 Professional Development for Home Economics Teachers  Spring 2010 Opportunities  Three online home economics curriculum and instruction courses will be offered through EPLT May 10‐July 30, 2010.  If you are taking the Home Economics diploma program, thinking about a Master’s degree, or want to increase your background knowledge, then you might consider one of these courses: EDCP 492 (HMED 440) Textile Studies This course is taught by Dr. Susan Turnbull Caton and has been oversubscribed to such an extent that Susan is going to teach it one extra time this year.    

EDCP 494 (HMED 442) Family Studies This course will be offered for the first time in May, 2010, and counts as one of the core subjects for the home economics diploma. It is based on the new Family Studies IRP and offers up‐to‐date pedagogical opportunities, instructed by Dr. Mary Leah de Zwart  

EDCP 493 (HMED 441) Food Studies Dr. Gale Smith teaches this course, which has encouraged many students to take a global and sustainable look at the complex subject of food.

Kwantlen Polytechnic University is pleased to announce the Summer 2010 offering of two - 3 credit courses for teachers offered independently and in conjunction with UBC as part of the Certificate in Textile Studies or the Home Economics Diploma programs. Courses are designed for teachers of textile studies who want to strengthen their knowledge in the area, or for students or teachers who want to develop expertise for the teaching of textile studies.

Participants will experiment with techniques in working with elements and principles of design, colour theory, specialty dress and technical sportswear fabrics, drawing and storyboard development. Take home a portfolio of exercises suitable for use in the high school classroom and for entrance to a post-secondary institution. Some sewing experience is necessary, drawing experience is not essential. - The course will include an excursion to a design company.

NEW FSDP 4111 (3 credits) Textile Studies for Teachers: Recreating Commercial Patterns & Making Them Fit Mon. Aug. 16 to Fri. Aug. 20, 2010 Daily 8:30 a.m. to 5:00p.m. Tuition: $550.00 Learn new classroom design techniques in easy to teach manipulation of commercial patterns. Sew up a prototype and experiment with fit for different body types. Take a used garment and recreate it into something new. Participants will learn great new drafting and construction techniques that they can use to create lesson plans for the classroom. They will learn to use an industrial sewing machine, therefore, some sewing experience is required. The course will include excursions to wholesale fabric and notions suppliers.

Kwantlen Polytechnic University 2010 Fashion High Heel Camps All courses are taught by top fashion faculty in an exciting and fun environment. Note: Due to the varying dates within the school districts for spring break in 2010, there will be no high heel camps from January to June 2010. Both Camps are offered on the Kwantlen Richmond Campus 8771 Lansdowne Road, Richmond, BC

During this intense and fun 4 day session, students will explore the fashion design process. They will create themes and storyboards, draw simple fashion figures, drape fabrics for garment ideas, and practice drawing on the computer with Adobe Photoshop. Each student will leave with a personalized fashion portfolio created during the session. No previous experience in drawing is necessary. Registration opens April 15, 2010.

FSDP 1140 Fashion High Heel Sewing Camp Ages 14 and up Monday August 9 to Friday August 13, 2010 Daily from 10:00am to 3:00pm Room 2120 Total: 5 days, 25 hours

Cost: 325.00 (plus $40.00 application fee for new students; $20.00 for returning students)

The Fashion High Heel Sewing Camp is a beginner’s sewing course for people ages 14 and up who have little or no sewing experience and would like to learn to sew or upgrade skills for entry to a post secondary fashion program and gain experience using an industrial sewing machine. Course content will include simple and fun projects to introduce sewing techniques. Registration opens April 15, 2010.

 Coming Events  UFV’s Grad Fashion show “Absolute Style 2010”.  The showhighlights the graduation collections as well as program works including an art to wear section from surface design, weaving, and knitting. This years show is on Wednesday April 28th at our Abbotsford campus. Doors open at 2:00 and the show starts at 2:30. There is an opportunity for a campus tour before the show and there will be an open house of our facilities from 12:00-5:00. If you would like a campus tour please RSVP. The tickets are $10.00 but we do offer group rates. We encourage schools to reserve tickets early as we have limited seating and our show sells out quickly.  Build a Home Economics Classroom in Africa  Home economics:  skills for life.  That’s a motto all home economics teachers, by definition, believe in.  If you have an interest in helping establish a home economics classroom in one of the world’s poorest countries, read on:    In 1996 Rose Mnyenyembe and her husband Elias started Hillside Secondary School in a remote area of Northern Malawi.  I met Rose in 2000 and 2001 on Project Overseas, when she and I worked together on a leadership seminar in Malawi. For the past few years I have sent Rose money for her school and in 2009 the Canadian Home Economics Foundation made a grant of $3000 to build a home economics room onto the school.  I have applied for another $3000 this year, and this money combined with further donations will complete the exterior.  Now it is time to furnish “Rosemary House”, aimed at helping young women and men learn how to care for their families and themselves.    I am going to Malawi in August to visit Rose and see how the school is progressing.  Before that time, I hope to do some fundraising in order to take along supplies (or in the case of items that are better purchased in Malawi, money) to help create useful facilities.  Rose sent me this wish list:, but she adds that anything is welcome along the home economics line:   

