h Paddy’s Palms has an excellent menu for all the family and is located just up the hill from White Sand Beach.The menu offers a wealth of classic pub dishes such as Irish stew, breakfasts, fish and chips and pies. Established for over 5 Years the Jungle Queen Live Music bar has built up a serious reputation for quality international bands, solo performers and for hosting many other special events. Located in ‘Walking Street’ at North White Sands Beach they can sometimes be hard to find, however you can look to the sky for their powerful spotlight to guide you! The Beach Club is a waterfront restaurant beside Klong Son Beach in the exclusive Siam Royal View development.The restaurant is housed in an airy and tastefully decorated modern building beside a horizon swimming pool that diners are welcome to use. It is a great location for an afternoon meal accompanied by a swim and some beachside relaxation. Alternatively it is an atmospheric spot to watch the sun set or book in advance and come down for a delicious evening meal.Given the location prices are very reasonable and there are a large number of mouth-watering menu options. Classic Thai dishes are served as well as some interesting western selections such as Hungarian Goulash and a variety of pasta and risotto dishes. Fresh seafood is also a good choice and the Beach Club is one of very few places on the island that offer Swiss and even Thai Fondues.

Yellow oil is a traditional Thai medicine with Chi-nese origins. It is made from a number medicinal plants, including camphor and different tubers of the ginger family.

Different versions of yellow oil are made and sold all over south east Asia and China. The families who manufacture the oil keep their recipes a closely guarded secret and most Thai people will be able to tell you about one that they consider to be superior to all the others.

So what is this stuff and what does it do? Generally yellow oil comes in small bottles, often labelled with a pleasingly solemn image of the creator. People use it for sev-eral purposes. Firstly it is rubbed into the skin to relieve the effects of cuts, burns and mosquito and other insect bites.A second use of yellow oil is as a kind of deep heat treatment. It is massaged into the skin to help with with muscle aches and pains, cramps, aching joints and arthritis.A further use is to treat the effects of motion sickness by opening the bottle and sniffing the oil.It should be stressed that yellow oil is strong stuff and is recommended for external use only. It should never be consumed or placed in contact with the eyes, nose, ears or mouth.

As you would imagine Koh Chang’s Trat province has its own celebrated brand of yellow oil, called Somtawin Ang-Ki Oil.

Mae Ang Ki Somthawin learned the secrets of making yellow oil from her family, of Thai and Chinese origins, and she began selling her home-made yellow oil from door to door in her hometown of Trat. Since Trat is one of the rainiest and most fertile places in Thailand, the plants used in the production of Ang-Ki oil are apparently of

particularly good quality and this makes for a better final product.

The oil has been the recipient of a number of prizes and awards.

Mae Ang Ki has two shops in Trat, and dozens of shops sell her oil all around Thailand. The oil is still made in a small factory at the family’s residence in Nong Samet, Trat.

Chefs and cooks are forever changing styles and bringing in new ideas and ingredients from different places. What we regard as distinctive international cuisines are really already a mixture of all the international influences that have affected a particular country. Think of something like the potato, which is so fundamental to European cuisines. If you’re English then imagine bangers without mash? Or try telling a Belgian he can’t have any frites with his moules. But remember that the potato was only introduced from South America four centuries ago. And just try to imagine how the chilli loving Thais survived before the chilli was introduced from the new world at around the same time. The point we’re trying to make is that many of the dishes that we regard as regional or national classics are really already a mixture of different influences from around the world. All of which is a fairly long-winded way of introducing the idea of making simple and tasty fusion foods. Thai food is great. Other food is great. But there isn’t any reason at all why you shouldn’t mix things up a bit and take things you like from Thai cuisine and mix, match and combine them with anything else that takes your fancy. Below we’ll run thorugh some great and easy ways to mix Thai and international recipes and ingredients. But please don’t just follow our suggestions – make up your own combinations.

Change the StapleMost world cuisines have evolved as a way to make the daily task of eating the cheapest and most plentiful local crop to hand a more pleasant experience. In Thailand, of course, this is rice. To give you an idea of the centrality of rice to Thai food consider that the Thai words for cooking are Tam Kap Kao, which literally means “to make with rice”.But with the wide availability of all kinds of other carbohydrates we are free to experiment with pairing up Thai dishes with a range of other international staples. Below are some that work very well together:

Moist Thai curries such as Gang Panang, Green Curry or the Southern Thai classic Massaman are terrific if served with mashed potato instead of rice.

