Dear Parents, I was recently handed some literature about chocolate made from cocoa that has not come from plantations where "trafficked" children work. These children have been kidnapped or have been handed over by families. The children are very young and work long hours in dangerous working conditions without any possibility of attending school. Plantations and farmers operating with Fairtrade certification, Rainforst Alliance or UTZ Certified are engaging in good labour practices. No doubt this chocolate is more expensive than that made with the slave labour of children. It would be a very authentic thing to do this Easter to perhaps have fewer chocolates of Fairtrade quality rather than a lot of "cheap chocolates" If you go to: www.brigidine.org.au/wp-content/uploads/.../goodeggguide_2016.pdf You will find the names of the chocolate and the retailers that sell chocolate sourced from plantations with fair labour practices. I am presently interviewing Catholic girls from the public schools. Parents who are in Brigidine "feeder schools" need to have their applications in by the deadline and will lose a guaranteed place if they are late. This applies to sisters also. Sometimes parents presume that we know that sisters are coming; sisters need to have a completed application form to be at Brigidine by 29 th April 2016. The dates and times for these exams will also be populated on each girl’s CANVAS calendar. Girls in Year 12 have received their Semester 1 Exam Timetable.

SPORTS DEPARTMENT NEWS

CGSSSA TOUCH

Congratulations to both the SENIOR and JUNIOR Teams who competed at the Touch championships on

Tuesday 1st March.

In extremely hot conditions the girls played exceptionally well displaying incredible talent and fortitude and drawing upon great sportsmanship in some difficult times.

The junior team did not have a loss in the round finishing equal 1st in their pool. Unfortunately they missed out on a place in the semi–finals on a count back on for and against by one point. Although the girls were very disappointed we were very proud of their determination throughout the whole day.

The senior team also had a very strong round finishing in second place in their pool and gaining a place in the semi-finals. Despite courageous efforts by everyone they were beaten on the bell 5-4.

All girls deserve mention for their fantastic efforts throughout the day and achieving such great results in this high level of competition.

TUESDAY TOUCH Congratulations to all teams who reached the semi-finals in the Tuesday Competition. There were some very tight games and all girls fought to the end. Four teams have been successful in reaching the Grand Finals next week and we wish them all the best.

A huge thank you to all the parents who have managed and coached a team over the 2 terms: Crissy Tzoukas, Jo Connolly, Sheridan Connon, Anne Tikaram, Christie Collins, Gertie Hayes, Peter Wilson, Ofer Kasif, Lara Waterson, Samantha Dugdale, Brad Evans and Simon Salopek. This is a solid commitment and it would not be possible to offer this sport without your help. We are truly appreciative of your efforts and hope you decide to help again in the next season.

Year 12 Chemistry and Physics Field Trip

On the 15th of February, the Physics and Chemistry students of Year 12, embarked on an

educational endeavour to Australian Nuclear Science and Technology Organisation (ANSTO). We

began the day in the Discovery Centre, where we received a talk and presentation about nuclear

science and its various uses in different industries. It was immensely insightful and most definitely

expanded our knowledge of the physics and chemistry courses. Following that, we went through the

high-tech security gates, bypassed the federal officers with minimal casualties, and happily entered

ACT, leaving New South Wales grounds for a day. Our first stop was the ANTARES particle

accelerator, where the workings of the accelerator were explained and one of our students bravely

ventured to touch the machine. Next, we trekked to the Open Pool Australian Lightwater (OPAL)

nuclear research reactor, which we viewed from a safe distance. We were enlightened by the

chemistry and physics behind how OPAL worked and its benefits in both the medical, agricultural

and industrial realms. There were also neutron scattering instruments named after native Australian

fauna (e.g. Quokka, Wombat, Platypus), which are used for research purposes by international

scientists. After a long day, we exited the high-tech security gates, left behind the ACT and

congregated in the cafe, before a musical trip back home.

ITALIAN STUDENTS GO GLOBAL Last Friday, 26th February, our Year 11 and 12 students of Italian were fortunate enough to attend the GO GLOBAL Languages Conference at the University of Sydney. The conference was open to senior language students and was aimed at increasing their awareness of the various language courses currently offered at the University. Firstly our students listened to a short but entertaining introduction from Vice-Chancellor, Dr Michael Spence, who impressed the students by informing them that he was currently studying his seventh language!!

Our students were then able to participate in two short tutorials in Italian where they were immersed in the language- a fantastic and worthwhile lesson. In all, the whole afternoon was a most valuable and pleasant experience. The students were not only introduced to the beauty of the University but were also able to consider the exciting prospect of language study.

YEAR 8 CERAMICS Year 8 are engaged building their animal pots in the cool of last Friday. These pots will be exhibited in the Visual Arts Exhibition held in August in Tullow. All parents and friends are welcome.