BOOKS:  cookery, embroidery, tailoring, baking and house keeping 

FURNITURE : Office desks and chairs, tables and chairs  

COOKERY:  Cookers, baking tins, cooking pots, pans, kettles, mixers, egg beaters, heaters, fans, basins, plates, knives dish washing machine, etc 

TAILORING:  sewing machines, embroidery materials, knitting machines, irons, Ironing boards etc 

LAUNDRY:  washing machine, drying machine, ironing press 

Tax‐deductible donations may be made to the Canadian Home Economics Foundation to the Engberg‐Fewster International Development Fund in honour of Hillside Secondary School.  Donations are gratefully accepted.  I am going with four other people and we will have some room to carry items that aren’t too big.   Search out Friends of Hillside Secondary School on Facebook and become a fan.  You can see the emails that Rose has sent me and the latest photographs of the progress.  Please contact me at:  [email protected] for further information.

Curried Lentil Soup Yield: 8 servings

30 ml olive oil 2 Tbsp. 1 large onion, diced 1 2 clove garlic, minced 2 cloves 5 ml curry powder 1 tsp 1 unpeeled carrot, diced 1 1 stalk celery, diced 1 stalk 1 unpeeled potato, diced 1 250 ml dried red lentils, rinsed 1 cup 1500 ml vegetable or chicken broth 6 cups 2.5 ml black pepper ½ tsp. to taste salt to taste 15 ml lemon juice 1 Tbsp 7 drops Tabasco sauce, optional 7 drops 30 ml fresh cilantro or parsley, chopped 2 Tbsp

1. Heat a stock pot over medium heat. Add oil. Heat through. 2. Add onion. Cook until tender & fragrant, about 4 minutes (do not let onions

brown). 3. Add garlic. Cook for 1 minute. 4. Add curry powder. Cook for 30 seconds. 5. Stir in carrots, celery & potatoes, lentils & chicken stock. Bring to a boil. 6. Season with salt & pepper. Simmer for 30 minutes. 7. Add lemon juice & if desired, hot pepper sauce. 8. Taste & adjust seasonings if necessary. 9. Serve as is or puree in an electric blender for a smoother texture. 10. Garnish: sprinkle with cilantro (or parsley).

Lentil Tomato Soup Yield: 16 servings

The lentil or daal or dal (Lens culinaris), considered a type of pulse (seeds with a pod),

is a bushy annual plant of the legume family, grown for its lens-shaped seeds. It is about 15” (38 cm) tall & the seeds grow in pods, usually with 2 seeds in each.

Canada is the largest export producer of lentils in the world.

Saskatchewan is the most important producing region in Canada. 500 ml red lentils 2 cups 20 ml olive oil 4 tsp 2 onion, chopped finely 2 2 cloves garlic, minced 2 cloves 4 carrot, diced 4 1000 ml chicken stock 4 cups 1000 ml water 4 cup 2 (540 ml) cans Italian style canned tomatoes with juice 2 (19 oz) can

1. Place lentils into a sifter. Rinse well with cold water. Set aside. 2. Heat saucepan over medium heat. Add oil. Heat through. Sauté chopped

onion, carrot until softened. Add garlic. Cook for 1 – 2 minutes. 3. Stir in red lentils, chicken broth, water & stewed tomatoes. 4. Bring to a boil. Cover. Simmer for 10 minutes.

Stir frequently. 5. Serve with biscuits or bread.

