Welcome to our fabulous Platinum issue
To complement the new season's promise of new growth, beauty and renewal, we have
designed this issue to reflect the promise of things to come. Spring brings the warmth
and beautiful flowers and gardens abloom. Summer with its fabulous heat, lots of
swimming, picnics, outdoor dining and fun!
We have chosen all the elements that showcase our beautiful Queensland lifestyle; with
our beautiful balmy days and nights heralding the hotter days to come, we are eager to be
sunning ourselves by the pool or under an umbrella on the beach.
It is time to search for the perfect bathing suit, and also the perfect time to be choosing
your new season look for the coming party and racing season.
With Melbourne Cup, pre-Christmas parties, New Year's Eve balls and all those dining
invitations for luncheons overlooking the bright blue ocean, and dinners under a starlit night
sky, now is the time to be visiting your favourite boutique to check out the latest styles.
This issue is full of beautiful, new season fashion, exceptional jewellery and accessories,
prestige properties, interesting people, designer interiors and products, health, fitness and
beauty, fine food, restaurants, recipes and wine selections, as well as superb motoring.
We have also included some great renovating tips for those who have chosen to update,
revamp and redesign, rather than make a move to a new property - just yet. We've also
included some stunning furniture pieces and colour ideas, as well as expert advise.
This issue we introduce you to talented, young Gold Coast violinist, Alexandra Heussner; we
also talk with Queensland school Principal, Annette Duffy about her humanitarian trek to the
top of Mt Kilimanjaro in Tanzania, and bring you a heart-warming story about assistance dogs,
and one of the young people they are groomed to help.
Check out our stylish getaways, latest books, movies, DVDs and theatre guide as well, for the
perfect way to spend your leisure hours.
We've designed our Platinum issue to give you just the right choices for your Christmas
wish list this year. Don't forget to add the latest chef's cookbook - we all want to be a master
chef in our own kitchen.
What more could you ask of Queensland's premier lifestyle magazine?
Please sit back, read and enjoy...
welcome

WHEN LITTLE ALISON SHAWFOUND OUT IT WAS DOLLARSNOT GUM LEAVES THAT MADE
THE WORLD GO AROUND,HER ROAD TO
ENTREPRENEURIALISM WASSEALED.
Growing up on Sydney’s North Shore,
hanging out at the beach all summer,
hiding in the bush, playing cricket in
the front yard and dabbling in retail were very
much the norm for most kids in the 70s. But
when the boys decided to get tough and
destroy Alison Shaw’s stock of sticks, stones
and bottle tops in her play-shop, it was time
to call it quits. Lesson one: Deal in dollars not
gum leaves.
A degree in economics seemed the natural
path, although managing restaurants and
hotels was far more rewarding and giving
birth to son Jack proved to be the most
defining moment in her life. Even today
everything revolves around him...almost.
When Jack was one, Alison won a trip to
the Gold Coast. “On the spur of the moment I
hired a car and travelled to Mt Tamborine,”
recalls Alison who in the same day decided to
move and rent a house there. Six weeks later
it was goodbye Sydney and she never looked
back. “How could I ignore the opportunity to
live in paradise? Queensland is God’s own country and I have had
opportunities here that you could only dream of. I am the luckiest
woman in the world.”
At famed Sydney restaurants such as Bilsons and Rockpool, she
also discovered a love for good wine and after a few attempts to
get into the industry she talked her way into a casual position at
the newly opened Canungra Valley Vineyards. It snowballed into
working cellar door, managing the vineyard, marketing, building a
website and eventually she started her first business Smart Wine,
doing marketing and public relations for various wineries and
regions such as Gold Coast Wine Country.
She also juggled life as a single mum, but says there were
advantages: “I could take control of my time, didn’t have to ask for
a day off to see my son at a sport’s carnival and take full advantage
of the financial rewards. Women board directors were rare, so I
figured if I wanted to work at that level, the company had to be
mine. “All mums juggle, single mums just juggle in a different way.
Sometimes I start work at 4am and finish at 3pm so I can do the
things I want. And Ripple Massage was a natural progression.
“I loved the wine industry but I wanted complete control from
the product concept stage to the research, development and
marketing,” the sometime control freak admits, adding her 15
year-old son also has amazing out-there ideas.
“I went to China, looked at importing pearls and all sorts of
things, but on my computer was a small marketing plan I’d
completed for a massage therapist mate in Victoria. The penny
dropped. As the Paul Simon song says ‘there are diamonds on the
soles of your feet’. How true.”
Ripple Massage started four years ago with Alison working solo
as a fully-trained therapist, until she realised there was a gap in the
market for a professional service of the day spa going to the client.
“Most mobile massage companies only offer one hour Swedish
massages, but I wanted to offer unique massages such as
chocolate, seashell, Russian and Vietnamese four hands, gained
from travelling overseas and bringing back styles of massage you
won’t see anywhere else in Australia. Yes, I love my work and no,
you can’t have my job.
“I also wanted the convenience factor. I know how hard it is to
get to the day spa, relax, enjoy your treatment, only to have all the
peace wiped out on the drive home. Our guests get to relax
afterwards.”
The Ripple effect has literally taken off, in fact Alison says “it’s
gone berserk. The five year goal was for a few therapists in Mt
Tamborine, Gold Coast and Brisbane. That was accomplished in
three months. Today there are 40 therapists. It’s also available from
the Sunshine Coast to the Tweed, Byron Bay and Lismore. This year
Melbourne, Yarra Valley and the Mornington Peninsula were
added, Australia-wide is planned within the year and then it’s New
Zealand.
“A call centre has been opened on the Gold Coast, HR and sale’s
team members are on the up and with the rapid expansion, we’re
also on the look-out for good therapists.”
The most popular treatments include the frangipani package
for hen’s parties and girl’s weekends and let’s not forget there’s
buffing and pampering for blokes. Ripple is known for it’s very
affordable packages with lots of extras such as lime and tangerine
exfoliations, organic clay masks and product gifts.
“Products including soaps are handmade by us at Mt
Tamborine using the very best raw materials thus ensuring a
sensational result without the high costs of packaging and
marketing, associated with well known brands. For example the
organic green clay face mask is 100 per cent natural and has no
synthetic preservatives. Also because it is made to our formulae

we know that it will suit even the most sensitive skin.
Many products are gleaned from overseas, such as a
lime and tangerine exfoliation from an amazing day spa
in Seoul called Mud where the highlight was sitting
starkers in a drying room, covered head to toe in clay,
watching Korean soap operas with six very petite
Korean ladies. The yummy scrub with lots of citrus
essential oil, ground walnut shell and cream almost
made me slide off the table in bliss. I have never felt so
clean, and my skin has never felt so smooth. The
traditional Korean bath house turned out to be the
most magical day spa experience of my life.
“There’s also a collagen face mask that I found in
Vietnam’s Hanoi. After a long day sight seeing, I
booked myself into a little day spa. I really just
wanted a massage, but the words anti ageing
facial caught my attention I was impressed. but
what really sold me was when I got back to the
hotel, my boyfriend, who probably wouldn't
notice if I dyed my blonde hair black, said the
magic words ‘what have you done to your
skin, it looks great. After picking myself up
off the floor I decided I had to replicate the
idea for Ripple."
There are many needy women in the
world so Alison has chosen to give part of
her profits to charities such as Mahboba at
the peak of that Everest. “Mahbobas
Promise made me realise just how
ridiculously lucky I am as a woman in
Australia and how stupidly abundant
life is.
“I am 43 and yes the 40s are the
best years, although I’ve heard
the 50s are even better.
When I turned 39 I really wanted to be 40 as I felt it was going
to be a great decade. It hasn’t let me down.
‘We live on Mt Tamborine, five minutes from a rainforest
where I walk most mornings, have a son I love and boyfriend
Dean who adores me. We love going to nice restaurants or
just taking the dogs for a run.
“I’m surrounded by people with positive
energy and every morning before starting
work, I look at the ocean and sigh. Life
doesn’t get any better.”

