at the McCann’s Hotel/Silver Edge II Bar in Belmar. At that time, Greg sang Irish songs by The Clancy Brothers, The Dubliners, and The Fureys, plus a variety of other types of music ranging from Bob Dylan and the Beatles to Joni Mitchell and Peter, Paul & Mary. Later, Greg sang with the band Firewater, who were a popular local New Jersey country music band for more than 20 years. Now, Greg has returned to his musical roots by performing hundreds of well-loved Irish folk songs.

During a performance, Greg and Liz Ryan normally play for three hours, taking only a brief ten minute break at the end of the second hour. With an extensive repertoire of almost 400 Irish songs, everyone in the audience will hear their favorite traditional Irish song. Almost every performance will include “standards” such as The Black Velvet Band, The Fields of Athonry, The Town I Loved So Well, Ireland’s Thirty-Two and many more. The Ryans also perform songs that are not widely popular, however they are always aware of the audience as not to lose their attention or interest. There will always be a good mix of love songs, drinking songs and songs of rebellion and reconciliation, along with novelty songs such as “Whatever You Say, Say Nothing” or “Back on the Diet on Monday. Greg and Liz also encourage requests from the audience.

When asked about their approach to their music, Greg recalls, “At the end of a private party one St. Patrick’s Day, the organizer of the event said, “They loved you!”. Greg replied with, “We don’t care much if they loved us, we just want them to love the music.” Melody and lyrics are very important to

them. With only one vocalist in the duo, a song made famous by a singing group, has to be interpreted by one voice. Their musical influences include legends like Liam Clancy, Tommy Makem, Andy Irvine, Johnny McEvoy, Daniel O’Donnell, and Paul Brady, among others.

So if you are looking for that traditional Irish sound, the Ryans are who you need. With Greg’s extensive musical background, their vast repertoire of folksongs, and their genuine passion for their music, Greg and Liz are a must see. March has always been one of my favorite times of year. It’s when spring starts to come back, there are great sports on TV, and it has St. Patrick’s Day; one of my favorite holidays. Bagpipes, parades, corned beef and cabbage and Irish beer, what more could you ask for? My only issue is the fizzy, yellow, tasteless beer with food coloring. After all, Ireland is known for amazing stouts and red ales, not gimmicky green brews.

Celebrating St. Patrick’s Day with inferior beer just seems so un-festive. I doubt St. Patrick would have approved either. A little known fact, St. Patrick had his own personal brewer, although the beers of that time have changed quite a bit from the beers of Ireland today. The older ales seemed to have been roughly the same reddish color, but it wasn’t until centuries after St. Patrick that brewers started using hops.

In the Middle Ages, it was difficult to find clean drinking water. Couple that with the fact that Ireland has very hard water and it’s no wonder that the beer recipes that became popular are all full of flavor. This was the start of the modern day Irish Stout. A full flavored, heavily roasted beer masks the unpleasant flavor in the water. In comparison, the water in

Germany was more palatable and so the lighter Pilsner lager recipes became more popular.

Around the 17th century most breweries in Ireland were local houses and inns. Most brewers were women, called Alewives. It was around this time that the use of hops became popular and about when Stout got its name. Originally the dark easy drinking beers of the day were called Porters, named after the porters who would carry the goods from local craftsmen to the ports of trade. These great tasting beers quickly became popular with the upper class, but were brewed to be even more robust and much stronger. The word stout meant brave, proud or strong. For a while you could order stout pale ale or any other stout beer style. However, the name Stout stuck for the stronger Porter style beer, so therefore, Stouts were born. Around this time a man named Arthur Guinness started brewing his famous Stout. Quickly he and his Stout became a huge success. At one point in time Guinness was the largest brewery in the world and is still the best selling Stout worldwide.

Irish CoffeeINGREDIENTS:• 3 ounces of Irish whiskey• 2 teaspoons of sugar• 12 ounces of any strong coffee• Whipped cream for garnish

DIRECTIONS:1. Heat a goblet glass in boiling water. Dry the glass and pour in the whiskey and sugar.2. Pour in the hot coffee and stir the drink to dissolve the sugar.3. Top the coffee mixture with a generous dollop of whipped cream and serve.

