* Drop 4 medium sized

tomatoes into boiling

water. Remove from heat

for 4 minutes. Run under

cold water.

* Peel, squeeze to remove

seeds and juices and chop

* Heat 6 T. olive oil over

medium heat and add ¼ c.

finely chopped onion. Cook

until transparent

Stir In:

* Chopped tomatoes

* ½ c. dry white wine

* 1 T. chopped parsley

* 2 T. fresh oregano (less if

dried)

* 1 tsp. salt

* Ground pepper

Bring to a simmer and

cook uncovered until it

thickens to a puree

Add:

* 1 ½ lb. prawns (peeled)