BORDEAUX-BORN COUNTESS FRANCOISE ESTERHAZYDREAMT ABOUT BECOMING A FASHION DESIGNER BUT
HER PARENTS HAD OTHER IDEAS.
Francoise Esterhazy was a pretty-in-pink five year-old, had a passion for
textiles and design as a teenager but her parents suggested she get a “real
job” so she opted for the absolute extreme – structural engineering.
“I wanted to do fashion, but it was the 60s and to my father it was not a
serious job,” says Francoise who graduated from university, travelled to Nepal;
worked at the French Embassy in Kathmandu tutoring Nepalese engineers who
were going to France for post graduate studies; developed her photography
skills by trekking and taking shots of tribes in their beautiful costumes; plus
collecting antique jewellery and fabrics along the way. She met her husband
Count Janos (John) Esterhazy of Hungary who worked in hotel management for
Oberoi, had two daughters Livia and Ildiko and eventually moved to Australia,
giving up the gypsy lifestyle. This proved to be the catalyst for her fashion career.
“We arrived in 1981 - time to change my career,” she recalls. “I
always loved fashion, but it was my stay in India and the costumes
collected from various other countries that inspired me.”
The genesis was knitwear - a beige and gold jacket with lavish
embroidery, which brought so many compliments it didn’t take
long before Francoise Esterhazy Design, with the distinctive
moniker of elegant individualism, was borne.
Jewelled jackets were her first foray into evening wear in 1988
and remain a favourite today.
“In 1995 I added a daywear collection in cotton voile, linen, silk
and block printing on linen and also designed shawls in wool,
cashmere and silk plus jewellery in semi precious stones and
silver. “At the factory which I’ve used since 1983, I have a
fantastic relationship with the ‘master beader’ and the ‘master
embroiderer who work by hand on mostly silk for evening
wear. The knitwear collection is 100 per cent cashmere with
cashmere and silk -printed top.”
The latest summer collection is very colourful and the epitome of elegant
casual: “Bright royal blue and lime green butterfly-printed voile; a series of
ponchos in printed voile with stripes of sequences; easy to wear for evening;
casual with jeans. The cotton voile story is earthy colours of cream/brown,
ivory/navy or simple white and stretch satin is in orange/green/black print with
an animal print in camel/brown/ivory.”
With daughters and their families living overseas, travels to India several times
a year including staying in a desert town in Rajasthan, visits to their ‘other’ home
in Biarritz in France, a showing annually of the summer collection in the south of
France at St Jean Cap Ferrat, plus regular trips interstate for new season
showings, Francoise and Janos decided on a sea-change from Sydney to the
Gold Coast.
“I love the lifestyle and weather and it doesn’t matter where we live when it
comes to business,” says Francoise who has won a Concours d’Elegance
Supreme Award and opened her art and couture boutique at Clear Island
Waters. Other stockists include Allegra and ARI’B at Main Beach, Toscana in Park
Road Brisbane and Elisabeth Shepherd in Cairns.

Steering children in a direction against their will is a common
occurrence as Alexandra Heussner attests. Despite playing the
piano with its mostly monotonistic qualities since the age of
five, she admits preference for the creative sounds of the violin and
the freedom it gives the player.
“My parents, [Catherine and Jean-Marc Heussner] who appreciate
all types of music, were delighted I’d set goals early in life and did all
they could to help,” recalls Alexandra, who studied both instruments
in parallel and found out when she was about 10 that she had violin
in her blood. Her great grandfather Julien Falk was a violinist, had an
association with the Paris Conservatoire, wrote an introduction to a
book on music and was a violinist for screenings of silent movies.
“My violin is the one played by my great-grandfather. It was made
in France about 1750.
“My first solo violin performance was at the Pacific Pines
Performing Arts Centre when I was about 12, I played Weeping Willow
and it was very nerve-racking,” Alexandra, who lives Gavan Heights
and currently attends Saint Stephen’s College, where she studies
English, mathematics B, ancient history, drama, music and music
extension.
There have been a string of awards and myriad performances from
solo to orchestras, however playing violin in the 21-member Team
Australia in the classical and open styles for the 13th Annual World
Championships of Performing Arts in Los Angeles, ranks as the most
memorable
“Representing my country was an experience I
will never forget. It was amazing and I can’t wait to
go back to the States,” enthuses Alexandra, who was
the recipient of a gold and a silver medal and is
inspired by violinists Itzhak Perlman, Joshua Bell and
Vanessa Mae. Her favourite composers are Brahms,
Debussy and Vivaldi.
“Another memorable performance was recently
when I played with Maske Electric Trio at Twin Towns
in Tweed Heads. It was so much fun. I had a blast.”
Other performances include appearing regularly
with Daniel Mallari and Popera Classics Collection, a
fusion of pop and opera with a modern edge at
Saks, plus Opera in the Park at Broadbeach, several
charity concerts, and fundraisers for disaster ravaged
countries.
“When I leave school, my plan is to do a Bachelor
of Music, focusing on performance at the
Queensland Conservatorium Griffith University in
South Bank, further my studies overseas, work in
orchestras and hope a few solo performances come
my way plus I’d like to compose.

be a solo violinist for singers or performers such as Josh Groban

Alexandra also appreciates other genres of music: “I’m a fan of
Delta Goodrem who writes beautiful music and I’m developing
a fascination for Kate Miller-Heidke’s beautiful music. I love
Michael Bublé, as well as Katy Perry, Taylor Swift, Yellowcard,
Coldplay, and A Change of Pace.”
In her rare spare time the very pretty teen catches up with
friends, relaxes with good book, enjoys a movie and although
fashion is not high on the agenda, she does have an extreme
obsession for shoes, especially heels.

RACHEL SYERS CHATS TO THE SYDNEYCOSMETIC KING WHO'S INVADING THE REDCARPETS OF HOLLYWOOD AND SHARING HISKNOWLEDGE WITH ARTISTS ACROSS THECOUNTRY VIA HIS TRAINING ACADEMIESTHROUGHOUT AUSTRALIA.
1. What shade of eye shadow should we throw out nowspring is here? This
coming season is all
about bright colours and
smouldering eyes.
Expect extended
eyeliner eyes so smoky
they should carry a
surgeon’s general
warning and eye
shadow, cheek and
even lip colours that
look like shavings of
gold bullion. So I
would have to say
that it is out with
your pastel colours
and anything
shimmery. Our
new Divine
Marchesa Eye shadow quad will
help you achieve the perfect smoky
eye for this season.
2. What is your favourite piece of clothing you are
wearing from your wardrobe at the moment? My new Dolce
and Gabbana pants - they are a black, soft velvet and have this to-
die-for detailing around the waste with big black jewels.
3. Do you ever give your daughters any style tips? Well, my
four daughters are growing up to be little fashionistas, let me tell
you. They all have a distinctive style and it's really entertaining
watching them be creative with what they wear and seeing their
own personalities come through. They will usually get themselves
dressed and then they will come to me saying “Papa, Papa … do
you like my outfit?” It's all about having fun and letting them feel
free to make choices that empower them. They all have their own
wardrobes and shoe collections too!
4. What was a highlight for you at this year's Mercedes
Benz Fashion Festival in Brisbane? It was a great event to be
part of so I really did enjoy every minute. A highlight would have to
be meeting the Queensland Premier Anna Bligh and her
mentioning that she has bought some of my products over the
years … it was a great honour for me and reminded me that my
products and my brand speaks to women of all ages, backgrounds,
interests and careers.
5. We know you love flawless skin, so how can we achieve
that without it costing us a fortune? To achieve a flawless,
natural base it’s essential to use a
primer to hydrate
and even out your
complexion. This
will allow your
foundation to
blend perfectly into
your skin and will
make your make-up
last longer without
having to reapply
more product. Try my
Auto Pilot Pre
Foundation Primer.
6. What is the
most stylish piece of
furniture in your
home? My house is all
about mixing up eclectic
tastes and various styles. I like creating order out of chaos and I
wanted an oasis that was a reflection of me, something with a
sense of fun and excitement but with an emotional connection. My
favourite piece of furniture at the moment would be a set of
Perspex chairs that were previously owned by cosmetics icon,
Helena Rubinstein.
7. Who’s been on your hot list of Hollywood clients lately?
I recently hosted Sarah Michelle Geller’s baby shower which was
lots of fun. We treated Sarah and her guests, including Shannon
Doherty and Michelle Trachtenberg, to make-overs and gifts and
just created a fun environment for them to ‘play’ in.
8. What will be a popular look for lips this
spring/summer? Expect super-bright lipstick hues like berry,
vermilion, neon pink and tangy coral - as we just saw on the
catwalk at MBFF.

Sarah joined Coupe salon at Nobby Beach a year

Schwarzkopf team at MBFF.
That's in addition to her resume already boasting
working for the crème of the design world at Milan
and London fashion weeks when she lived in London
two year ago.
The look she created on Gold Coast model Alana
Williams was following a big hair theme, and perfectly
complimented the yellow Catherine Malandrino dress
from the Samantha Ogilvie boutique in Fortitude Valley,
worn for the stunning parade held at Cloudland in
Fortitude Valley for the festival's official Wrap Party.
“It was all in the prep work to get that hair sitting so
high – we first did really tight curls and then it was a
matter of combing the hair and allowing the hair to be
as big as it wanted to be,” explained Sarah.
As for hot hair tips for the new spring-summer season,
Sarah is adamant that cool Gold Coast blondes are out
and warm honey tones, reds and coppers are in.
“Straight sleek hair has also gone and it's all about
movement, but with really sharp fringes or solid
precision cutting at the front and back of the hair.
“Also the biggest buzz at our salon at the moment is a
new natural Brazilian hair treatment called Global
Keratin that is perfect for getting rid of the unwanted
frizz, smoothing and straightening the hair, keeping it
healthy
by repairing damage, yet still allowing the movement.”

