Strawberry triflesServes 4

2 tablespoons apple juice1 teaspoon vanilla extract2 x 250g punnets strawberries, hulled, sliced12 sponge finger biscuits, thickly sliced crossways2/3 cup low-fat custard

Place apple juice, vanilla extract and half of the strawberries in a food processor or blender. Process until smooth.

Place biscuits in a bowl. Working quickly, pour strawberry mixture over biscuits and stir until just coated.

Spoon two heaped tablespoons of the biscuit mixture into the base of four 1-cup capacity glasses. Top each with a tablespoon of custard. Arrange 3 to 4 strawberry slices over custard. Repeat these layers twice.

Cover and refrigerate for 30 minutes. Serve with any additional fruit and or fresh whipped cream.