Irish Old-FashionedINGREDIENTS:• 1 teaspoon of sugar• Dash of Angostura bitters• 1.5 ounces of Irish whiskey• 1 lemon peel twist• 1 slice of orange• 1 maraschino cherry

DIRECTIONS:1. Pour all the liquid ingredients into a highball glass.2. Stir the liquids together.3. Garnish with the fruit and serve.

Irish Car BombINGREDIENTS:• Half ounce of Bailey’s Irish Cream• Half ounce of Irish whiskey, such as Jameson• Half pint of Guinness beer

DIRECTIONS:1. Pour the Guinness into a highball glass.2. Fill a one ounce shot glass with the Bailey’s and whiskey.3. Drop the shot into the Guinness, and chug the whole glass immediately.

This drink is a favorite of barflies everywhere. It tastes something like a chocolate milk shake. Note that it is not for the faint of heart because you have to chug the entire half pint of Guinness in one gulp. If you don’t, the cream will curdle.

Sláinte

Blarney StoneINGREDIENTS:• 2 ounces Irish whiskey• 1 ounce freshly squeezed lime juice, from about two limes• Ginger beer, chilled• Garnish: lime twist

DIRECTIONS:Add whiskey and lime juice to a cocktail shaker and fill with ice. Shake until well chilled, about 15 seconds. Strain into an ice-filled highball glass. Top with ginger beer and garnish with lime twist.

Bailey’s Chocolate MartiniINGREDIENTS:• Two ounces Bailey’s Irish cream• One quarter ounce vodka• One half ounce chocolate liqueur• Sprinkle of cocoa powder

DIRECTIONS:1. Mix Bailey’s, vodka and liqueur in a martini shaker with several ice cubes.2. Shake and strain into a chilled martini glass.3. Garnish with cocoa if desired.

The EmeraldINGREDIENTS:• 2 ounces Irish whiskey• 1 ounce sweet vermouth• 2 dashes orange bitters

DIRECTIONS:Pour all ingredients into a mixing glass and fill with cracked ice. Stir well for 30 seconds and strain into a chilled cocktail glass. Garnish with a piece of orange or lemon peel, or nothing at all.

Ingredients 2 to 2 1/2 pound Corned-Beef Bris-ket*, recipe follows 1 tablespoon coarsely ground black pepper 1 teaspoon ground allspice 2 bay leaves 2 teaspoons kosher salt 1/2 pound diced carrots, approximately 4 small 1/2 pound diced onions, approximately 2 small 1 pound potatoes, peeled and chopped, approximately 3 medium 1/4 pound diced celery, approximately 2 stalks 1 small head cabbage, chopped, approximately 2 pounds Corned Beef: 2 quarts water 1 cup kosher salt 1/2 cup brown sugar 2 tablespoons saltpeter 1 cinnamon stick, broken into several pieces 1 teaspoon mustard seeds 1 teaspoon black peppercorns 8 whole cloves 8 whole allspice berries 12 whole juniper berries 2 bay leaves, crumbled 1/2 teaspoon ground ginger 2 pounds ice 1 (4 to 5 pound) beef brisket, trimmed 1 small onion, quartered 1 large carrot, coarsely chopped 1 stalk celery, coarsely chopped

Directions Place the corned beef, pepper, allspice, bay leaves and salt into a large 8-quart pot along with 3-quarts of water. Cover and set over high heat. Bring to a boil, de-crease the heat to low and cook, at a low simmer for 2 1/2 hours.

After 2 1/2 hours add the carrots, onions, potatoes and celery. Re-turn to a simmer and cook uncov-ered for 15 minutes. After 15 min-utes, add the cabbage and cook for an additional 15 to 20 minutes until the potatoes and cabbage are tender. Remove the bay leaves and serve immediately.

