One of the things I love about Norman is that it is ever-changing. In the ten-years-plus time period that
Ive lived here, many new businesses have opened, and more than a few businesses have closed. Ace
Hardware (so very missed!), Native Roots Market and The Big Tuna are just a few of the quality businesses
that Norman has lost in the past few years (unfortunately, The Big Tuna closed just this week). However,
this town always rebounds from its losses, and a look at our Community section (page 10) will convince any
skeptic of that, as Angela Fusselman introduces a few restaurants coming our way soon. Or, take a drive
around town and see for yourself whats out there you wont be disappointed.

Lets face it: its just not that hard for someone with very little experience and minimal equipment to make a movie thesedays. Practically every digital camera comes equipped with video, and every computer has at least some sort of video
editing software, even if its basic.
Lots of people even have access to some high-end equipment, even if theyre not entirely sure how to use it. When Adobeproducts go on sale, your neighbor down the street is selling his DSLR or the opportunity to re-license an old version ofFinal Cut Pro arises, we grab at them in the hopes of being a part of new media.
Although its still usually clear when a lmmaker has had some training, the sheer ability to make lms, and therefore thequantity of lms being made, is making it dicult for those who are industry-trained to stand out. On the other hand, it ismaking lm into an accessible form of ar t and expression for many.
Here are a few tips on making the most of the art that is now available to you. While its by no means a comprehensiveguide to becoming a Hollywood rock star, it will help you to make use of what you have.
First of all, know your equipment and what its capable of. If youd like for your projects to be the best they can be, take thetime to read your camera manual and watch a tutorial for your editing software. Getting the basic machinery down and
picking up some tricks can help you get just the right angle or exposure that will give that critical shot the power to makean impact. Be adventurous, and work in manual mode.
Second, watch a lot of movies. Dont just watch them for fun, but watch them with the intent to learn. How is the cameraangled? What details are included in the background of the shot? How does the editing line up with the music? Learningfrom the masters and the lmmakers you most respect will help you. Can you imagine an author who never reads books?
Finally, learn the basics. There are many simple rules to lmmaking that lots of amateurs never bother to look into, butfollowing even the most basic rules will keep your project from automatically looking like it was made in two hours witha four-inch camera (even if it was). Does the rule of thirds sound familiar? How about cutting on action? If not, look themup.
Films pervasiveness is an exciting thing for lm fans everywhere, but if youre at all interested in movie-making its hard tostand out. Take advantage of whats available to you and make sure your project doesnt end up on the cutting room oor.

Breakfast and Brunch BitesHow do you handle your mornings?

Seeing that Im 23 years old and a college student, most of my morning is spent scrambling around to get
ready, grab coee and shoot out the door. I am by no means a morning person, nor do think I ever will be.Sometimes I get up a little bit earlier to swing by a coee shop, but thats the extent of my getting up early.
September is National Breakfast Month! Its also National Biscuit Month, National Chicken Month, NationalHoney Month and National Rice Month. There is also a special holiday for each day of September and it getsa little crazy, so I wont list those. Feel free to look them up though!
With that being said, I had to nd some unique recipes to celebrate National Breakfast Month and beganscouring my pins on Pinterest to nd something unique and delicious. I found more than a few, I canguarantee you that. I decided to stick to three, making three dierent dishes to try out some new styles thatI dont normally partake in for breakfast.
Youd be surprised at what you can nd on the internet. All kinds of special dishes for people on special diets,
and recipes that would make your blood sugar roll over in its grave. But, those sweet recipes are the bestkind if you ask me!
In this issue I have put in the recipe for homemade apple fritters. If you check out my blog (website below)or my Facebook page, you will nd I also baked chocolate chip banana bread, cinnamon strawberry quinoa,and berry cream cheese monkey bread. All delicious, all easy to make, and all totally gone because I ateevery last bite!
Directions:1. Mix all dry ingredients together.2. Slowly add the wet ingredients minus theapple.3. Careully mix until well-combined but notover-beaten.
4. Gently old in apple pieces. The batter shouldbe the consistency o a light cake mix.5. Heat the oil in a saucepan, between mediumto medium-high.6. Once the oil is ready, use a large plasticspoon to place 4 spoonuls o dough into the oil.7. Be careul not to overcrowd and watch care-ully or the underside to turn golden brown,then gently fip over and continue rying untildone.8. Top with glaze or powdered sugar and enjoy!

