ración y técnicas de tratamiento de las
verduras, que armoniza con pescados y
mariscos o despliega en arco iris de sabores
y sensaciones tan insospechados como
brillantes, ocupa el centro de su interven-
ción -secundada por Floren Domezaín,
sobresaliente distribuidor de verduras en
toda España- en madridfusión 07 > His
bold approach to the flavours, textures
and temperatures of the products from
the infinite resources of the Navarre larder
have made him one of the most privileged
representatives of the culinary avant-garde
in that Autonomous Region. His work on
recovering and his techniques in preparing
vegetables, which harmonise with the fish
and seafood or provide a wide variety of
flavours and feelings, as surprising as they
are brilliant, constitute the nucleus of his
participation -seconded by Floren Dome-

la gastronomía italiana inaugurada por

a su modo. Partiendo de una materia

ejecución de los platos renunciando vo-

a long career behind him, Davide Oldani
runs the restaurant D’O, a gastronomic

los grandes de nuestra cocina, su aventura
personal en Calima (Marbella) confirma su
condición de cocinero imprescindible para
la evolución de la nueva cocina andaluza. Su
revisión permanente de los fundamentos
de las recetas tradicionales del Sur inaugura
caminos nuevos que, en el trabajo con los
pescados y, muy especialmente, en sus inves-
tigaciones en torno a las frituras, establecen

training in La Cónsula, growing up and ma-
turing with Martín Berasategui and demons-
trating in the restaurant Tragabuches that he
was destined to be one of the great chefs
of our times, his personal adventures in
Calima (Marbella) confirmes him as an es-

Andalusian cuisine. His ongoing updating of
the traditional recipes from the South heralds
new dimensions in his work with fish, espe-

cocinero de El Tambuche, en el Puerto de
Santa María (Cádiz). Su cocina condensa
su profundo conocimiento del mar –fue
pescador antes que cocinero- y su irresis-
tible atracción por los sabores del norte
de África. Pero lo que hace de él un per-
sonaje inexcusable en nuestra gastronomía
son los logros que ha obtenido en sus
investigaciones con productos del mar :
emulsionantes naturales a partir de los
ojos de los pescados, caviar de polvo de
escamas, plancton sápido y ahora… una
conjunción de algas microscópicas que
absorbe en frío la grasa de los caldos >
Ángel León is a chef of El Tambuche, in El
Puerto de Santa María (Cádiz). His cuisine
condenses his in-depth working knowledge
of the sea -he was a fisherman before
becoming a chef- and his irresistible attrac-
tion to the flavours of North America. But
what makes him so indispensable to our
gastronomy is the achievements that he
has made in his research with sea products:
natural emulsifiers from fish eyes, caviar
from scale powder, savoury plankton, and
now … a combination of microscopic algae
that, when cold, absorbs the fat from broth.

la Cumbre Internacional de Gastronomía.
Charlie Trotter ha hecho de su restaurante
homónimo en Chicago un centro de pe-

capacidad para desarrollar un ideario culi-