Ingredients For the Potatoes: 1 1/2 pounds russet potatoes 1/4 cup half-and-half 2 ounces unsalted butter 3/4 teaspoon kosher salt 1/4 teaspoon freshly ground black pepper 1 egg yolk For the Meat: 2 tablespoons canola oil 1 cup chopped onion 2 carrots, peeled and diced small 2 cloves garlic, minced 1 1/2 pounds ground lamb 1 teaspoon kosher salt 1/2 teaspoon freshly ground black pepper

2 tablespoons all-purpose flour 2 teaspoons tomato paste 1 cup chicken broth 1 teaspoon Worcestershire sauce 2 teaspoons freshly chopped rosemary leaves 1 teaspoon freshly chopped thyme leaves 1/2 cup fresh or frozen corn kernels 1/2 cup fresh or frozen English peas

Directions Peel the potatoes and cut into 1/2-inch dice. Place in a medium saucepan and cover with cold wa-ter. Set over high heat, cover and bring to a boil. Once boiling, un-cover, decrease the heat to main-tain a simmer and cook until ten-der and easily crushed with tongs, approximately 10 to 15 minutes. Place the half-and-half and but-ter into a microwave-safe con-tainer and heat in the microwave until warmed through, about 35 seconds. Drain the potatoes in a colander and then return to the saucepan. Mash the potatoes and then add the half and half, butter, salt and pepper and continue to mash until smooth. Stir in the yolk until well combined.

Preheat the oven to 400 degrees F.

While the potatoes are cook-ing, prepare the filling. Place the canola oil into a 12-inch sauté pan and set over medium high heat. Once the oil shimmers, add the onion and carrots and sauté just until they begin to take on color,

approximately 3 to 4 minutes. Add the garlic and stir to combine. Add the lamb, salt and pepper and cook until browned and cooked through, approximately 3 min-utes. Sprinkle the meat with the flour and toss to coat, continuing to cook for another minute. Add the tomato paste, chicken broth, Worcestershire, rosemary, thyme, and stir to combine. Bring to a boil, reduce the heat to low, cover and simmer slowly 10 to 12 min-utes or until the sauce is thickened slightly.

Add the corn and peas to the lamb mixture and spread evenly into an 11 by 7-inch glass baking dish. Top with the mashed potatoes, start-ing around the edges to create a seal to prevent the mixture from bubbling up and smooth with a rubber spatula. Place on a parch-ment lined half sheet pan on the middle rack of the oven and bake for 25 minutes or just until the po-tatoes begin to brown. Remove to a cooling rack for at least 15 min-utes before serving.

Estimate four to six ounces per person and select a range of Kerrygold cheeses – Dubliner and Blarney Castle for mild, nutty options, Reserve Cheddar and Vintage Dubliner for lovers of sharp, pi-quant cheeses, and Cashel Blue for its dis-tinct creamy tang.

Directions:Spread the cheeses on a wooden board or slate and allow them to sit at room tem-perature for half an hour before serving to bring out their flavors. A traditional Irish cheese board includes fruits such as figs, apricots and grapes but feel free to experi-ment and create an appetizer all your own!

LIGHTER FAREBLarnEY caStLE cHEESE toaStiES WitH HonEYED WaLnutSThe smooth, nutty flavor of Blarney Castle Cheese pairs deliciously with – what else – walnuts! The sweet notes of the cheese are further complimented by a brushing of honey, making this toastie a symphony of Irish flavor.

Ingredients:2 slices cinnamon swirl bread1 tablespoon honey, preferably buckwheat or another deep flavored honey1/4 teaspoon dried rosemary, crumbled1/4 teaspoon pepper2 tablespoons chopped walnuts2 ounces Blarney Castle Cheese, thinly sliced3 thin slices red onion (optional)2 teaspoons Dijon mustard2 teaspoons Kerrygold Irish Butter, at room temperature

Directions:Brush one side of 1 slice of bread with the honey. Sprinkle the rosemary and pepper over the honey. Sprinkle the nuts over, then add half the Kerrygold Blarney Castle Cheese, the onion (if used), and the remaining cheese. Spread one side of the second slice of bread with the mustard and place over cheese, mustard-side down.

Brush top of sandwich with 1 teaspoon of the butter. Place buttered side down in a small nonstick skillet over medium-low heat. Spread top with remaining teaspoon butter. Cook 2 to 3 minutes or until the underside is golden brown. With a wide spatula, turn the sandwich over. Place a small heatproof plate on top and cook un-til the underside is golden brown and the cheese has melted, 2 to 3 minutes more. Alternatively, use the spatula to flatten the sandwich. Serve immediately.Makes 1 sandwich.

