Jersey Turbot ToursJersey Turbot is a family-run business started in 2000 by former deep sea fisherman Dave Cowburn. The farm is uniquely located in a former World War II German gun emplacement and bunker at St Catherine’s in the east of the Island. It houses about 6,500 turbot at any one time, ranging from tiny 50p-sized fish to four-year-old turbot weighing several pounds. Tours are offered daily throughout the festival:

Genuine Jersey Afternoon Tea at Grand Jersey Enjoy a traditional afternoon tea with a ‘Genuine Jersey’ twist at the Grand Jersey. Longitude and Latitude Menu – Grand JerseyLongitude and Latitude of Jersey – a 3 course menu in Tassili prepared by Michelin star chef Richard Allen and his team. Devised entirely from ingredients originating from Jersey including the stocks, sauces, salt and sweetening which is no mean feat! Rock salt from the Jersey shoreline, locally produced wine and Black Butter from La Mare Wine Estate, seafood and shellfish line caught in the waters around Jersey and from the day boats around the coastline, all the meat from Jersey farms including Darren Quenault at Classic Herd. Locally produced honey will be used to sweeten the dessert as there is no sugar produced on the Island.

Salty Dog Bar & Bistro

Dining at the Salty Dog Bar & Bistro in St Aubin is an experience that stimulates all the senses, so this year they are presenting a stunning “Menu du Terroir” featuring the very best food Jersey has to offer at this time of year.

Chef and owner Damon Duffy excels in this field of cuisine and has mastered the subtle skills in reproducing beautiful classic dishes giving them a contemporary twist, retaining authentic tastes but with a kick. Expect the Salty Dog “Menu du Terroir” to be BIG on flavour and BIG on spice with Genuine Jersey produce in abundance sourced from local suppliers including Jersey Oyster, Faulkner Fisheries, Hamptonne Farm, Fungi Delecti and Classic Herd.

Not only will your sense of taste and smell be indulged during this week, but also on the menu will be the very excellent music from local Jersey French Band “The Badlabueques” whose funky folk pop tunes will entertain and certainly get your toes a tapping.

Jersey Ormer Farm TourExplore one of Jersey’s most innovative ‘farms’! The Jersey Ormer Farm, housed in an old quarry near Gorey, breeds the local delicacy – the Jersey Ormer – for the local and export markets.

The ormer is considered to be the most valuable seafood on the planet and is very difficult to farm. Wild ormers thrive far down the inter-tidal zone and can only be collected

around low-water during specified spring tides in the autumn, winter and spring so the farm meets a culinary demand and will provide “Genuine Jersey” fresh ormers which are truly delicious. The tour will include a visit to the facility and information on the farm’s breeding programmes. There will also be a chance to taste this Jersey delicacy!

‘Behind The Scenes Tour’, Wine & Chocolate Tasting At La Mare Wine Estate, St Mary

La Mare Wine Estate is offering a ‘behind the scenes’ tour of the Estate. Visitors will hear about the history of the Estate before meeting La Mare’s winemaker, Daniel De Carteret, who will guide you through his award winning wines and liqueurs including tastings and then La Mare’s chocolatier, Darren, to hear about the history of chocolate making and taste La Mare’s delicious handcrafted truffles.

Wild Vegetables of the Ocean – A Morning Foray and Early Evening Dinner at St Aubin

Green, brown, delicate, bold and sometimes smelly – seaweeds remain often unnoticed or are even disregarded as useless. They are, however, an essential ingredient in sushi, miso soup, jellies, sweets or squirty cream and Jersey has a long tradition in gathering seaweeds.

Time to discover their values on a gentle coastal walk at Green Island and taste a themed menu at Bracewell’s in St Aubin. For the Food Festival, Daniel, the chef, has created a selection of fine dishes utilising these unique local marine vegetables.

Food and Wine Pairing Dinner: Harmony and Balance – Grand Jersey

A six course degustation dinner with winesThere is much hype and controversy related to food and wine pairing that is, to a certain extent, the blame of many wine writers and sommeliers over the years. Learning what to match with certain foods has been a learning experience for many wine lovers who were handcuffed by the classic ‘rules’ of the colour coding; red wines with meat, white wines with fish and poultry.

While there is a certain inherent value to these time honoured values, they leave little to the imagination and discourage the notion of mixing and matching. Once this became apparent many enthusiasts took the notion to the extremes, believing that they could serve whichever wines they wanted to whatever dishes they desired. This extreme method encouraged an experimental spirit, but led to more misses than hits, and when a memorable match occurred, the diner did not know why.

In food and wine pairing, there are many processes involved in understanding the attraction both food and wines have together. We look at two methods; ‘Harmony’ is basically looking for similar characters in both, whilst ‘Balance’ looks at the notion of ‘opposites attract’. Furthermore we break down the ‘keys’ to understanding the processes involved.

Royal Rewards – The Genuine Jersey Royal Potato Growing Competition Awards CeremonyJoin the finalists at the award ceremony for this year’s Genuine Jersey Royal Growing Competition. Fun-filled Foodie Films at Grand Jersey

Enigmatic candy manufacturer Willy Wonka (Gene Wilder) stages a contest by hiding five golden tickets in five of his scrumptious candy bars. Whoever comes up with these tickets will win a free tour of the Wonka factory, as well as a lifetime supply of candy.

‘A Taste of the Sea’ Georgian Event at 16 New StreetDuring the Food Festival, the National Trust for Jersey will be enticing visitors to 16 New Street to join in a celebration of the Jersey Oyster; which was first propagated on the island’s east coast in 1810.

The Cook/Housekeeper will explain why the oyster was such a popular addition to Georgian recipes and give you the opportunity to taste them.

Atlantic Producer Tour and Lunch – Jersey Ormer FarmMeet at The Atlantic Hotel at 10.00 am for introductions with Mark Jordan, Michelin starred Executive Head Chef after which the tour will transfer to the Jersey Ormer Farm where you will meet with Gary Whipp and his team for a behind the scenes tour.

Known as the ‘Truffle of the Sea’ the Jersey ormer is considered a rare delicacy, not only in Jersey but throughout the world. Jersey’s one and only ormer farm is located at Anne Port which is the furthest point north that ormers can grow naturally.

Coastal ForageThis coastal forage along a stretch of St Ouen’s beach taking in the tide and shore line will identify edible plants, seaweeds and shellfish as we go. We will also track down some coastal plants. Cooking on a beach fire, we will then prepare the foraged foods and learn about any healthy properties they may hold. Duration of walk approx 2 ½ hours, please dress with an eye on the weather and bring along any food and drink you may need.
