After decades of focussing our attention on dresses, flowers and
rings, our stomachs are rumbling for the cakes to become the centre
of attention. It is difficult to think of a joyous event that does not involve
the consumption of a celebratory food so it is no wonder why the cake
is an essential ingredient to a delicious wedding. The international
wedding cake industry is an ever-expanding and innovative contributor
to the world of weddings and their newest designs are nothing short
of masterpieces. Traditional wedding cakes are rapidly being replaced
by one-of-a-kind culinary works of art coming from all corners of the
globe. These internationally trendy cakes challenge us to rid ourselves
of routine and slide into the styles that are in this year. When it comes to
couture cakes, its not just what’s inside that counts, Nikki Randlesome
Scott of Geraldine’s Creative Cutters gives up the secret ingredient to
these designer desserts.
TASTY TRENDSETTERSRandlesome Scott notes that there is not one style in particular that is
select to this year, rather the brides that are happiest with their celebratory
sweets are ones that follow their instincts and match the cake to their
personality. This year’s melting pot of stylistic trends include elegantly
modern and retro art deco as well as the more flamboyantly fun, colourful
and funky cakes. While not as many brides are opting for classically
traditional cakes, their adaptability and poise ensure that they will always
be on the menu.
ALL THE TRIMMINGSGone are the days when decorations were limited to the conventional
newlyweds atop of their cake. This year’s most popular cake accessories
are jewels and pearls, with flowers, ribbons and lace still being very
sought-after. With rapidly developing culinary techniques allowing the
finishing touches to be made entirely of sugar, cake designers have made
it possible to have a completely edible cake – you can literally have your
(accessorised) cake and eat it too! These endless options for cake décor
make it possible for brides to subtly extend the theme of the wedding into
the kitchen and onto the plates. This means that the personal touches
and embellishments on their gowns or invitations are able to inspire the
design of the cake, be it jewels, swirls or pearls.
SHAPE SHIFTERSJust as gowns are selected for the way they flatter the bride’s shape,
the shape of the cake can also make or break the desired look. It is
important to consider the cake’s form in relation to the theme of the rest
of the wedding. Brides are now getting braver with the shapes of their
cakes with designers only too happy to follow suit. Innovative shapes like
hexagons and ovals are in demand as are even more eccentric styles.

sporadically stacked tiers and even paisley shaped cakes make the cut,
proving that while not many people can pull off this whimsical design,
sugar most certainly can!