Directions:In a large bowl coarsely mash beans. Add ground turkey, 1/3 cup Kerrygold Reduced Fat Dubliner Cheese, mushrooms, toma-toes, onion, carrot and garlic salt. Mix well then shape into 6 1/2-inch thick patties. Coat with cooking spray and grill over me-dium-high heat for 5 minutes. Turn and top with remaining cheese and grill for 5 min-utes more or until cooked through. Grill bread for one minute on each side. Place one burger on each bread slice. Toss aru-gula with oil and vinegar and season with salt and pepper; spoon on top of burgers.Makes 6 servings.

aLMonD cakE WitH aPricot BranDY SaucEThe cake owes its moist, spongy texture to the same thing that gives the sauce its lus-cious consistency: Kerrygold Irish Butter made with grass-fed cow’s milk. The soft, creamy butter does double duty in this

dessert, and the result is a dish that’s twice as hard to forget.

Ingredients:3/4 cup Kerrygold Pure Irish Butter1 cup sugar2 eggs plus 1 egg yolk1/3 cup each: apricot preserves and sour cream1 teaspoon vanilla extract1 3/4 cups flour, divided3/4 teaspoon baking powder1/4 teaspoon salt1 (7 oz) tube pure almond paste, crumbled1/2 cup sliced almondsApricot Brandy Sauce:1/4 cup Kerrygold Pure Irish Butter1 cup brown sugar1/3 cup heavy cream1/4 cup peach brandy1/4 cup apricot preserves

Directions:Preheat oven to 350° F. Lightly butter a 9-inch round cake pan; set aside. With a mixer, cream together the Kerrygold Pure Irish Butter and sugar until light and fluffy – about 3 to 4 minutes. Add the eggs one at a time, including yolk, beating well af-ter each addition. Add the preserves, sour cream and extract and beat for 1 minute more. Stir together the flour, baking pow-der and salt; lightly fold into the batter with almond paste. Spread evenly in prepared pan and sprinkle with almonds. Bake for 35 to 40 minutes or until the center of the cake is firm when the pan is lightly tapped. To prepare sauce, in a medium saucepan melt the Kerrygold Pure Irish Butter. Stir in brown sugar and cook for 2 minutes. Stir in remaining ingredients and simmer over low heat for a few minutes more. Drizzle over cake slices. Makes 10 servings.

‘Irish Les Mis’ ready to do battle on Broadway

After a well-received broadcast on PBS this past October, new musical The Bloody Irish will land on the Great White Way. The drama is set to play a limited engagement at the Neil Simon Theatre this April.

Moving ballads of the period soar as Easter Rising leaders humanity and Irish people’s doubt and suffering abound.

“The Bloody Irish,” is a musical celebrating the coming of Irish freedom and the 1916 Easter Rising. This remarkable stage performance is filled with rousing Irish ballads and is sure to move audiences on both sides of the Atlantic.

A Review

The stage show combines songs of that time, such as “Rocky Road to Dublin,” “Monto,” and “It’s a Long Way to Tipperary,” with the poignant and human story of loss and doubt on the ground during the Rising.

The play opens with a little girl hauntingly singing in the foreground of the seven Irish rebel leaders as they are shot, standing on a union jack. Then we’re introduced to the narrator of the play, Sir John Grenfell Maxwell, the man tasked with the job of quelling the rebellion and pacifying Ireland. Oft painted as an ogre in the telling of this part of Irish history, here the masterful portrayal of Maxwell is one the audience cannot help but like.

“Maxwell obviously states it straight

down the line as he saw it and he only gradually comes to terms with something that he already knows, “that the rebels were always going to lose and that failure was going to win it for them. They became martyrs.”

“Bloody Irish” depicts the fear felt by the rebels themselves, showing them as mortals with doubts about their undertaking. It also refreshingly illustrates just some of what the Irish at the time would have felt about the Rising. Much of this is done through musical numbers allowing the chorus, the people of Dublin and Ireland, to air their grievances.

One of the play’s female leads is the character of Elizabeth O’Farrell, an

Irish nurse and member of Cumann na mBan, best known for delivering the surrender in the Easter Rising of 1916. Her character, along with the younger volunteers and nurses, gives an insight into the suffering and confusion that week wrought on the people.

Most of the time the retelling of this history is very much focused on the seven heroes, but this play really gives the sense of the real lives of the people.

It’s great to see real history coming alive. It’s a hundred miles away from the history books we read in school and there’s something amazing about watching it. The songs and the play were weaved into one another in almost a cinematic way.