IMAGINE THE FRUSTRATION OFNEEDING HELP WITH THE SIMPLEST OF
TASKS.
Opening and closing a door, turning a light switch on and
off, comprehending a question… all these can be
categorised as easy things to achieve for most of us.
But for others, these and other basic tasks can be an enormous
challenge, even an impossibility, if a mental or
physical disability enters the
equation. That's where
man's best friend comes
into the picture.
We're all familiar with the
incredible work of guide
dogs for the blind, but a
relatively new program
called Assistance Dogs is
also beginning to improve
the lives of those who need
an extra helping hand.
Reilly Paterson is the
perfect example of how everyday lives can be
not only changed, but lived to the fullest, thanks
to the training of assistance dogs taking place on the Gold Coast.
Under the expert guidance of husband and wife team Tracey
and Craig A Murray, a fluffy friend named Harry has already made
a world of difference to Reilly, a placid four-year-old who was
diagnosed with autism at around two years old.
Since the cute Lhasa Apso-cross-Maltese was plucked from the
Animal Welfare League pound at Coombabah by the Murrays,
trained up and handed over to Reilly just on twelve months ago,
the little boy's life has been transformed.
And so has the life of his family.
According to Reilly's mother, Linda, her son has blossomed
with improved skills across a range of areas, making life happier
not only for her son, but also for her and husband Tony, and their
daughter Beth, 12.
“Reilly received Harry when he was three and nine months, and
was only really speaking a couple of words, and wasn't able to
cope with things like walking through a shopping centre with me
because of the smells and noises setting him off.”
Now Harry, three-and-a-half, has become
Reilly's companion, allowing the little boy to learn
about empathy, love, compassion and friendship,
through activities such as walking Harry on a lead,
playing pretend bandaging of the pup's paw, and
talking to others about Harry as a pet … not to
mention addressing low muscle tone through
increased exercise walking the dog.
“With the combination of Harry as an
assistance dog, early intervention at home and
diet intervention, we hope Reilly will attend a
mainstream school – he may still need assistance
but he is already reading and reciting books like
The Hungry Caterpillar to his classmates at kindy.”
The pair even dance in Reilly's bedroom at his Norman Park
home, with Harry hopping up on two legs for added
entertainment, laughs Linda as she explains the leaps and bounds
her son has made since finding a friend in Harry.
“He's made so much difference to all our lives,” says Linda.
The beauty of assistance dogs, say Craig and Tracey, are that
they are trained to enhance the quality of life for people with
physical or mental challenges, whilst still allowing the person to
maintain as much independence as possible.

WORDS RACHEL SYERS
“We train each dog to the individual handler’s needs,” said Craig.
“There are basic tasks that are taught to each assistance dog, but
every handler will have different physical needs so there will be
different individual tasks required for every handler.”
Teaching a dog new tricks is no piece of cake, hence Craig has
become a qualified assistance dog trainer after attending a course in
the US on Assistance, Service and Therapy Dogs.
It's also a sizeable financial commitment to train one dog to
readiness, costing between $20,000 to $50,000, not to mention
ongoing maintenance training “We currently use funds from our
commercial dog training business to fund our Assistance Dog
program,” says Tracey.“We also rely on donations from businesses
and the public to assist us with our program - every bit of help and
assistance is greatly appreciated.”
“Without our key supporters to help us with our endeavours in
training and supplying these dogs to their disabled partners, it
would be impossible or extremely difficult to achieve,” says Tracey.
The Murray's' passion for their four-legged friends has spurred the
couple on a journey of learning throughout the past 20 years.
“We started out with a deep love and devotion to dogs and our
passion and hobby quickly became a career,” explains Tracey.
On a mission to provide the best possible knowledge and education to his
clients, Craig undertook US courses in Professional Dog Training, Police and Narcotic
Dog training, Man Trailing Bloodhounds, Search and Rescue and Cadaver Recovery
dogs and Assistance and Therapy Dogs and training.
While Tracey has carved her own niche in the canine circuit, spending time at a
wolf research facility in the US to research the similarities and differences between
the wolf and the domestic dog.
With such a comprehensive understanding of dogs, the Murrays have lectured at
the University of Queensland's Veterinary Science School for 13 years, been special
educators for Japanese dog training students for one of the largest Asian college
groups, and have been called upon as expert witnesses for court cases.
“We have been contracted by governments and large corporations to develop
world-first technology for sniffer dogs and have worked as specialist search dog
handlers for five state police services,” says Craig.
Their resume not only boasts training police officers and dogs overseas, but also
winning an International Award for Dog Training Excellence in Law Enforcement,
and winning a Volunteer of the Year Award for their services to the Queensland
Ambulance Disaster Dog Team development.
But it's seeing the difference dogs like Harry can make, which reminds the duo
why all the hard work is worthwhile.
The couple does check the pounds for dogs with a suitable outlook, as well as
breed golden retrievers and labradors with the hope of picking suitable pups from
the litters for training.
Then it's anything from four to eight months spent preparing the dog for its new
best friend.
Craig says the Queensland Government is backing their program by allowing
assistance dogs public access under the Disability Discrimination Act, and is
currently working towards having a separate Act to cover Assistance Dogs.

BulgariTHE SYMBOL OF THE SERPENT
The overt reference to the Bulgari tradition that lies at the heart of the new
Serpenti collection, testifies to the brand’s respect for its own heritage and the
inspiration it has always drawn from mythology and history. The serpent is a
creature whose unique characteristics have long fascinated the human
imagination, and figures prominently in the myths and folkloric traditions of
virtually every culture in the world.
It is present in numerous ancient civilizations, such as the Aztecs and the
Egyptians, who believed that the snake’s continuous shedding of its skin was a
symbol of fertility, regeneration, resurrection and immortality. In Egyptian
mythology specifically, the goddess of maternity and fertility, Isis, has a
particularly strong connection to the image of the snake. Indeed, legend has it
that the goddess acquired the power to heal through the help of a serpent.
The animal also played an important role in Greek mythology as an emblem
of life, and its image was used to represent healing, death and rebirth. The
connection between the snake and immortality derives from symbolic systems
that associated the creature with the earth and the
waters that flowed from it, and thus it
came to represent the generative
forces harbored by the earth and
the underworld.
Over the centuries, the symbol
of the snake is encountered not
only in myths and legends of
ancient civilizations, but in the works
of numerous authors, poets and artists
of epochs closer to our own, further
evidence that the archetype of the serpent
has always been considered extremely
powerful.
Bulgari now offer beautiful pieces that will endure forever.

...to the manners born
Isabella and Molly-Rose Proctor
Discerning parents understand that embracing the artof etiquette at an early age has significant bearing on
being accepted into society as adults.
Minding your Ps and Qs at the table, using cutlery correctly, knowing the
difference between a serviette and a napkin are considered by many of today’s
parents as unimportant, so yesterday, or just plain old fashioned like grandma
and grandpa. Perhaps they too were propped in front of the television, to scoff fast food or
eat from a refrigerated or microwaved box with a fork. And what about shaking hands, eye
contact, offering a seat on the bus to the elderly or sending thank-you notes?
Culture is not a dirty word, nor is etiquette and many households do uphold the
tradition of family dining at the table peppered with lively conversation.
However in a quest for more acceptable behaviour and correct manners on social
occasions, some Brisbane parents are turning to the professionals. During the school
holidays they are sending their five to 12 year-old boys and girls to a four-hour class at
Franklin Villa at Highgate Hill in Brisbane’s inner south.
Legendary June Dally-Watkins who established Australia’s first school of personal and
professional development in 1950, is credited with
creating the Little Etiquette Programme.
Jodie Bache-McLean, a director of the Brisbane
office says the programme has a maximum of 12
participants and is not directed to a particular socio-
economic demographic: “Miss Dally is adamant that
her philosophy and values are the mainstay of any
teachings within her school, while staff hold this standard close and deliver programmes
to a premium industry standard.”
The head trainer is Brisbane identity Lainey Loneragan, who has been at June Dally-
Watkins for many years, also runs a small catering company, has owned her own fashion
agency, been the public relations director for Southern Pacific Hotels Queensland, enjoyed
numerous facets of the media, and once owned the California Café which during her
tenure, was named number 12 out of the 100 Queensland icons.
The program’s three main subject headings are: saying the right thing; going to dinner
and table manners; and being a great host or guest.
“One of the most important things most people are unaware of when they’re dining
upmarket, is the use of a napkin, not the serviette, as it is sometimes called,” says Jodie. “A
serviette is made from paper, whilst a napkin is made from linen. We show the students
how to place the napkin on their lap and a simple technique to stop it falling to the floor.
There are extra tips too, such as when it’s acceptable to place the napkin on the table and
what do to do with the napkin when leaving the table for a short time.
“And before the boys and girls sit down to a four-course a la carte lunch, we also teach
them how to ‘navigate’ the dining table and in the process how to set a table correctly.
“It all starts with the bread roll, then the correct way one to eat soup, followed by pasta,
salad and finally fruit. It’s quite a complex dining experience.”
Jodie reveals the average girl/boy ratio is sadly about
5 to 1 although the response to the classes is high since
they began earlier this year and classes during the most
recent school holidays have been a sell-out. In addition
etiquette classes devised by Dallys and run by teachers
in more than 30 primary and secondary schools
throughout Queensland, are hugely popular.
Candid comments from graduates of the Little Etiquette Programme, whose grateful
parents paid $150, are: "It was the best and most exciting day of my life" says 10 year-old
Grace and “I think it was perfect improving my knowledge and having fun" says 11 year-
old Connor.

