When I originally sat down to write my letter
introducing this magazine my mind began to
drift onto thoughts regarding my family. I’ve
been married for 11 years and have two kids.
Like most folks, my wife and I are very much
overworked and underpaid. The concept
of this magazine was conceived while on
vacation last summer. The only time in our
lives that we truly relax and enjoy ourselves is
when we take our annual trip to the beach. I
had never gone to the beach prior to getting
married but my wife has gone every year
since she was a child. The first time I went to
the beach it changed my life forever.
During my first visit to the beach, I spent
several hours just sitting on the beach
watching the waves. I was immediately
hooked and made a promise that we would
return to a beach at least once every year.
Hard work and sacrifice has made this week
long trip possible for 6 straight years and has
made my family stronger in the process.
The journey into creating this magazine
began by pondering about what could help
my wife and I cope with the many trials of
parenthood during the other 51 weeks of the
year upon returning home from vacation.
We hope the launch of this magazine is the
answer to that question.

When I originally sat down to write my letter
introducing this magazine my mind began to
drift onto thoughts regarding my family. I’ve
been married for 11 years and have two kids.
Like most folks, my wife and I are very much
overworked and underpaid. The concept
of this magazine was conceived while on
vacation last summer. The only time in our
lives that we truly relax and enjoy ourselves is
when we take our annual trip to the beach. I
had never gone to the beach prior to getting
married but my wife has gone every year
since she was a child. The first time I went to
the beach it changed my life forever.
During my first visit to the beach, I spent

watching the waves. I was immediately
hooked and made a promise that we would

Thank You. Sounds easy enough, right?
After all, it’s just two words, two syllables.
For so long, these significant words have
been forgotten, by so many. Maybe, some
humans forget to say, ”thank you” because
they are under the impression that the world
owes them something. Maybe, it is because
they get so caught up in their day that they
don’t live in the moment long enough to
acknowledge when someone is actually
doing something for them.

Well, my husband Brian and I had a true
reality check when we were teaching our two
year old, Chelsea, basic expressions such as
please, hello, excuse me, thank you, etc. Our
frustration grew as she started using all of the
expressions except “Thank You”. We could
not figure out why this was happening. We did
not know if the word “thank” was too hard to
pronounce. However, Brian and I quickly out
ruled that excuse when Chelsea articulated
the word thumb. We were literally stumped
until one day we voiced our frustrations to
Brian’s grandmother. She calmly replied,
“How often does that baby hear the two of
you say, “Thank You”? What a Wake-Up Call!
Children learn from their greatest examples: parents. In order for our kids to say, “Thank You”, they must first hear us continuously use the expression in our homes on a daily basis. When you show appreciation, you can put a smile on the face of someone and make a difference to his or her day.

I met Shirley & George in the spring of

The Pattersons are proud parents ofJamal-Rashad and Rashika Patterson.
I met Shirley & George in the spring of

day2dayCost Effective After School Solutions
The truth about vegetables is some of
them taste awful but our kids need at least
3 servings of veggies per day. Like most
parents, the struggle to get my son to
consume vegetables was becoming a lose/
lose scenario. Just when I was about to
relinquish all hope, the light bulb went off.
In order to get my son to eat more vegetables,
I had to get down right crafty. I began using
blenders, juicers and food processors to
create vegetable purees in order to sneak all
of the good stuff into my child’s daily meals.
The result: a happy and healthy kid.
START AT BREAKFAST
Breakfast is the most important meal of the
day. Kids are unable to perform at their best
without starting the day off right. Therefore,
the first attack should begin at breakfast by
including a vegetable puree AND a fruit and
vegetable juice into your child’s diet. My little
boy absolutely loves turkey bacon, scrambled
egg whites and grits. I use the scrambled eggs
as the conduit for slipping in the first veggie
puree of the day….cauliflower. This veggie is
an excellent source of Vitamin C and helps
kids resist infections. The puree is produced
simply by blending steamed cauliflower
florets and about 3 tablespoons of water
(more or less, depending on your preference
of the puree’s texture and consistency) into
the food processor. The attack begins by 16 | january ‘10

