Last month we took a few mini breaks from Sydney in the Hunter Valley This isnrsquot a place I have spent much time in as much as I love wine I find the whole wine tasting a little intimidating and donrsquot know where to start We stayed at a great resort where we could have breakfast and dinner so we didnrsquot have to venture out if we didnrsquot want to Having said that we decided one day to take the electric bikes and explore the lsquowine trailrsquo thinking we would stop and do some wine tasting and grab a bite for lunch I have learned when travelling that things often donrsquot go to plan Our little cycle turned into a 33km trip when the road back to the resort was flooded and we had to negotiate the freeway to get back But part of the adventure was ending up off the tourist route in a little mining town where we had a delicious fresh sandwich and coffee from the local Vietnamese bakery
Thatrsquos the beauty of regional Australia little gems off the beaten track So let me encourage you all to head out of town and explore our own backyard get away from the tourist places and find those treasures
On another note the resort was fabulous when we told them about our lack of wine tasting on our outing and organised tastings at two wineries we wouldnrsquot have known to visit

folks a true Singapore Sling needs to contain the following gin cherry brandy Cointreau grenadine pineapple juice fresh lime juice a dash of Angostura bitters and garnished with a wedge of pineapple There I said it I have drawn the proverbial line in the sand
There are admittedly many funky new variations of the old classic which was pioneered at the Raffles Hotel Singapore in 1915 but this next flurry of advice is designed for those seeking to sample the best version of the real McCoy not some bizarre hipster variant served up inside a bouquet of bitter kale leaves
So if you want to drink the best Singapore Sling it stands to reason that Singapore is where you will find the best version of this glorious libation One of the best places to go is where it all began at the Raffles Hotel There you can pull up a seat at the Long Bar and try the cocktail made from the very best
ingredients including a range of premium gins and custom-made grenadine syrup A warning though trying the real thing is not the cheapest option with each glass likely to cost you around A$30-35
Another great place to grab a Singapore Sling is the Smoke and Mirrors bar located at the top of the National Gallery overlooking the Marina Bay Here the cocktail has a slightly different take even the name (Robbery at the Museum) with fermented pineapple tepache replacing the juice and Maraschino liqueur subbing in for the cherry brandy
For a more homely vibe check out the Tess Bar amp Kitchen located only around the corner from the Raffles Hotel or for something a little bit different the Court Martial Bar also serves up a mean Singapore Sling complete with an austere military motif throughout Clink cheers

Virgin 20 unveiled
Virgin Australia is set to emerge from voluntary administration with a firm focus on its core strengths ldquore-establishing itself as an iconic Australian airlinerdquo
Thatrsquos the key promise of plans revealed by CEO Paul Scurrah last week with the airline to reduce staff and simplify its fleet under its new Bain Capital ownership
The airline will cease operating its ultra low-cost Tigerair Australia offshoot and long-haul international flights are off the agenda at this stage - although Scurrah does envisage the eventual return of operations to Japan and the USA
ldquoDemand for domestic and short-haul international travel is likely to take at least three years to return to pre-COVID-19 levels with the real chance it could be longer which means as a business we must make changes to ensure the Virgin Australia Group is successful in this new worldrdquo Scurrah said
Cruise pause extended
The resumption of global cruising is a little further off after Cruise Lines International Association last week announced it was extending the voluntary pause of US operations by its members until 31 October
However some green
shoots of recovery are beginning to appear with authorities in Europe giving approval over the weekend for a limited restart
MSC Cruises Costa Cruises and Aida Cruises have all confirmed recommencements of cruising in the Mediterranean under strict protocols in most cases only carrying European guests
The planned resumptions come despite cases of COVID-19 being detected during the voyages of some early adopters including Hurtigruten SeaDream Paul Gauguin and Uncruise Adventures
The global cruise industry says itrsquos learning and adapting from these cases with the ultimate aim of making cruising safe for all

Last month we took a few mini breaks from Sydney in the Hunter Valley This isnrsquot a place I have spent much time in as much as I love wine I find the whole wine tasting a little intimidating and donrsquot know where to start We stayed at a great resort where we could have breakfast and dinner so we didnrsquot have to venture out if we didnrsquot want to Having said that we decided one day to take the electric bikes and explore the lsquowine trailrsquo thinking we would stop and do some wine tasting and grab a bite for lunch I have learned when travelling that things often donrsquot go to plan Our little cycle turned into a 33km trip when the road back to the resort was flooded and we had to negotiate the freeway to get back But part of the adventure was ending up off the tourist route in a little mining town where we had a delicious fresh sandwich and coffee from the local Vietnamese bakery
Thatrsquos the beauty of regional Australia little gems off the beaten track So let me encourage you all to head out of town and explore our own backyard get away from the tourist places and find those treasures
On another note the resort was fabulous when we told them about our lack of wine tasting on our outing and organised tastings at two wineries we wouldnrsquot have known to visit

So if you want to drink the best Singapore Sling it stands to reason that Singapore is where you will find the best version of this glorious libation One of the best places to go is where it all began at the Raffles Hotel There you can pull up a seat at the Long Bar and try the cocktail made from the very best
ingredients including a range of premium gins and custom-made grenadine syrup A warning though trying the real thing is not the cheapest option with each glass likely to cost you around A$30-35
Another great place to grab a Singapore Sling is the Smoke and Mirrors bar located at the top of the National Gallery overlooking the Marina Bay Here the cocktail has a slightly different take even the name (Robbery at the Museum) with fermented pineapple tepache replacing the juice and Maraschino liqueur subbing in for the cherry brandy
For a more homely vibe check out the Tess Bar amp Kitchen located only around the corner from the Raffles Hotel or for something a little bit different the Court Martial Bar also serves up a mean Singapore Sling complete with an austere military motif throughout Clink cheers

Virgin 20 unveiled
Virgin Australia is set to emerge from voluntary administration with a firm focus on its core strengths ldquore-establishing itself as an iconic Australian airlinerdquo
Thatrsquos the key promise of plans revealed by CEO Paul Scurrah last week with the airline to reduce staff and simplify its fleet under its new Bain Capital ownership
The airline will cease operating its ultra low-cost Tigerair Australia offshoot and long-haul international flights are off the agenda at this stage - although Scurrah does envisage the eventual return of operations to Japan and the USA
ldquoDemand for domestic and short-haul international travel is likely to take at least three years to return to pre-COVID-19 levels with the real chance it could be longer which means as a business we must make changes to ensure the Virgin Australia Group is successful in this new worldrdquo Scurrah said
Cruise pause extended
The resumption of global cruising is a little further off after Cruise Lines International Association last week announced it was extending the voluntary pause of US operations by its members until 31 October
However some green
shoots of recovery are beginning to appear with authorities in Europe giving approval over the weekend for a limited restart
MSC Cruises Costa Cruises and Aida Cruises have all confirmed recommencements of cruising in the Mediterranean under strict protocols in most cases only carrying European guests
The planned resumptions come despite cases of COVID-19 being detected during the voyages of some early adopters including Hurtigruten SeaDream Paul Gauguin and Uncruise Adventures
The global cruise industry says itrsquos learning and adapting from these cases with the ultimate aim of making cruising safe for all