THE EASTERN & ORIENTALCOOKBOOK
Australian-born Will Ricker is a true success story.
Arriving in London in the 1990s, he set up his first
restaurant, Cicada, to critical acclaim. The Great
Eastern Dining Room soon followed as did the
winning Ricker formula with the opening of E&O,
XO and Eight over Eight.
With an emphasis on the best fresh produce, and
an enticing blend of flavours from the Orient, the
dishes are simple yet complex, innovative and fresh.
In The Eastern & Oriental Cookbook, (Hardie Grant
$59.95), Will Ricker shares more than 80 of his
favourite recipes from the restaurant – many of
which have become signature dishes, plus the
philosophy behind them. Bird’s nest oysters; date
and water chestnut gyoza; duck and lychee salad;
grilled Sechuan prawns; and more are guaranteed
to enchant the senses and invite a whole new
approach to cooking delicious pan-Asian dishes in
your kitchen.
SPRING IN SICILYSpring in Sicily by Manuela Darling-Gansser
(Hardie Grant $59.95), depicts a magical season of
abundant growth and fertility. Fruit trees and vines
are in new leaf, wheat fields stretch to the horizon,
wild flowers grow in profusion along the roadside
and at sea, tuna and swordfish swarm in
anticipation of their annual migration. Although
small, Sicily has a big reputation and a colourful
history with the influence still evident in its
architecture, cuisine and daily life. From the
glittering Palermo of princes and palazzos to
humble seaside bars, from the derelict and
forgotten island of Salina to vineyards thriving on
the rich slopes of Mount Etna, Manuela Darling
Gansser’s Sicilian journey reveals the real Sicily
behind the myths and stereotypes.
BOURKE STREET BAKERY From sourdough to pies, sausage rolls, tarts,

enclave Surry Hills, which sells artisan-baked goods
of the highest order. The bakery's long queue of
customers waiting for their daily fix is testament to
the popularity of its utterly delicious wares.
With more than 90 recipes for their exceptional
creations, all of which can be made in a standard

BEETROOT ROASTED WITH FETA AND WATERCRESS
Ingredients:
10 small beetroots
sea salt and pepper
100 ml white wine vinegar
100 ml extra virgin olive oil
100 g Persian feta or any other
soft, marinated feta
½ bunch watercress
50 ml balsamic vinegar
Method:
Preheat the oven to 180°C. Spread a large piece of foil on the kitchen bench
and place the beetroots on top. Season with salt and pepper, then bring the
edges of the foil together. Pour the white wine vinegar over the beetroots and
secure the edges to make a bag. Place the bag on a baking tray in case of any
spillage. Cook in the oven for 20 minutes until tender, then remove and allow
to cool. Using rubber gloves, peel the beetroots and cut them in half.
Heat 20 ml extra virgin olive oil in a saucepan, add the beetroot and cook for
a few minutes to sear slightly. Season to taste. Transfer the beetroot to a serving
dish and crumble the feta over the top. Arrange the watercress around the
beetroot. Whisk together the balsamic vinegar and remaining olive oil and
drizzle over the salad before serving.

WHEN I GET HOME (Lantern $49.95)
Tamworth-born Matt Moran was raised on a dairy farm at Badgery’s Creek in NSW,
brought up on meat and three veg and while living in regional Australia he developed a
commitment to the land and a love for food and local produce. He launched his first
restaurant in 1991; the third was Aria in the unmatched location overlooking the Sydney
Opera House and the most recent to receive rave reviews, Aria at Brisbane’s Eagle Street
Pier.
With an incredible work ethic, an
abundance of accolades, a bunch
of television credits and food
described as “a revelation”, Matt’s
time with wife Sarah and young
Amelia and Harry “who has an
amazing palate” is precious and
creating dishes for the family in
his kitchen with five ovens and a
walk-in cold room, is
“therapeutic”.
The kitchen “the heart of any
home” is also where recipes for
his latest aptly titled When I
Get Home (Lantern $49.95),
were developed.

THE TANDOORI PLACE OPENS INRUNAWAY BAY.
The Tandoori Place has a long history with the Gold Coast dining community
dating back to 1984, when owner Surjit Dhillon opened his first restaurant
in Southport. It was here that Surjit began to develop his unique collection
of secret recipes cleverly created from traditional Northern Indian herbs and
spices, to appeal to both Western and Asian tastes.
Now there are ten of his award-winning restaurants here and in Brisbane. Mr
Dhillon has over the past few years given his high achieving staff the opportunity
to become part-owner; and to take over a new restaurant site, and join the group.
Recently, in keeping with this tradition, new boys on the block, Sachit and Pankit
Sharma, along with their father and award-winning chef, Subhash Sharma have
opened the latest Tandoori Place restaurant in Runaway Bay.
Sachit has a history with Surjit's restaurant in Southport, where at 13 years-of-age
he started waiting tables after school, and continued in the restaurant for 6 years,
before going onto Griffith University to achieve his Business Degree. He then
returned to The Tandoori Place and worked hard until Surjit offered him the
opportunity of a lifetime.
Now his whole family is involved; Sanchit handles front-of-house, brother Panchit
tends the tables, and father Subhash rules the kitchen. I've even seen their mother
helping out.
At the entrance sits a tall enclosed aquarium filled with brightly coloured fish that
hover for attention as diners look on. The restaurant itself is fresh and bright, with
seating for about 40 available. Tables are
draped in crisp white tablecloths; and settings of modern white plateware
and shiny cutlery and glassware await hungry diners.
The menu is extensive, and features all the favourites, including a wide selection of
vegetarian dishes, as well as a few 'modern' classics such as Vindaloo Roo, and
Kangaroo Korma.
On the night we dined we chose an array of excellent dishes, the Prawn Marsala
seasoned prawns cooked with mushrooms, garlic, green chilli, onion, tomato and
ginger; Beef Vindaloo - tender meat with a hot kick (my favourite); Paneer Palak
homemade cottage cheese cooked with spinach and spices; Suhka Zeera Aloo
potatoes cooked in cumin seed and spices; Tandoor cooked breads, saffron rice
and Khiri raita, spiced yoghurt with cucumber.
As the restaurant is BYO diners can choose their favourite wines to take along. We
understand that a license has been applied for.
This is perfect dining in warm, friendly surroundings - and with the guys looking
like they just stepped out of a Versace catalogue in their black tailored pants and
shirts, I'm sure that the female clientele will be leading the way.
Tandoori Place is perfect for birthdays and parties, as well as intimate dining.

Talking Turkey WHO SAID TURKEY IS JUST FORCHRISTMAS? EUROPEANS AND AMERICANSARE YEAR-ROUND CONSUMERS AND THETREND IS CATCHING ON IN AUSTRALIA.
The turkey originated in the United State,
Mexico and Central America and is the key
to every Thanksgiving dinner. In Australiawhen we think of turkey, we associate it withChristmas – not what today’s growers want to hear. From turkey production that was dominated by twomajor players who controlled the industry fromdeveloping the preferred hybrids to processing thebirds, the demand today has increased for free-range, hormone-free, organically-raised birds andvarious fresh cuts such as Inghams’ drumsticks, breast steaks, tenderloins, Italian sausagesand wings which are available all yearround.Innovative recipe ideas also add to itsappeal. How about fresh turkey drumsticksgrilled with a lemon and garlic marinade;turkey breast steaks in a light fattoushsalad; Italian turkey sausages servedwith Italian style cannellini beans; ormarinated turkey tenderloinsaccompanied by an Asian salad.Turkey also goes with almonds, hazelnuts, chestnuts, red currantjelly, apple jelly, prosciutto, bacon, sweet potato, tarragon, sage, verjuice, mushrooms and of coursecranberries.Turkey can behandled, cookedand stored in thesame way aschicken, whether youroast or grill. As well as beingdelicious, turkey is also one of theleanest sources of protein on the planet. It’s low insaturated fat, a good source of niacin, plus vitaminB6 and vitamin B12, which are vital for energyproduction and lowering the risk of heart attack.Turkey is also rich in zinc, a remarkable nutrientthat is critical for a healthy immune system.
Asian-flavoured marinatedturkey tenderloinsIngredients:4 fresh turkey tenderloins 1⁄3 cup soy sauce
2 tbs hoi-sin sauce2 tbs peanut oil2 tbs brown sugar 2 tbs sesame oil 3cm piece of ginger, peeled, grated 2 garlic cloves, crushed 1 tsp Chinese 5 spice powder Asian-style salad 1⁄2 wombok (Chinese cabbage), trimmed, finelyshredded 3 green onions, finely sliced 1 large carrot, peeled, grated 2 celery sticks, finely sliced 1 tbs sesame seeds, toasted 100g packet crunchy noodles
Method:Combine soy, hoisin, peanut oil, brownsugar, sesame oil, ginger, garlic and Chinese fivespice powder in a large ceramic dish. Add turkeytenderloins and turn to coat well with marinade.Cover and refrigerate for 1 hour, if time permits.Combine Chinese cabbage, green onions, carrot, celery and sesame seeds in a large bowl. Coverand refrigerate.Preheat a barbecue hotplate on medium heat.Remove turkey tenderloins from marinade, reservingmarinade. Pour marinade into a small saucepan.
Cook tenderloins for 4-5 minutes each side or untilcooked through. Place saucepan with marinadeover a medium heat. Bring to the boil and simmerfor 2 minutes. Add crunchy noodles to salad and toss until wellcombined. Spoon salad onto serving plates. Topwith turkey tenderloins and spoon marinade sauceover tenderloins. Serves 4.

