To make the filling:Peelandroughlychoptheonion,leekandgarlic.Heatalargepanonamediumheat,addagoodlugofoliveoilandaddtheonion,leekandgarlic.

Cookgentlywiththelidonforafewminutes,stirringoccasionallyoruntilsoftened.Nextaddthelentilsandgentlybrownthemixtureforafewmoreminutes.

Oncethemixtureissoft,addthechoppedtomatoesandbringtotheboil,thenreducetoalowheatandsimmergentlyfor30minutesoruntilthickanddelicious.

Addthethymeandparsley,seasonwithsaltandpepperandremovefromtheheat.