11 BUSINESS STUDIES Each of the three Year 11 Business Studies classes did an excursion to “The Spot Shopping Precinct” on Friday to conduct a survey of the nature of the businesses that are there. The girls were looking at the size, industry, legal structure and geographical spread of each business. The girls were surprised to find that there are many businesses that are not on street level. They were also surprised to learn that one of the businesses is actually in the Secondary Industry (manufacturing) that business being Salvio's and that Salvio’s also sells globally even though it is a micro business. Overall, the girls enjoyed learning about the many and varied types of businesses that are at the Spot and the amount of employees that the area supports. Many thanks to all of the business owners of the Spot for their support.

Year 12 Hospitality@Pinocchio’s Restaurant Take-over

On Monday the 29th of March Yr 12 Hospitality students took part in the annual restaurant takeover of Pinocchio’s at Randwick.

“Monday night was a valuable learning experience for me. Working in a real life restaurant

situation was very stressful but also very beneficial to my learning. It was definitely a fun time had by all!”

Being a waitress allowed me to understand what working in the Industry is all about. Overall the night was a huge success.”

They sliced, whisked, layered, whipped, de-boned, portioned, seared, sautéed, boiled and assembled.

They greeted, seated, ordered, served and cleared. It was the Year 12 Hospitality restaurant takeover! Over 140 customers were served and catered for by these students last Monday evening at Pinocchio’s

Restaurant. They did a truly amazing job in a hot, tiring and challenging environment. All are

congratulated on their performance. This authentic learning experience, in its third year now, not only provides real life learning, but supports theoretical aspects of the course such as the units ‘use

hygienic practices for food safety’, ‘participate in safe work practices’ and ‘work effectively with

others’. The night overall was a huge success with students moving one step closer to their Certificate II in Commercial Cookery. “You get to experience the pressure that chefs experience. You need to use the skills you already have, but you are also developing more skills that you need to have if working in the hospitality industry” Fotini, Year 12 Hospitality student. “It was good to experience how a kitchen works in a real life situation rather than at school. We needed to be flexible and adapt to the challenges that were thrown our way. It was a difficult

again, we all thought the food was excellent, the atmosphere great and the girls made the evening fantastic. Also a sincere congratulations to Zoe O’Brien, Winner of the Australian Vocational Student Prize in 2014 an ex student of Brigidine College who also participated in the first group of Pinocchio’s Restaurant takeover, for her recent appointment at the prestigious Wolseley Restaurant in London.

“Over the past 2 years since leaving Brigidine I have been attending William Blue College of Hospitality Management studying an Advanced Diploma in Hospitality Management, specialising in Commercial Cookery. My cooking career has continually developed since leaving Brigidine, my first appointment began at Brasserie Bread in Botany to then progressing onto ‘William Blue Dining’ at The Rocks. I have recently been offered the amazing opportunity travel overseas to London and work for the Corbin and King Group gaining a position in the restaurant “The Wolseley” mid this year”

To keep things cool we made a switch to ice cream as our Open day food sampling experience in TAS. Year 11 Hospitality students prepared the smooth glossy mixtures from scratch and then poured them into our new and very beautiful commercial ice cream machine to churn and freeze. Delighted Open day guests were then able to select their flavour of choice and add on from a tempting range of toppings.

First Thoughtful Food Participants for 2016….. Thank you for the amazing response that was received from those Years 7 and 8 students wanting to take part in Thoughtful Food preparations in D15 on Wednesday. Also to our Year 11 Mentors, thank you for volunteering your time and experience. The first session was very productive with a wholesome and delicious variety of muffins, quiches and fresh fruit being prepared for the BCR Night patrol group to take out to the Sydney homeless community.

On Sunday 28th February, WYD students and their families raised $2427.40 at Bunnings Alexandria.

We would like to thank Auburn Meadows Butchery at Rose Bay for their generous donation of

gourmet sausages for this event. We would also like to thank South Maroubra Hot Bread for

supplying bread rolls.

World Youth Day students will be heading to Poland at the beginning of Term 3 and we are hoping to

have other fundraising events leading up to their departure. We will keep the college community

informed regarding these events.

University of Sydney: Introducing Mathematics prerequisite 2019 Sydney University is introducing Mathematics prerequisite for certain courses from 2019. Students need to achieve a Band 4 minimum in Mathematics to enroll in certain courses including Economics, Psychology, Veterinarian Science, Commerce, Engineering and IT, Pharmacy. University of NSW: Introducing Law Admissions Test (LAT) for entry 2016 UNSW Law is broadening their assessment of applicants for entry to the Undergraduate Law Dual Degree programs in 2017. They are introducing a new test, the Law Admission Test or ‘LAT’, to give applicants the opportunity to demonstrate their suitability for the Law program and allow UNSW to better assess applicants. The LAT result, together with the ATAR, will provide a more rounded view of aptitudes and skills of the applicant for our Law program.