Champagne Fleury Pére & Fils...At last an organic Champagne direct from the heartland of France.
This is the first champagne certified by Demeter, produced from grapes that have been
cultivated in accordance with true Biodynamic principles. No synthetic sprays or
chemical fertilisers have been used, instead natural preparations are made with plant
based products and mineral extracts,,which respect the environment and increase the
soils vitality. This method allows the winemaker to extract the 'sensuality of the land'
which then expresses itself in an aromatic and complex palate. The champagne presents with a
light amber colour, medium sized pearls and a bold flavour - full of honey and floral tones.
A rare delight - that will now be available from Organika in Noosaville, which has built up a huge
following of loyal customers looking for true organic choices. Try it with their organic salmon.

“It’s a very significant result for the company, the

Guilt-free showers Showers that save money and don’t cost the environment sound too good to betrue however with Satinjet, that’s possible. Conventional showers use single jets
of water and produce a narrow, needle-like spray. The ingenious Satinjettechnology propels twin jets of water to collide, turning into thousands of tiny
droplets that feel soft enough for the face, yet are strong enough for the entirebody. Water saving can save the average family of four 100,000 litres eachyear,* with the WELS three-star rated, shower range, as it uses only 7.5 and
nine litres of water per minute, allowing a guilt-free luxurious shower every time.

ESSENTIALLY THE ART MUST BE AN ORIGINAL- NOT DIGITAL, BE FOR AN ABN REGISTERED
OFFICE, AND BE BOUGHT BEFORE 31DECEMBER 09.
ATO CONFIRMS INVESTMENT ALLOWANCE FOR ARTWORKS
Lowensteins Arts Management CPAs, have received
confirmation from the ATO that small businesses (turnover
below $2m) are eligible to receive an investment allowance of
up to 50% on the purchase of artworks up to 31 December
2009¹. Businesses with turnover over $2m are also eligible for an
investment allowance - please see note below for details.²
The arts accountancy firm sought this advice in June by
putting forward a number of guidelines that they believed
would enable artworks to be claimed under the new allowance.
Lowensteins argued that an art-enhanced work environment
can generate greater productivity and that there is a causal
relationship between businesses displaying artwork and the
income of their clients.
One of the most important of these was that the allowance
should only apply to NEW artworks created by professional
artists registered with an ABN or a recognised overseas artist.
Among the guidelines accepted by the ATO to qualify for the
allowance are
1. Artworks are used in Australia primarily for business
purposes (artwork would not qualify if its exposure were limited
to only its owner); 2. Artworks must be tangible, therefore
exclude digital art; and 3. Artworks cannot be trading stock, or
intended for sale in the foreseeable future.
The following examples illustrates the impact of the allowance
using straight-line depreciation. • Before the investment
allowance, under division 42-500, the division only provided for
a write off over 100 years : Artwork purchased for $20,000 (net
of GST); Depreciation $ 200 equates to the tax deduction
available. • Utilising the investment allowance for a small
business (<$2m): Artwork purchased for $20,000 (net of GST);
Depreciation $ 200 and Investment Allowance $10,000 =
$10,200 tax deduction available.
Notes: ¹Applies to assets purchased for at least $1,000 from
13/12/08 to 31/12/09. ²For businesses with turnover >$2m, the
investment allowance is 30% from 13/12/08 to 30/6/09 and
10% from 1/7/09 to 31/12/09 and applies to assets purchased
for at least $10,000.
Please consult with your accountant. More information is

Perched on a plum riverfront
site, the two bedroom, small
garden apartment was
overdue for a major refurbishment. It
was dull and dark. The terracotta-tiled
floors had outlived their welcome, the
kitchen was very yesterday, small
bathrooms were boring and old-
fashioned, ditto the bedrooms and
window treatments plus the living
area was over-furnished with a clunky entertainment unit and tired
tables, chairs and a sofa had gone way beyond their use-by date.
The brief was simple: Open up the apartment, make it a more liveable
space and create an indoor/outdoor environment that was conducive to
the sub-tropical climate.
Initially the strategy was also simple: Completely strip the apartment
which entailed scrapping the wall cupboards and refrigerator bulkhead
on the western wall of the kitchen, removing other kitchen cupboards
that intruded into the dining area to stream more light indoors, and take
up the cracked tile floor in readiness for
new 600mm square tiles. A glitch: The
floor/slab was so uneven it needed re-
floating.
The kitchen was re-designed, the
bench space extended and cupboards
reconfigured to accommodate space
savers from such as a LG Lightwave
convection/microwave oven with a pull
down door; a Fisher & Paykel integrated
dish drawer; and what’s believed to be a
first for a Hastings Street apartment, an
innovative multi-temperature
refrigerated drawer. The Fisher & Paykel
Izona cool drawer cools, freezes,
preserves and freshens food using five
specifically designed temperature
controls.
The bathrooms, simply retiled with
floor to ceiling 600mm x 300mm white
tiles laid horizontally, have feature tiles in
the shower areas, 2-pac vanity units with
Caesar stone tops and large frosted trim
glass mirrors.
In the living area, a floating shelf accommodates the ultra slim DVD
player and the Ipod docking station. The Plasma TV was attached to the
wall with a bracket.
Hayman's ‘whitewash’ on the walls, matched the frames of the faux
wicker sofas; the bright feature wall harmonised with the scatter
cushions; and the white Vogue vinyl shutters in the bedrooms and the
living area added privacy and a tropical flavour.
Bifold doors brought the outdoors in and revealed an expansive timber
deck and garden, designed by John Scomparin’s Outside Noosa to give
the appearance of depth, was landscaped with low maintenance shrubs
such as gardenias, radicans, metrosideros and hibiscus and low voltage
lighting highlighted the palms and group plantings.
“The Brisbane-based owners were thrilled with the interpretation of
the brief they gave me,” says Plantation Living Design’s Tony Flanagan. “It’s
morphed into a light, bright, very liveable, contemporary space – an oasis
of calm, complemented by a generous al fresco entertaining area.”

Paradise found...JUST OVER AN HOUR AND A HALF DRIVE NORTH FROM CAIRNSAIRPORT, ALONG A WINDING COASTAL ROAD THAT AFFORDSSOME OF THE MOST SPECTACULAR VIEWS YOU COULD EVERASK FOR, SITS THE SMALL, YET VIBRANT TOWNSHIP OF PORT
DOUGLAS.
Port Douglas has emerged from its lazy days as a quiet hamlet to become a
playground for those wanting to experience the delights of Tropical North
Queensland. With its beautiful vista of the bright blue/green water of the
Coral Sea and palm-lined shores, the region is encircled and protected by high
mountains that seem to glimmer with hazy blue and green accents.
This is a region that exudes fodder for tall tales and high adventure. With the
Barrier Reef , Daintree Rainforest & crocodile river cruises, Mossman Gorge,
Atherton Tableland and Cape Tribulation all within easy access, it is the perfect
base for further travels and exploration.
The main thoroughfare, Macrossan Street is full of energy and a shopper's
delight - an endless selection of cafes and restaurants, bars and boutiques; coffee
shops and jewellers - art galleries and ice cream parlours. It is no wonder that
backpackers, tourists and locals alike are drawn to the precinct to sample its
delights. In the daytime it is a hive of activity, and at night - the glittering fairy lights
and ambient lighting from the cafes add a romantic air to this tropical
wonderland.
Each Sunday from 8.00am - 2.00pm, Anzac Park on the foreshore, comes alive
with coloured tents, high energy entertainment and interesting people, as the
local market swings into action. Be sure to sample the fresh coconut milk as you
wander around.
On our recent excursion to Port Douglas, we stayed at the magnificent five-star
Sea Temple Resort & Spa in Port Douglas, a haven for those seeking the delights
of the hot tropics, but with a penchant for the finer delights of first class amenities.
Sea Temple is a tropical oasis, perfectly located in a quiet street just 5km from the
hustle and bustle of The Port (as it is lovingly called), at the secluded southern end
of Four Mile Beach.
Here is an oasis that blends seamlessly into the natural beach environment, for
those looking for a quality experience while exploring the region.
From the moment you step into the expansive entryway with its overhead
sweeping fans - through to the magnificent, grand central lagoon pool that winds
its way through the resort and features an island cocktail bar, you will feel that you
could be anywhere in the world.
Warm and welcoming reception staff greet you with smiles and assist with your
smooth transition through the resort.
With its offering of 194 fully air-conditioned, beautifully appointed studio rooms,
elegant 2 and 3 bedroom apartments, villas and penthouses, Sea Temple offers an
unrivaled expression of both luxury and lifestyle. This exciting selection also
includes - swim-out rooms, two bedroom apartments with roof-top jacuzzis, and
three-bedroom villas with their own spa and barbecue area. And, of course every
conceivable luxury.
The resort's tropically-inspired Aqua restaurant and bar seats 128, and sits beside
the lagoon overlooking the clear blue water, that at night is lighted by tall flares
that sit upon columns in the water. This is a fabulous meeting place for a quiet
cocktail during the day or evening, before dining on the eclectic menu choices
featuring regional specialties, designed by executive chef, Jason Smith.
With casual poolside dining options available during the day, starting with buffet
breakfast and concluding with candlelight fine dining at night, and a
comprehensive wine list available, there is always a reason to indulge again and
again. If you're feeling a little tired after a day of touring the region, swimming, or
playing golf on the fabulously landscaped 18 hole links-style, Sea Temple Golf and
Country Club just across the road, then room service is also available.
The resort's General Manager, Andrew McSweeney, was eager to share the news
that Sea Temple has also launched its guest chef program, and will host cooking
classes, luncheons and dinners featuring celebrity chefs on a regular basis.
We were lucky enough to attend one on our visit, when Brad Jolly owner/chef
of Alchemy Restaurant & Bar in Brisbane passed on his expertise in a luncheon
cooking class at Sea Temple Golf and Country Club and then hosted a degustation
dinner at Sea Temple Resort & Spa.
The resort also offers a Mii Day Spa with a wide selection of treatments for both
men and women, and Vichy shower available; and a shop for gifts and little
forgotten goodies.,