Pasta is great when served with some of the drier Thai dishes, particularly with stir-fried dishes like the classic hot basil dish Pat Gapow, or Pat Kee Mao or Chicken with Cashew Nuts.

And the list goes on; Gnocci, those delicious little Italian potato dumplings are also great with Thai dishes, Pizza is excellent when topped Pat Gapow minced meat, hot basil and chilli and of course chips go well with Northern Thai Laap or for that matter with almost any Thai dish that you can think of.

Substitute IngredientsThere are plenty of ingredients that aren’t common to Thailand that actually combine very well with Thai dishes.The spicy Thai salads called yam are healthy and delicious. Foreign ingredients like salami or chorizo sausage fit in very well. So does tinned tuna and Mediterranean ingredients like olives and capers. Similarly you can add all kinds of things like bacon or ham or vegetables such as spinach, leeks or even artichoke to Thai fried rice with good effect.

MarinateCombinations of Thai ingredients make great marinades for all kinds of meat, fish and barbeque dishes. Simply tenderise a pork chop and leave it overnight in a marinade of lime, honey, lemon grass, chilli and fish sauce (you can of course add pretty much any other Thai ingredients that you like!) and grill to bring out a great mixture of flavours. Another good example is the marinated chicken breast recipe on the next page.

So whilst Thai food purists might roll their eyes at some of these ideas it’s your kitchen and you can do as you please so go on ahead and experiment with some fusion cooking.

This recipe is an example of mixing Thai and international ingredients to create something rather tasty. The juicy marinated chicken breast is sweet and salty and combines very well with the sharpness of the tomato and the tanginess and sweetness of the tamarind in the sauce. You can of course add chilli to the sauce if you like a Thai spiciness to the dish. It is worth keeping a jar of the sauce in the fridge since you’ll probably like it so much you will find yourselves using it with all kinds of other dishes.

In the recipe below we use turmeric powder. It is well worth using the sometimes hard-to-find turmeric root that is common in Thailand if you can locate some. Just peel and finely chop and add to the sauce - then try to wash the yellow from your hands.

Ingredients - � servingschicken breasts 4 oyster sauce 4 tablespoonsMaggi Sauce 4 teaspoonsSauce vegetable oil 2 tablespoonsonion 1 garlic 3 clovescumin - ground 1 tablespoonturmeric 1 teaspoontomatoes 1 tin or 500 gms freshtamarind pulp 5 tablespoonssugar 1 teaspoonsalt 1 teaspoonblack pepper to season

Method �) - The first step is to marinate the chicken breasts. to do this simply place them in a closed container with the oyster sauce and Maggi sauce and shake well. If you can’t find Maggi sauce then you can substitute soy sauce or mushroom soy sauce to good effect. Then place in the fridge for at least three hours - more time will improve the flavour so if you are organised enough to do this the night before then go for it.

2) - Now start to prepare the sauce. First heat the oil in a pan and fry the finely chopped onions and garlic for a few minutes until they turn clear and just begin to brown. Then add the cumin and turmeric and fry for a couple more minutes.

3) - Next add the finely chopped tomatoes, tamarind pulp, sugar, salt and pepper and cook for another ten minutes on a medium heat, stirring occasionally.

�) - Allow the sauce to cool for a few minutes and then blend to a paste in a food processor (you don’t have to since it doesn’t do anything to the taste but it improves the texture).

5) - Now cook the chicken breasts by frying in a tablespoon of oil. Fry on a fairly high heat for 2-3 minutes each side until lightly browned and cooked through. The idea is to cook until you are confident that the centre of the chicken is cooked through and then immediately removing from the heat to keep the breasts juicy.

�) - You can serve the chicken with chipped whole potatoes and salad as pictured, but since this is a fusion dish there are plenty of other options. Mashed potatoes would be another good accompaniment, as would potato salad, buttered noodles, risotto... - just pick something that you like.
