CIEH Level 2 AWARD IN FOOD SAFETY IN CATERING

TARGET AUDIENCE Anybody working with or handling food including the private, public, community and voluntary sectors.

FREQUENCY OF ATTENDANCEAll staff who handle food should attend a Full day Food Safety CourseCIEH Level 2 Award in Food Safety in Catering

INTRODUCTION Food poisoning continually receives attention from the media. The cost of food poisoning can be high and this can include prosecution, loss of business, loss of reputation and ultimately, possibly even the loss of life. Damage claims, fines or imprisonment can be the consequence of ignoring food hygiene principles so it makes sense to ensure that food handlers are trained to the standard that legislation requires. It is imperative that clients learn basic food hygiene principles and are able to understand why food hygiene is so important to them as food handlers.  CONTENTSThe course will enable attendees to:

- know the causes of food poisoning - know how to prevent food poisoning - be aware of the standards of personal hygiene required by food handlers - know how to use refrigerators and freezers - understand stock rotation - know how to dispose of waste food without causing problems - know the common pests found in food premises and how they can be controlled - understand cleaning procedures - understand how food legislation affects them

NEW STARTERS WEEK

The Trust now operates an organization wide new starter date which is aligned with the corporate induction programme and immediately followed by a mandatory and statutory training programme.

The change will benefit the Trust, its service users and the new starter in the following ways All new starters will attend corporate induction on their first day and be formally

welcomed into the Trust by our Chairman and an Executive Director For many new starters it will enable them to access all the CORE statutory and

mandatory training they need to take on all aspects of their new role For our service users and the Trust as a whole, it will significantly reduce the risks

associated with the deployment of untrained staff. It will enhance our reputation as an employer of choice by ensuring that staff are

properly inducted and trained before starting work