Foodie Fun for Everyone

New restaurants are popping up left and right in Norman! Recently, I saw an old bank building torn down and leveled out to make way for a restaurant, along with the openingof new eateries all along Main Street. You foodies out there, after my own heart, should be excited for our new restaurants. Norman is continuing to develop and it is great towitness its growth. Here are just a few of the new foodie additions to our streets, as well of some that are in the works.
SYRUP Open NowA gourmet breakfast boutique has settled in at 123 Main Street. Theyre open mornings through early afternoons for a breakfast and brunch mixture Tuesday through Sunday.Rumor is they have sweet potato pancakes, which sound absolutely divine!
LOCAL Open NowFresh and local products are a big hit at restaurants, and at Local youll nd locally-sourced dining for the entire family. Local is very kid-friendly and has healthy options kids willenjoy along with fabulous sustainable and creative American cuisine. Open seven days a week, Local is open for lunch and dinner with late night menu options on the weekend,as well as brunch on Sundays, and is located in the Normandy Creek Shopping Center on the corner of Main Street and NW 24th Avenue.
TACO CASA Coming SoonWho doesnt love fast Mexican food? The infamous Taco Casa is moving in at 731 W. Main Street, right to Norman High. The high schoolers will be thrilled, and I am as well. Fromchiladas to chili burgers, Taco Casa has great, quality food which is convenient, fast and aordable.
DAS BOOT CAMP Coming SoonAn oshoot of Royal Bavaria is hitting Main Street! Royal Bavaria prides themselves on their freshly prepared German specialties, along with their own homemade beer brewedwith natural ingredients which are mostly imported from Germany and water from a natural well. With German cuisine at its nest and in a central location on the corner of
Crawford Avenue and Main Street, I cannot wait for this taste of a Bavarian brewpub to open its doors. We are waiting on the opening date with anticipation!
FREDDYS FROZEN CUSTARD Coming SoonMain Street and NW 24th Avenue is a busy intersection and its hard to miss a bulldozer leveling out an old bank building. But with that comes a Freddys Frozen Custard in themaking! Skinny French fries, all-beef steak burgers, ice cream sundaes and creamy frozen custard all under one roof is coming to Norman.
With gourmet breakfast, fast-food Mexican dishes, a Bavarian pub, steak burgers and local food, Norman is truly out to get the hearts (or should I say stomachs) of us Normanitefoodies. Make sure to get out there and support Norman in its growing stages and check out our local eateries with your loved ones. Youre sure to nd something you enjoy andcant live without.

Vegetarian Sources of Protein
Nuts/Nut ButterNuts are a fantastic source of healthy fats, minerals, antioxidants, and ber,and they also pack a hefty dose of protein. Toss a handful into stir-fries, snackon them solo or make your own homemade trail mix by combining themwith dried fruit for a high-nutrient power meal. To gain the most nutritionalbenets, nuts should be eaten in their raw state, unroasted and unsalted. Lookfor sources such as raw almonds, walnuts, cashews, macadamia nuts, pecans,
peanuts, pine nuts, and pistachios. Nutbutters are also another great option.They provide about ve to seven gramsof protein per tablespoon, depending on
the source. In addition, nut butters arepacked with avor and oer up a creamy,rich texture, especially when mixed withother foods such as shakes and oatmeal.The calories in nuts and nut butter canadd up fast, so make sure to watch yourportion sizes.
TempehTempeh is a soy-based product thatoriginally developed in Indonesia. Itis high in protein (16 grams per 3 oz.)as well as ber, iron, potassium, B12,
calcium, and isoavones. Anotherbenet of tempeh is that its fermented,which can help if you cannot eat beansor other gaseous proteins. The enzymesin tempeh pre-digest the carbohydrates,the protein and the fat, so its mucheasier to digest and is a great substitute to legumes. There are many dierentvarieties of tempeh on the market today. Alongside the plain versions you willalso nd blocks with additions such as grains, seaweed, tofu, herbs and spices.
Soy ProteinSoy is a great protein alternativeto animal proteins and is great forthose who have allergies to lactose.Soy protein is low in fat and containshealthy compounds such as phytatesthat can act as antioxidants. Soyprotein powder is one of the bestalternative protein sources becauseit contains the full complement ofessential amino acids. Soy protein
also contains saponins, which have been shown to support healthy immunesystem function, and isoavones, which have been shown to help maintaingood cholesterol levels and reduce bad cholesterol levels. One serving of soyprotein powder oers up 20 to 25 grams of protein per serving.
TofuTofu is a longstanding vegetarian alternativemeat source that provides eight grams of proteinper three ounces and provides all eight of theessential amino acids. Tofu can be added to anydish to replace meat, since it is tasteless and cantake on the avors that it is cooked with. Tofu isalso a source of calcium, magnesium, iron and
is low in fat.
QuinoaOften called the perfect grain, these small, nutty-tasting granules pack awalloping 12 grams of protein (per half cup,uncooked). Add that to the high levels ofmagnesium, ber, folate, and other nutrients,and quinoas a nutrition powerhouse. Try it as aside with your home-cooked meals in place ofanother grain youre used to, such as rice.

Whether you are a vegetarian, vegan or a meat eater, consider incorporating vegetarian protein sources into yourdiet. Not only do these alternative foods add variety to your meals, but they are also packed with an assortment of
vitamins, minerals and antioxidants that your body needs. Here are a few healthy examples to include in your diet.
LegumesLegumes provide many nutrients including protein, complex carbs, B-vitamins,iron, phytochemicals, potassium, magnesium and calcium. This vegetable groupprovides seven to ten grams of protein per half cup, is low in fat, high in ber andcontains no cholesterol. Common legumes include black-eyed peas, black beans,edamame, chickpeas, lentils, lima beans, kidney beans and even soy beans. Itshould be noted that this source of protein is not considered complete, with theexception of soy, which means legumes do not contain all the essential aminoacids needed. Some of the important amino acids such as tyrosine, methionine,lysine and carnitine, which have roles in stress hormone function and energy
metabolism, are often decient in certain legumes. There are ways to balance out these missing amino acids, such
as combining two incomplete sources of vegetable protein, like rice with beans.
