PREFACE
UNESCO in cooperation with the International Union of Nutritional Sciences(IUNS) has compiled this LATIN AMERICA AND CARIBBEAN COMPENDIUM OFHIGHER EDUCATION PROGRAMMES IN FAMILY & HOME ECONOMICS, NUTRI-TION, FOOD SCIENCE AND TECHNOLOGY AND HEALTH SCIENCES. 1 The purposeof this compendium is to offer Latin American and Caribbean Member States ofUNESCO information on available degree programmes in these areas in orderto assist interested students in their search for higher education and to provideinstitutions themselves with facts and information on similar training pro-grammes offered elsewhere in the region. Three other compendiums of thesame nature are available for Africa, Asia and the Pacific and the Arab States.
UNESCO receives innumerable requests from students for guidance ontraining in fields concerned with the home and family environment, food andnutr i t ion and health. This compendium wil l be expanded as necessaryafter its f i rst d i ffusion based on comments and information provided by rea-ders. In any future edition, we hope to provide qualitative information on thecontent and substance of training programmes in order to describe how highereducation programmes are responding to prevailing human developmentc o n c e r n s .
The information reported on each institution has been obtained from publishedinternational sources and, wherever possible, from the institution itself. The following refe-rences were consulted:

While compiling this compendium, we communicated several times witheach institution and we are especially pleased with the cooperative spirit of

exchange expressed by those contacted. Although we have gathered more information onsome institutions and less on others, for consistency reasons, we have standardized thepresentation of information.
The institution name appears on the top of each page and at the bottom right sideof each page there is an indication of when the data on that institution was last updated. Thefields of study offered are indicated according to the way that they are designated by theparticular institution. Here, we have tried to identity institutions in each country with fieldsof study most closely related to home economics, food and nutrition and health sciences.2 Student enrolment applies to the particular Centre, Faculty or Department as specified inthe institution entry at the top of each page.
Information on student enrolment and school fees were obtained from the refe-rences cited above or the institution itself (in this case, the figures apply to the year in whichthe information was updated by the institution). Invariably, with each new academic yearthere will be fluctuations. This information should be regarded as indicative.
An important number of relevant institutions are found in Brazil, Columbia, Mexico,Argentina and Chile and many of these institutions offer post-graduate degree programmes.The University of the West Indies (Mona Campus) serves 14 countries in the Caribbean andLatin America.
This compendium has been a collaborative project with the International Union ofNutritional Sciences and UNESCO. Dr. Rajammal P. Devadas, Vice Chancellor of theAvinashilingam Institute for Home Science and Higher Education for Women (DeemedUniversity), Coimbatore, India, serves as Chairperson of the IUNS Committee associatedwith this effort. UNESCO as part of its Individual Internship Programme has offered nume-rous young professionals the opportunity to contribute to this information exchange project.3 Ms. Wendy Heilman started the initial research on the four compendiums. Ms. VanessaHoltzer and Ms. Ana Michel provided further assistance with the data collection and pro-cessing. Ms. Janelle Miller assisted with finalization of all four compendiums. 4

The programme offers young professionals the opportunity to workunder supervision within the Organization in areas directly related to education, science, the social andhuman sciences, culture and communication. Interns volunteer up to three months of their time to the pro-gramme in exchange for the experience gained.
