  • The fruit matures from December to February, being a pear shaped red / pink berry, growing to 10-15 mm long, covering a single seed, 4 mm in diameter. Some selected and clonally propagated varieties can have a large percentage of seedless fruit.

    Lemon myrtle leaves are milled for citrus flavour and used in sweet and savoury products. The milled leaves are used to impart a distinctively clean and crisp citrus flavour in teas, drinks, syrups, glazes, cakes, biscuits, dressings, mayonnaises, sauces and icecreams.Lemon myrtle essential oil is used as a flavouring ingredient and an ingredient in cosmetics.

    The fruit are fat finger sized & shaped. They range in colour from yellow through to dark green. The pulp of the green finger lime ranges from translucent white through yellow to very pale green. It has the texture and appearance of caviar.

    Bush tomatoes have a distinctive raisin / caramel introduction with a strong spicy aftertaste, making it ideal for use when chopped into curries, salsas and as a crust on meat. Ground, it is an easy form of this spice, to sprinkle on baked vegetables, into sauces and bread mixes.

    It grows naturally in inland woodlands and brigalow scrubs in a range of soil types and can withstand extreme temperature conditions from 45 C to 12 C.Tree sizes vary from a slender and spiny tree up to 12 m height to a small multistemmed dense tree of 2-4 m . Blue-grey coloured leaves are slender and upward facing, 5-8mm across.

    Kakadu plum gained world wide recognition when it was discovered that it is a fruit with the highest recorded levels of natural Vitamin C content in the world, measuring up to 7000 mg/100g DW, which is 100 times the Vitamin C content in oranges.