FOODIES ANTICIPATING A RETREAT THAT DISHES OUTONLY LENTILS, SPROUTS, YOGHURT AND YOGA ARE
IN FOR A HUGE SURPRISE.
The preliminary paperwork and list of contraband is not long but
some might consider it off-putting. No television, newspapers or
internet. Do not pack alcohol or food, and mobile phones are
restricted to your room or a designated spot near the cricket pitch. Fair
enough. But as the electronic gates of Gwinganna Lifestyle Retreat close,
the feeling of trepidation about the next 48 hours suddenly intensifies.
Set on more than 160 hectares in the Tallebudgera Valley, Gwinganna
is perched atop a plateau, almost hugs the McPherson Range, boasts
magnificent views of the glitzy Gold Coast yet is tucked naturally
amongst eucalypt trees and a spring-fed billabong.
Entrepreneur Tony de Leede took over the private village with its
pretty Queenslanders, including the former Tweed Heads general store
and the 1911-built church, from publisher Kevin Weldon, fulfilling a
lifelong dream to live a better life and help others do the same thing.
The heritage guest and common areas have been augmented by a
dining room and lounge area, state-or-the-art gym, two wet-edge pools,
an outdoor yoga pavilion and the plush Orchard suites have a king-size
bed, marble bathroom, empty fridge, kettle, herbal teas, filtered water and
a verandah overlooking the orchard and olive grove.
The weekend program manager Kay, who has longer-than-Rapunzel
hair, guided the early arrivals on a thirty minute sunset walk, followed it
by an orientation session, served delish mocktails, and explained that a
single glass of wine, organic like everything else is allowed, as is coffee
until 11am. Surprise, surprise.
“We’re not about lentils and sprouts,” the affable Austrian-born chef
Hermann Schafellner, who also conducts cooking classes, says at dinner.
“We believe that nature should dictate what we eat and although some
people are surprised when we have say lamb is on the menu, it’s all
about balance. After all you do need a little fat.”
Sated after three courses, there was time to read a few pages in bed
before tiredness took over. And let’s not forget there’s knock at the door
before sunrise. Time to chuck back the doona and join the qi gong
session – similar to tai chi. Kinesis training, a light walk or challenging hike
are followed by a hearty alfresco breakfast of fruit and poached eggs
with sun-blessed tomatoes. More activities were broken by morning tea
and gluten-free cookies.
A sensational lunch of four salads with just-picked produce, made a
visit to the gardens with resident botanist, ecologist and after dinner
bagpipe-playing John Palmer a must. “It’s all about variety and beautiful
bees,” he enthuses while encouraging tastes, chook chatting and seed
gathering.
Afternoons invite nothing or a visit to the 33-room Spa Sanctuary,
billed as the largest in the southern hemisphere. As Adi, a Balinese
masseuse with the strength of a Viking pummels away, groans give way
to sighs. No wonder Hugh Jackman and wife Deborra-lee Furness are
sold on this place.

Gwinganna Lifestyle Retreat
La Mamounia, Marrakech’siconic hotel has just reopened, following an extensiverestoration project led byinternationally acclaimedinterior designer, JacquesGarcia.
Situated on the edge of the walls of the old city of
Marrakech, La Mamounia is named after its
legendary 200-year-old gardens, originally given as
an 18th century wedding gift to Prince Moulay Mamoun
by his father, King Sidi Mohammed Ben
Abdellah. Today, the gardens at La
Mamounia cover almost 20 acres with an
enviable variety of flora and fauna. Since
the hotel originally opened in 1923, La Mamounia
has been symbolic of traditional Moroccan
hospitality and a classic example of the great age
of grand hotels.
For over 85 years, La Mamounia has been a beloved
destination for travelers from around the globe, including
royals, heads of state, film makers, musicians, actors and
fashion designers alike. Sir Winston Churchill recalled La
Mamounia as, “the most lovely spot in the whole world”
when inviting Franklin D. Roosevelt to visit him in his
favourite place. And, Alfred Hitchcock chose La
Mamounia as the site to film The Man Who Knew Too
Much with James Stewart and Doris Day. Others that
have followed include luminaries, such as Charlie
Chaplin, Marlene Dietrich, Kirk Douglas, Charlton Heston,
Princess Caroline of Monaco Nelson Mandela, Jacques
Chirac, The Rolling Stones, Elton John, Nicole Kidman,
Kate Winslet, Tom Cruise, Yves Saint Laurent and Julio
Iglesias. The list is long and inside the hotel lives a prized
guestbook, chronicling the guests’ emotional reactions to
the magic of La Mamounia and their love of Marrakech.
This legendary hotel, which has hosted the world's
“who’s who” has expanded with 136 stylish guest rooms,
71 suites including seven Signature Suites, and three
Riads - each with three bedrooms, private terraces,
Moroccan salons and a private swimming pool.
Internationally respected Interior designer, Jacques
Garcia has perfected La Mamounia as a tranquil haven in
the heart of the imperial city. By recreating the luxurious
mood of the oriental palaces, Garcia’s trademark style
offers the perfect accompaniment to the impressive and
powerful Moorish architecture, abundant at La
Mamounia. Strong use of light and colour, combined
with beautiful and theatrical perspectives, adds a
wonderful level of modernity to Garcia’s creation at La
Mamounia. Marble columns, fine materials, vivid fabrics,
soft furnishings and colourful wood, add the final touch
to this harmonious picture.
“Reminiscent of a far away time and place, La
Mamounia evokes a modern day fairytale. Such a haven
is often sought after but rarely found. Combining the
best the modern world has to offer with traditional
values, the hotel provides an experience so unique, it
becomes an integral part of the myth that defines it”. said
Jacques Garcia.
Globally regarded as one of the most desirable hotels
in the world, the new La Mamounia, under the expert
management of Didier Picquot, will feature: a 27,000 sq
foot La Mamounia Spa; three signature restaurants
headed by two Michelin Star chef’s, Alfonso Laccarino of
the famed Don Alfonso 1890 in Sant’ Agata, Italy and
Jean-Pierre Vigato, owner of Apicius in Paris, France, as
well as Fabrice Lasnon, Executive Chef of La Mamounia; a
pool restaurant; five bars; and 20 acres of historic gardens
noted for its ancient olive groves and wide array of flora.
With two 2-Michelin Star chefs, Alfonso Iaccarino and
Jean-Pierre Vigato to headline two of its signature
restaurants. L’Italien by Alfonso Iaccarino features
modern Italian specialties, whilst Le Francais by Jean-
Pierre Vigato specializes in French contemporary cuisine.
In addition, Le Marocain is located in a modern Moroccan
pavilion in the Park and offers fine Moroccan cuisine,
fusing both traditional and modern ingredients to
perfection.
The less formal Le Pavillon de la Piscine will serve light
Mediterranean cuisine. Additionally, five exquisite bar
experiences await the guest at La Mamounia including
Le Bar Marocain, located on the second floor of Le
Marocain; Le Bar Italien, located in the Majorelle Gallery;
Le Bar Churchill in the Mamounia Gallery; Le Bar de la
Piscine; as well as the esteemed Le Menzeh ‘Glacier &
Pâtissier’ located in the gardens. La Mamounia’s own
Vegetable Garden ensures that guests are catered for
using only the freshest ingredients.
Inspired by the perfect blend of Moroccan
and Eastern culture, the 27,000 sq ft La
Mamounia Spa beautifully fuses the traditional
with the very modern. Over 80 treatments are available
at La Mamounia Spa ranging from traditional
Moroccan hammam treatments with marocMaroc to a
full line of face and body treatments by SHISEIDO;
manicures and pedicures by La Ric; and hair styling by
Jean Michel Faretra Paris. Two traditional hammams, a
private hammam, eight treatment rooms (including two
double), six outdoor massage cabins, an indoor, ozone-
treated swimming pool, Jacuzzi, relaxation room, Spa
Suite, fitness studio and sauna complete the experience.
Additionally, the Fitness Pavilion in the gardens houses
a fitness studio with aerobics, Pilates, spinning and yoga
classes, a weights and cardio room, an outdoor heated