Comic Relief

Sadly, Selena Coppack’s aBostonian and doesn’t understand that the only real teams to root for are in NY and NJ. I jest of course (kinda, sorta). Coppack has been performing stand up for eight years and her new book, The New Rules For Blondes, launches in April.

Were you “the funny one” growing up?

I come from a very funny home and my older sister Laurel is a comedian, too. So I wasn’t really ‘the funny one’ at home so much as Laurel and I spent a lot of time writing musicals in our bedrooms, choreographing strange dance numbers, and watching “Saturday Night Live” since age 7. I think that my parents and oldest sister Emily are super hilarious, too. But yes, I’ve always been a bit of a ham and really interested in comedy and performing.

Along those lines, did you do all the school productions? Where’d you grow up? Or rather, if you’re anything like me, where were you raised?

I grew up outside of Boston and I did all of the school plays growing up -- I absolutely loved performing and the excitement of rehearsing and being in shows. I did some professional theater in Boston (at the Boston Baked Theater--now gone) and in high school I became interested in singing, too. I went to college in upstate NY where I majored in English and didn’t do any of the plays on campus; but I was in the only co-ed a cappella group on campus (the Hamilton College Hamiltones) and the improv troupe. After school I moved to Chicago

to study improv comedy further and it was improv that really led me to standup. I did improv for years and eventually I just got sick of working with other people, which makes me sound like a total curmudgeon, I know.

Stand up is very tough. You have to be able to take rejection. How’d you handle your first bomb, unless you’re the one comic who’s never experienced that?

The rejection is definitely hard and it’s something that everyone -- even my comedy idols -- have experienced at some point. Early on I think that I wanted the audience to like me, which can be dangerous territory, especially for female comedians. You have to be confident and feel entitled to be up there with the microphone and that took me a while to figure out -- how to just own the stage and trust myself more. I think of standup as like training a dog -- if you get out there and you’re confident and in control, the audience is with you. But if you exude a sense of nervousness or you seem insecure, they’ll eat you alive. I’ve been doing standup for about eight years and even now sometimes I’ll have a show where I can sense that certain people in the audience aren’t completely on board with me and it makes me feel nervous, but I know to just plow through it and keep on going and eventually I’ll hit on a joke or reference that wins them over.

Is this a means to an end? “SNL”, sitcoms, head writer--what’s your goal?

I definitely don’t think of standup as a means to an end and I think that comedians who do are pretty miserable people. It has to be its own reward or else you’re crazy to do this thing. But as far as my goal, mine is pretty broad: I’d like for my comedy (performance, writing) to pay for my life. I don’t know exactly how that will shake out, but I’d like my job to be what I love to do, which is write and perform comedy. I have a book coming out in April (The New Rules for Blondes, from It Books/HarperCollins), which I hope will open up new opportunities for me. It’s a collection of humorous essays celebrating and subverting the blonde stereotype, but it’s for readers of all hair colors.

In a different life I owned a couple of Cold Stone Creamery stores, one of which was in Monmouth Mall. One day I had

a customer walk in and as is my wont, I struck up a conversation in my usual manner, “Excuse me, but weren’t you the bus driver in Forrest Gump?” Okay, maybe all my conversations didn’t start that way but you get the idea.

Anyway, that is how I first met Siobhan Fallon Hogan. Siobhan is a Jersey resident and everyone knows who she is, even if they don’t know who she is! She has starred in virtually every venue; TV, theater, movies and has even performed in a couple of one woman shows.

Venues-NJ: What came first, you playing Elaine’s roommate (and Kramer’s girlfriend) on Seinfeld, or you meeting Jerry Seinfeld when you were a regular on Saturday Night Live? Or, did one lead to the other?

Siobhan Fallon Hogan: I auditioned for Seinfeld before I got on SNL. I was doing a play in LA about Harvey Pekar and

Jerry came and saw it. When the role of Elaine’s r o o m m a t e was being cast, they called me in.

V-NJ: When you’re filming how do you work around the family obligations and being on the road?

