The company operates as Le Bistrot Pierre Limited and is
privately owned by 4 individuals. The executive shareholding
directors, Robert Beacham and John Whitehead started the
business together in July 1994 with the opening of their first
restaurant in Nottingham.
Between 1998 and 2005 they also developed and operated The Lace Market Hotel, which included the Cock & Hoop Pub and Merchants Restaurant in Nottingham City centre.
Since then they have expanded the business organically, mainly in the Midlands and the North and have developed a culture and infrastructure poised for further successful growth.
Introduction
Bistrot Pierre embraces French culture and their love of good food. We offer great value authentic bistrot dishes freshly made by our chefs every day in a relaxed yet vibrant atmosphere. Each individual bistrot sits charmingly within each town or city, providing a ‘local feel’ that entices new customers and keeps old ones coming back.
Le Bistrot Pierre currently operates out of 12 centres;
Nottingham (1994), Derby (1996), Leicester (2003), Leamington Spa (2006),
Stratford-upon-Avon (2008), Sheffield (2009), Stockton Heath (2010),
Harrogate (2010), Ilkley (2011), Plymouth (2013) and Cardiff (2013),
Torquay (2014).
In addition to these restaurant operations
the Stratford site accommodates ‘The Bear Free House & Kitchen’
and the Ilkley site includes ‘The Crescent Inn’, a pub with 11 bedrooms.
The first restaurants in Nottingham and Derby opened as Pierre Victoire franchises. The Franchisor went into receivership in 1998 making these operations independent by default. The name and brand ‘Pierre Victoire’ (the old franchise name) was changed in 2005 to ‘Le Bistrot Pierre.’
We are working with Gillespie Yunnie architects on all current opening and refurbishment projects. Our approach is to work with the fabric of the building and the interior schemes that are developed benefit the individual features of each building. From Nottingham’s style and opulence housed in the old bank building; to the rustic, maritime interiors of Torquay to reflect the seaside connection.
A well-maintained and on brand looking estate is key to the business model and regular refurbishments are planned and undertaken.

The company’s current strategy is one of controlled expansion
through organic growth. The business operates at a profit and is
cash generative.
Funding for the new sites will be from generated cash supplemented by short-term variable bank facilities, (partly government guaranteed) which are in place with the company’s bank (NatWest).
70 sites have already been identified and we confidently believe this number can exceed 100. There is a focus on seeking new, less saturated markets (Torquay, Newport) over areas densely populated with branded restaurants (e.g York).
Being the first in a new territory has a definite benefit.

Capturing French culture and the love of food, our bistrot offers great
value provincial cooking made with authentic ingredients.
Freshly prepared French bistrot food such as honey-glazed goat’s cheese brioche;
steak-frites; bœuf braisé and tarte à l’oignon are all on the menu at Bistrot Pierre, which offers a two course lunch for £10.95, three
courses £12.95. We also have an early evening pre theatre dinner menu £14.95
for two courses and an extensive A la Carte menu available every evening.
Our Bistrot also features a stylish bar serving a great range of cocktails, local real ales on draught and 35 wines by the glass.

Our steaks are from prime pasture-fed Scottish beef and are matured for at least 21 days. They’re served with dressed leaves, pommes frites and a choice of red wine and shallot butter or green peppercorn and brandy sauce.

Last month we welcomed a new traditional French dish onto our menu in two of our bistrots, La Tarte Flambée!
Discovered on a recent trip to the Alsace, this round French-style flatbread is light, crispy and delicious and can be enjoyed with one of five different toppings.
We’ve had such a great response to them in Stratford and Torquay, that we are introducing them into Leicester and Stockton Heath during October.