Cauliflower PureePrep: Cut off florets and throw away core.
Cook: Steam florets for about 8 to 10 minutes
Puree: Using a food processor or blender,
blend cauliflower florets and a few teaspoons
of water for about 2 minutes. This process
should produce a smooth, creamy texture.
NOTE: Purees can be incorporated into any meal using almost all vegetables. Choose the vegetable of your choice steam or roast for the normal amount of time and blend in the food processor or blender for a couple of minutes. You can immediately add the puree to your child’s meal or freeze them for another time.
Scrambled Eggs RecipePrep: 4 minutes
Total: 7 minutes
Servings: 2
Ingredients:
2 large eggs
4 large egg whites
¼ cup reduced-fat sour cream
2 tbsp. 2% white milk
¼ cup cauliflower puree
2 tablespoons grated Parmesan
Pinch of salt
1 tsp. Extra Virgin Olive Oil
(used to coat the pan)
Step 1: Using a large bowl, whisk together
the eggs, egg whites, sour cream, milk,
cauliflower puree, Parmesan, and salt.
Step 2: Coat a large nonstick skillet with olive
oil, then set the pan to medium-high heat.
Add the egg mixture, reduce the heat to low
and cook, stirring frequently until the eggs
are scrambled (about 2 to 3 minutes).

adding the blended puree into a killer recipe for scrambled eggs that also incorporates Parmesan
cheese and reduced fat sour cream. (Yummy!) I usually make my son eat his eggs and grits first.
Since he loves the turkey bacon, he receives it last as a good source of protein. I also give him
a fruit & vegetable juice blend. My juicer of choice is the Jack Lalanne’s Power Juicer that I
purchased from Macy’s. The blend consists of celery, apples and carrots. No need to peel and
cut. If the fruits and vegetables are small enough, I can simply add them to the juicer. Voilá! My
son is ready to begin a productive day with a healthy, balanced, and nutritious breakfast.

over! During the Christmas break, you made
a promise to yourself. Remember saying, “I
am going to start working out in January” as
you inhaled the last bite of red velvet cake
that Aunt Lorraine baked. Well, January is
here. It is time for new beginnings. What
better way to start off the New Year than by
honoring the promise you made to yourself
to become healthy in 2010?
Join a Gym
When seeking a workout facility, there are
a few vital elements to consider. The gym
should be convenient to your home (no more
than 15 minutes away). It should also offer
daycare services for the kids making it more
convenient to work out. In addition, the
fitness center should have sturdy and updated
equipment. Take full advantage of the “free
week” that most workout spots propose.
This will allow you to gain the experience
of using the facility before committing to a
contract. If you are not familiar with using the
gym equipment or are not sure of the correct
exercises to do, then working out with a
trainer may be a good option. (Note: Before
starting any workout regimen, it is important
to consult your physician.)
Purchase Good Workout Attire
It is absolutely imperative that you are dressed
appropriately during your workout session.
Your clothing should be comfortable, offer
a free range of movement and be stylish. I
know you are wondering why it is important
to look good when going to the gym. It is
simple. When you look your best, you do
your best. Wearing frumpy attire will only
make you feel unattractive. Therefore, your
desire to work out will decrease. A good pair

whether it is athletically or academically,
we all like to believe that our children will

to give our children a fighting chance. As
college costs are continuing to rise, there
are a few things that we can do to prepare
children and ourselves for the future. Of
course we should continue to motivate and
assist our children with their academics
and athletics and be grateful if any funding
can come from their achievements but
taking the proper steps to start saving for
college early will ease the costs later on. A
529-college savings plan is ideal for parents
and grandparents to contribute towards
the costs of their children’s education. 529
plans are investments that are designed to
grow tax-free as long as all funds are used
for school costs including housing, books,
and tuition. These dollars are invested based
on the age of your child but also have many
other options depending on your investment
needs. In most cases the 529 plan is named
for one beneficiary however can be turned
over to someone else if the beneficiary
does not attend school or does not end up
needing all the funds that have been saved.
529 plans can be started with as little as
25.00 in most cases, although all states have
a different plan to offer they all have many
similarities. These plans have auto draft from
a checking or savings account and some
even offer deposit options directly from
your payroll. If we stop to think about all the
fast food eaten in a month or useless toys
bought to pacify our children, I think that
most of us would agree that a 529 plan is a
much better place to put our thirty or forty
dollars each month.

Going back to college, as an adult can be a
very intimidating and rewarding experience all
rolled into one. For many, earning that “piece
of paper” can make a significant difference
in their professional and/or personal life.
However, the thought of returning to school
can be challenging because of your role as
a parent and spouse. Don’t be discouraged.
There are so many resources to help you on
your journey to becoming a student again.
You may find that the road is smoother, the
second time around.

traditional college setting? No worries. If

are the best option for you. Online courses
are great because they afford you the
opportunity to work towards a degree
without leaving the comforts of your home.