A 12-YEAR-OLD GIRL FLEES HER HOME IN THE DARK OFNIGHT WITH NO SHOES, SLEEPS IN TREES TO STAY SAFEFROM ROAMING ANIMALS, WALKS ON BLEEDING FEETFOR TWO WEEKS TO HER AUNT'S HOUSE AND IS THENHIDDEN AWAY FOR FEAR OF BEING MUTILATED BYORDER OF HER OWN MOTHER AND FATHER.
She’s also scared of being sold in marriage to a man three times her age. If that
were to happen in Australia, the community and government combined
would be screaming for justice. In fact, it's unfathomable to think of such a
tragedy unfolding on the streets of our country.
However, when we hear such tales emerging from far-off lands it's more often the
case that we turn a blind eye and get on with out own personal problems … like
finding a designer handbag to match those heels, or what to serve for dinner that
has a low-carb content lest our thighs are looking a little too curvy.
Not so for Annette Duffy, a Scottish migrant who came to Australia with four young
children in 1988 and via hard work and determination, became a Queensland school
principal for the past 13 years, currently at St Brigid's Catholic Primary School in
Nerang.
Annette has shown empathy for the plight of such girls facing the horrors of
female circumcision and forced child marriages happening illegally overseas, and
taken steps to address the problem. Literally thousands of steps in fact – straight to
the top of the iconic six-kilometre high Mount Kilimanjaro in Tanzania.
“It was the hardest thing I've ever done – and to tell you the truth I'd probably
never do it again if I had known what I was getting myself into,” said Annette, with
only a hint of a chuckle.
For she's quite serious about raising awareness – and raising desperately needed
funds – for the runaway girls of Tanzania. Several girls die every year from the
excruciatingly painful procedure with an unsterilised razor, with many more suffering
permanent physical damage, mental health problems and infertility.
When an exhausted Annette reached the mountain peak after six 14-hour days of
climbing, she felt the immense satisfaction knowing she had not only raised
thousands of dollars in sponsorship from supporters back home on the Gold Coast,
but also honoured her own daughter.
“My daughter, Clair, had been at me for two years to do the climb with her and I
kept saying ‘No, I’m so busy’, but finally I gave in and began training with boot camps
and the like, and we ended up making the climb together with one of my sons
Matthew and a family friend,” said Annette.
Heights, hopeand big hearts...the `Annette Duffy’ story..
Queensland LuxuryStyleLiving 81
“So many people have died on that same climb, and there's only about a 50 to 70 per cent
success rate of reaching the peak, so I was in disbelief that I'd made it in the end.”
Clair made her mother aware of the Tanzanian girls after becoming a legal officer with the
United Nations International Criminal Tribunal for Rwanda that is based in Tanzania.
“She has been there for five years now and is part of the legal team that previously successfully
prosecuted three members of the cabinet in Rwanda for the genocide over there, so yes, I am very
proud of her,” said Annette. By all accounts though, Clair has plenty to be proud about when it
comes to her mother as well.
From her principal's seat at Nerang, she heads the St Brigid's Charity to support the Tanzanian
non-government organisation Aang Serian, which is leading a grassroots campaign against
female genital mutilation in six Maasai villages in northern Tanzania.
“We've raised $10,000 so far just from fundraising projects within the school, the climb,
fundraising drives and donations from various people, and that's all helped towards building
dormitories for the Maasai girls,” said Annette.
The 'girls' number about 30 – aged between 11 and 18 when they fled from their villages to
avoid forced marriage and female genital mutilation – and have found refuge at the Aang Serian’s
Noonkodin Secondary School in Eluwai village established in 1999 near Arusha, at the foot of
Mount Kilimanjaro.
Aang Serian raised funds from supporters around the world to construct a safe house for the
girls, and is trying to re-educate their parents and reunite families.
The Gold Coast branch of Soroptimists International - a women’s service organisation which
aims to ensure equal access to education and training for all females - became aware of Annette
and Clair’s involvement and have committed to sponsoring two Maasai girls attending the school,
which provides vital secondary education.
Additional sponsors are still needed to fund the girls, with as little as $800 a year supporting a
girl's education and living expenses.
Annette's other passion is improving indigenous education, including the Jambe project
funded by the Department of Education, which is about reconciliation, education and cultural
learning for both indigenous and non-indigenous students and families.
Also, after eight years, Annette is near completion of her PhD. “My study is looking a the
leadership, particularly the spiritual leadership, of four Indigenous school principals. “I hope the
work will break some new ground and change things for the better.”

QUIRKY ANIMALS AND WOMEN WITHATTITUDE – OFF TO NEW YORK!
Brisbane-based artist, Tracey Keller, is jetting off to New York for another
exhibition. Before leaving for the Big Apple she is showcasing her
latest works in her Oxford Street Gallery.
….and her usual flying pigs, strutting roosters and diving cows are
replaced with women – mostly nude!
Tracey has established a solid reputation for her unique quirky animal
paintings and heart-warming pet portraits. She does, however sometimes
like to challenge the norm.
Her new exhibition “NEW YORK NAKED” is full of artistic bombshells where
the unfolding of the subject matter and the artistry are used to evoke the
powerful imagery of Woman.
Keller is experimenting with the art materials of the 21st century. Using her
very distinctive signature style, she combines layers of rusted acrylic, enamel,
oil, shellac and iridescent acrylics to create a visual atmosphere that echoes
the independent qualities of Woman. Some of her pieces burn very brightly,
in others the subjects smolder, waiting for the unsuspecting viewer to
interpret the chiascuro that exists between each piece.
Gallery Director of Sydney’s exclusive Salmon Galleries, Judith Salmon, says
of Tracey’s works – “There are technical parallels here between Keller and the
English romantic painter, William Turner. Turner’s experimentation with
watercolours and oils led to a revolution in painting and an emphasis on
creating light and fluency on the painting’s surface. Like Turner, Keller
eschews solid objects and detail in favour of more ephemeral effects. Unlike
Turner though, she focuses solely on the beauty and harmony, never any
destructive potential.”
Snapshots of the exhibition, are
available on the Tracey’s website.

Brisbane’sAndrew PorfyriCelebrates MajorPhotographicAwards...
Andrew Porfyri always wanted to
be a photographer. He loved
looking through a camera lens
and seeing beauty, art and form - in the
simplest of things. It was about capturing
a moment in time, recording joy or
despair in a single click, and appreciating
the world in all of its colours and
differences.
Now, not only is Andrew Porfyri one of
Brisbane’s most successful
photographers, he has just taken out
three prestigious titles, including the
2009 AIPP Australian Documentary
Photographer of the Year; the 2009 AIPP
Queensland Professional Photographer
of the Year; and the 2009 Recipient of the
Mark Gowlett Memorial Award.
While Andrew is better known for his
work in the portraiture, weddings,
architecture, design and food
presentation photographic areas, the
shots which won him the AIPP awards
are pure art. Stunning moments in time -
all shot in New York, all featuring
anonymous people and celebrating
linear contrast and the human condition.
Andrew is set to showcase these prize-
winning images, as well as his own
collection, in an exhibition on the 28th
October in his studios at Annerley. The
exhibition will run through until 13th
November.
In another move reflecting his passion
for the craft and his belief in nurturing
the photographers of tomorrow, Andrew
Porfryi Photography has announced a
Porfyri Photography Student
Development Scholarship to be granted
through the South Bank Institute of TAFE.
“The Student Development Program is
an initiative we have been talking about
and wanting to do for a long time. It
allows me to give back to the industry -
and to mentor the photographers of
tomorrow; an opportunity I wish I had
been given in my early development
days,” said Andrew. Interestingly Andrew
was actually one of the first students to
enrol for the photography course at the
South Bank Institute of TAFE when it
initially began.
“One of the marquee pieces in the
exhibition on 20th October will be a
collector’s edition framed set of the four
winning photographs from the 2009

look great in any setting from the board
room to the comfort of your living space,
creating a talking point and adding a