Hot Cross Buns  Dough  3  cups all‐purpose flour, divided yeast (see method below) 3  Tbsp granulated sugar 1   tsp salt 1 ½   tsp ground cinnamon ¾   tsp ground allspice ¾   tsp groud nutmeg 1/3  cup currants or raisons 1/3  cup diced candied mixed fruit or peel 1   cup milk (2 per cent M.F.) ¼   cup plus 1  tbsp water 3   tbsp butter, at room temperature 1  tbsp potatoe flakes (instant mashed potatoes)  

Egg Wash  1   egg yolk 1  tbsp water  Icing  1  cup icing sugar ½   tsp pure vanilla extract 1  tbsp milk (2 per cent) 

 

  In large bowl, combine 1 cup flour, 1 (8‐g) package quick‐rise instant yeast (Fleischmann’s), granulated sugar, salt, cinnamon, allspice and nutmeg; stir to mix.  Stir in currants and candied fruit.  In small saucepan, heat milk, water and butter until very warm (120OF to 130 OF).  Whisk in potatoe flakes; stir into dry ingredients.  Stir in enough of the remaining 2 cups flour to make a soft dough that doesn’t stick to the bowl.    Turn dough out on to floured surface; knead until smooth and elastic, working in additional flour as needed, about 5 minutes.  Cover and let rest for 10 minutes.    To shape dough: Divide into 9 equal pieces.  Form each piece into a smooth ball, pinching at bottom to seal; place, seam side down, in greased 8 1/2 –inch (21 cm) square baking pan.  Flatten buns slightly.  Cover and let rise in warm place until double in size, about half an hour.    EGG WASH: lightly beat together egg yolk and water; brush over buns.  Bake at 375OF (190 C) for 30 minutes or until baked, tenting with foil after 20 min to prevent excess browning.  Remove buns from pan and cool on rack.    ICING: mix icing sugar, vanilla and enough milk to make icing of piping consistency.  Pipe or spoon icing in form of a cross on each bun.  Each bun contains about: 296 cal, 6 g pro, 5 g fat, 57 g carb. Submitted by Tanya Silvonen

MERINGUE THREE WAYS

Mocha Meringue Stars 1/3 cup sifted powdered sugar 2 tablespoons unsweetened cocoa powder 1 tablespoon cornstarch 1 teaspoon instant espresso coffee powder or 2 teaspoons instant coffee powder 3 egg whites ½ teaspoon vanilla ¼ cup granulated sugar 1/3 cup semisweet chocolate pieces 1 teaspoon shortening

1) Line a large cookie sheet with parchment paper or foil; set aside. In

a small bowl stir together powdered sugar, cocoa powder, cornstarch, and espresso powder; set aside.

2) In a medium mixing bowl beat egg whites and vanilla with an electric mixer on high speed until foamy. Gradually add the granulated sugar, 1 tablespoon at a time, beating until stiff peaks form (tips stand straight). Gradually fold in the cocoa mixture.

3) Transfer the mixture to a pastry bag fitted with a large star tip. Pipe twenty-four 2-inch stars onto the prepared cookie sheet. ( or drop mixture by rounded teaspoons onto the prepared cookie sheet.) Bake in a 250OF oven for 1 hour. Cool on a cookie sheet. Remove from parchment paper or foil.

4) In a small saucepan combine chocolate pieces and shortening. Cook and stir over low heat until chocolate is melted. Drizzle the melted chocolate over cookies.

Chocolate Eggshells 2 egg whites 125ml sugar 5ml vanilla 125ml chocolate chips 250OF 30-40 minutes

1. Preheat oven. Line top of cookie sheet with aluminum foil.

2. Beat egg whites until VERY STIFF and NO LONGER GLOSSY or shiny.

3. Immediately beat in half of the sugar. Now beat in the second half of the sugar with the vanilla.

4. Stir in chocolate ships. 5. Spoon onto the foil lined cookie sheet. The

cookies can be quite close together as they do not spread in baking.

6. Remove from foil as soon as cooked. Store in an airtight container.

Cinnamon Angels 2 egg whites (60ml) 0.5 ml cream of tartar 2ml cinnamon 190ml sugar 2ml vanilla 300OF 50 minutes

1. Preheat oven. 2. Beat egg whites until stiff peaks form. Beat in

cream of tartar and cinnamon. 3. Beat in sugar gradually until well blended. Stir

in vanilla. 4. Drop mixture by heaping teaspoons onto

ungreased, brown paper-lined cookie sheets. 5. Bake in slow oven until cookies are slightly

browned and dry. Remove to a wire rack to cool