SFH: I have filmed all over Denmark, Sweden, Australia, Vancouver and when the kids were little I brought them. When I did Charlotte’s Web in Australia, my two oldest went to a little Catholic school there. In Denmark and Sweden, they were tutored. Once they get into high school it gets trickier with sports and classes. When I was doing Wayward Pines in Vancouver, I brought my daughter Sinead for two weeks and she was an extra. She brought schoolwork with her. My husband, Peter is a builder so he can be home at night. It is tricky but so far it has worked out. I have always brought them to every film set since they were babies so they are used to it. My son was just in Going In Style with me. He is a

senior and I figure he can learn a lot from a few days on a set. So it is different with every film on how we juggle the schedule.

V-NJ: A mutual friend of ours recently saw you in your one-woman play at the Count Basie Theater and raved about it. What kind of effort goes into something like this? Do you write alone or do you have a small team of writers?

SFH: The show was actually at the Two River Theatre in Red Bank. I wrote it. It is kind of a killer. It is like childbirth. In the middle of it you swear you will never ever have another child and after they are born and time goes on you think- the torture is worth it and you do it again and again. This was my second show at Two River Theatre and I did two at the Atlantic Theatre Company in New York. I write about characters and situations in my life. The writing is the easy part. The hard part is knowing that the success or failure rests completely on my shoulders and at times that is overwhelming.

V-NJ: I was looking at the IMDB website and I see a few things in post-production but nothing about the next Wayward Pines, so we also want to know what’s the status of that show and anything else you

have coming up?

SFH: Wayward Pines has been picked up and Jason Patric will star. I will be going back to Vancouver starting in March. In May, I will be in Going In Style which is a remake starring Morgan Freeman, Michael Caine, Alan Arkin, Matt Dillon and Ann Margret. I also will be in a film called All We Had directed by and starring Katie Holmes and Owen Wilson and a film called Weightless starring Johnny Knoxville and Alessandro Nivola.

About Victory For Victoria: Victoria Dane Russomanno was born on January 13, 2014 at only 25 weeks gestation and weighing only 1lb 10oz. She was doing amazingly well and beating all odds when, at two months old, she was diagnosed with an abscess in her brain caused by a staph infection. Subsequently, Victoria has had a total of seven surgeries including five brain surgeries to drain her abscess and help control the hydrocephalus that she acquired due to her infection. After 134 days in the NICU at Monmouth Medical Center, Victoria finally came home to be with her family. Her parents were told not to expect much from their baby girl, that she would never roll over, sit up, crawl or walk. Now at two years old, Victoria is running! She is starting to talk and is having fun playing with her brother and sister and friends at daycare.

While still in the NICU, Victoria’s parents, Victor and Courtney decided to volunteer and walk for the March of Dimes starting the team, Victory for Victoria. They held their first fundraiser on the eve of her first brain surgery and have raised close to $15,000 for the March of Dimes in two years. Now in their third year, they will continue raising money for the March of Dimes to help babies like Victoria and their families.

Please join Victoria and her family at their third annual Dine to Donate at Quaker Steak and Lube in Brick on April 7, 2015. The main fundraiser is between 6-9pm but anyone who dines that day and mentions they are there for Victory for Victoria will have a portion of their check donated to the March of Dimes.

SLAINTE (SLAHN-ch )Health, good health or cheers.

Note: Being timely and relevant, I thought it once again worth repeating…

A Gaelic word meaning “health” originated in Irish and Scottish culture, the spirited exclamation of slainte stems from pride that many people feel in their Irish and Scottish heritage.

In the United States, many people with Scot-Irish heritage like to celebrate it by sprinkling Gaelic words into their celebrations and events. There are numerous circumstances in which slainte may be used. In pubs, slainte is commonly said before drinking or when someone purchases a drink for someone else.

The word slainte used in the name of a pub or establishment implies fellowship, good cheer and friendly association.

Whether you’re Irish, Scottish or “Irish for a day” (St. Patrick’s Day), the meaning behind the word slainte is worth contemplating. As we each go through our daily chores (personal and business), the ability to have and express to others the true values of slainte can brighten the day and “lighten the load.”

In the hospitality business especially, a positive connection with others (customers, staff and vendors) can have a dramatic effect on your business and ultimately, on your bottom line. The fellowship of associates, the pulling together in times of stress, can have a big impact on day-to-day activities.

While perfected by the Irish and Scots, the “attitude of slainte” is a quality that should be practiced by all. Give it a try.