Electrifying Australian rock legend, Tex Perkins, takes to the stage as
Johnny Cash in THE MAN IN BLACK. The tough, challenging life of the music
superstar and his legacy of powerful hit songs is brought to life in a brand-
new show. THE MAN IN BLACK will commence a strictly limited season at the
Twelfth Night Theatre, Bowen Hills from 14th October 2009.
It’s a lethal combination, when Australian 'rock royalty', Tex Perkins takes to
the stage to play one of the most influential American singer-songwriters of
the 20th Century – Johnny Cash. Renowned as “one of the wildest and most
electrifying front men in rock” (Herald Sun), Tex Perkins, singer with the multi-
ARIA Award-winning Cruel Sea, Beasts of Bourbon and Ladyboyz, will lead
The Tennessee Four in the night of memorable music.
Cash, who died in 2003, was one of America’s most influential country
music stars, his output over a long career covered a range of genres,
including rockabilly, rock ‘n’ roll, blues, folk and gospel. He sold well over 50
million records in his lifetime and his music is still selling today. Johnny Cash
was dealt a very tough hand early in life, but through his music and
dedication he became a legend throughout the world.
Rachael Tidd, who has sung and acted in everything from Shakespeare to
Sondheim, interprets June Carter’s vocal style in the show, and Peter
Luscombe, James Black, Steve Hadley and Ashley Naylor are The Tennessee
Four.
Written by Australian theatrical producer Jim McPherson, who confesses
to a 40-year fascination with the wildly unpredictable star, THE MAN IN BLACK
is two hours of Cash’s magnificent music interwoven with the story of his rise
to stardom, his fight for survival - and his eventual redemption.
Straight out of the classic American songbook - Ring of Fire, I Walk the Line,
Folsom Prison Blues, Sunday Mornin’ Coming Down, Get Rhythm, A Boy
Named Sue, Hey Porter are just some of the more than two dozen Cash hits
in the show.
Season opens 14th October at Twelfth Night Theatre, 4 Cintra Road, Bowen
Hills. For Tickets phone the Box Office 07 3252 5122

The Body Shop has launched a new ‘Miracle Treatment’ to support the
World Society for the Protection of Animals (WSPA) in its work to save
the orangutans of Borneo. Available in stores from 12th Oct until 1st
Nov, the ‘Miracle Treatment’ offers customers the chance to achieve
amazing results – by taking action for orangutans.
Borneo’s orangutans are facing injury, disease and death, as their habitat
is destroyed by logging for the growing palm oil industry. WSPA works
with the Borneo Orangutan Survival (BOS) Foundation to fund the work
of the world’s largest orangutan sanctuary, Nyaru Menteng, currently home
to more than 650 rescued orangutans.
Michel Zwecker, Development Manager at WSPA, says: “The majority of
orangutans at the sanctuary are orphaned babies like Inka. She was just a
baby when her mother was viciously killed in front of her. Traumatised and
terrified she was carted off for sale on the black market. But she was one of
the lucky ones. Rescued by the sanctuary, she is now nurtured and cared for.”
Orphaned babies like Inka require up to six years of rehabilitation, learning
the skills they should have learnt from their mothers, before their re-release
into the wild can be considered.
Mark Kindness, Chief Executive of The Body Shop, says: “Orangutans are
facing enormous animal welfare issues as a direct result of human activity.
With a little support from enough caring people, we can work together with
WSPA towards a miracle for orangutans!
We’re asking all The Body Shop customers to get involved and become
a part of the ‘Miracle Treatment’ to help more orangutans like Inka,” Mr
Kindness comments.
There are a number of ways The Body Shop customers can achieve
amazing results with their ‘Miracle Treatment’, including:
• Giving a miracle – Donating to the Borneo Orangutan Sanctuary
• Creating a miracle – Holding an event to raise funds
• Buying a miracle – Wearing cute orangutan merchandise
• Spreading the miracle – Involving friends

Let’s set the scene... “an invitation arrives - you’re invited to
spend a day driving the latest Maseratis around Willowbank
Raceway - includes morning tea and gourmet lunch - not
transferable... great, that’s fantastic!
The only trouble is it’s addressed to the editor Kaylene Murray and she has a stress
fracture in her knee, besides that she’s not going to drive the car to it’s near
potential like I will hopefully!
Ah!, thank goodness, after much cajoleing and promises of dinners she relents
and arranges for me to be a poor-man’s imitation of ‘The Stig’.
The day finally arrives - beautiful blue skies, we arrive early at the car park;
there’s sixteen or so Maseratis, a couple of Bentley Continentals and a Mercedes
AMG - wow, I thought they were only bringing a few cars for us to admire. I’d
better not park the old BMW near them.. After meeting the other ‘test stigs’ , it
becomes obvious that they are the owners of the listed cars, lucky fellows I
thought, (or something like that!).
After signing our lives away - it could have been a contract to guarantee the
national debt, I didn’t care, I just wanted to get out on the track, but not so fast,
they’re not going to let me loose in 320kw and $350,000 or so of fine Italian
machinery without some basic tuition.
Okay, let’s be straight, this isn’t just about hooning around in three fantastic
cars, this is something which everybody sitting for a driver’s licence should do, or
at least be familiar with, maybe not in a Maserati though.
The three driver skills exercises were: Braking and swerving: this entailed
accelerating to 70kph hitting the brakes hard and pulling to the right and
stopping. This is meant to simulate a sudden stop and steering around an
obstacle, say a car in front, while braking extremely hard using the ABS brakes
which enables a car to be driven and steered without brake lockup. How many
people have actually hit the brakes hard enough to feel how ABS works - the
shuddering, which is the brakes pulsating to stop lockup? The above manoeuvre
is just about impossible to achieve without ABS, luckily most new cars these days
do come with ABS. Second test: Swerving in and out of witches hats: again
something that is fun do on the racetrack but also designed to accustom the
driver to an emergency situation, for instance, if a child runs out in front of you
unexpectedly. These tests give the driver the confidence of A. knowing what to
do, B. confidence in their own driving ability, C. showing what your car is capable
of. Naturally enough not all cars are going to do it with the same amount of
precision, so it’s important to understand your car’s potential or shortcomings
and drive accordingly.
Third exercise; Cornering: now this is getting a little more racer-like. This
entailed when to brake before the corner, where the apex of the corner is and
when to accelerate, this is where the fun starts, but again, it’s all relevant to good
safe driving. Learning all this stuff is honing your skills and enabling every driver
to have the confidence to read and handle unexpected situations that occur on
our ever increasingly busy roads.
Now that was the sermon on responsible driving but now back to the track.
To help us through all the manoeuvres were a few professional V8 supercar
drivers including Dean Canto and Luke Youlden imparting their years of racing
experience. Finally, after lunch it’s don the helmets and get out on the track where
all the tuition will now become critical to handling near on 2 tonnes of expensive
machinery.
The exhilaration of driving a car like this at no where near it’s full potential is a
driver’s fantasy. Braking at the end of a 170kph run on the straight and having the
confidence the car will do what it’s meant to, and steer through the corners in the
hands of an amateur is reassuring; the only trouble comes when your perceived
ability grows past your capabilities, for instance when the instructor says “brake”
he means it, that’s “BRAKE” with capital letters, alas missed that corner, luckily the
car is forgiving, so next time I get it right. So, after a few laps you think you’re ready
for Bathurst that is until the instructors take you for a ‘hot lap’, that’s when you
discover their interpretation of braking, which is essentially putting your nose on
the windscreen and your feet through the floor, SENSATIONAL!!!

The new: Maserati GranTurismo S Automatic
Maserati has blended the effortless luxury and refinement of the Maserati
GranTurismo with the hard-edged performance and aggression of the 4.7 litre
GranTurismo S to produce the Maserati GranTurismo S Automatic.
Fitted with the same 323 kW 4.7 litre engine as the range topping Maserati
GranTurismo S, the new automatic variant shares the same 295 kmh top speed
and is only fractionally slower to 100 kmh, despite replacing the MC Supershift
sequential manual gearbox with an automatic gearbox. This feat of performance
engineering has been achieved with a software package developed specifically
for the characteristics of Maserati’s V8 engine, minimising power transmission loss
and enabling gears to be held right to the 7200 rpm red line, something no other
automatic in the world can match.
The Maserati GranTurismo S Automatic is built like an athlete. Although it
maintains the purity of the original car’s lines, something echoed throughout the
GranTurismo range, the Maserati coupé immediately catches the eye courtesy of
the subtle aesthetic modifications it has undergone. On the GranTurismo S
Automatic, new side skirts bring a more dynamic look, rendering Pininfarina’s
work of art even more intriguing.
The new 20” wheel rims sport a fresh design with spokes that mirror the famous
Trident logo, resulting in an elegant look.
The GranTurismo S Automatic continues the unique style of the GranTurismo
range. A chrome Trident logo is suspended in the centre of the grille, one that
features concave vertical slats. The front headlights are an aggressive addition to
the protective front bumper, a stylistic element that has long distinguished
Maserati coupés. In the space between the headlights is the traditional long, low
bonnet. The bonnet’s classic ‘V’ shape is a feature that is echoed throughout the
car. The three chrome-profiled air inlets set behind the front wheels lend the
GranTurismo an even more vibrant feel. The car’s lines were designed to lead the
eye fluidly over its curves, from the robust front end to the sweeping rear.
Moving round the back of the GranTurismo, the oval version of the Maserati
logo (known as ‘Saetta’) stands out. Alongside it is the rear light cluster, each with
96 LEDs, in a daring triangle. The wide aerodynamic diffusers sit under the
bumper framing the exhaust pipes.
The GranTurismo S Automatic’s cabin reveals the true identity of the new
Maserati coupé. Poltrona Frau® supply the supple leather found inside. This
superbly finished leather is the result of months of attentive treatment. The sports
profile front seats are roomy and can be controlled electronically while the ‘Easy
Entry’ system shifts both seats to make getting in hassle free. All in all it is a
spacious and sophisticated place to be.
