The House of Machines (THoM) is a new concept bar and cafe located near the Route 343/Higashiyama-Niseko Villgae junction. We caught up with Ian Walker, manager of The House of Machines, to find out more about THoM and his beer recommendations of course!

Tell us a little about The House of Machines (THoM) Niseko.The House of Machines is about live music, craft beer, crafted cocktails, gourmet coffee and custom bikes – and a great space to hang out.

Have you always loved motorbikes?It started when I was 14, in BC (Canada). My family had a cottage in the mountains, and my friends let me have a go on their dirt bikes, and it was an instant attraction. I managed to convince my parents to invest a few hundred bucks in my new found hobby.

How did you get into craft beer?I was introduced to Bristish ales when I was un the UK, back in the late 80s. That was my fi rst exposure to micro breweries, which were far more interesting and tasty than your standard Carlsberg or Heineken. After my move to Sapporo, I was introduced to the annual 2-day craft beer festival “Sapporo Craft Beer Forest” at Bankei Ski Resort. I’ve been there for the past 3 years!

At THoM, you guys have the Japanese craft beer, Baird Beer, on tap. Which is your recommend?The Rising Sun Pale Ale, and Suruga IPA.

What do you like best about Niseko?I have been in Japan for more than 10 years. I had always found myself around the Toya, Rusutsu and Niseko part of Hokkaido during my recreational time, so I decided to make the move to Niseko in 2015. Winter here is obviously skiing and snowboarding, but in the summer, it’s all about motocycles! The Niseko panorama line is just a dream to ride over the summer. Hokkaido is the mecca for bikers.

“Basically it all comes down to using the right amount and various methods of applying salt, and good salt. Use a marinade on thinner cuts and brine the meat for thicker cuts to preserve moisture. A 10% salt solution for a short brine and 3-5% for a longer brine. Add spices or herbs and let the salt do the work. Prep and cook time are also essential.”

“For Korean pork BBQ, we wrap the grilled meat with lettuce, rice and kimchi, or a special sauce. For the sauce, mix chopped leek, ground garlic, soy sauce, salt, big scoop of gochujan, and sake, and stir until smooth. Add sugar and sesame oil to taste.”

EXPLORE NISEKO’S spring activitiesWith the weather cool and sunny, spring is one of the best temperatures in Niseko! While it may be the low season for powder shredding, it doesn’t have to be a low season for you! We chat with Explore Niseko, to fi nd out how Niseko is growing into a year round holiday destination with off-mountain outdoor activities for all ages!

SCOOTERSCruising around on a small 50cc scooter requires no real bike experience, but gives you just as much fun and freedom as riding a motorbike. Visit the sights and cultural hotspots in the Niseko area, stop at a farmers market or just enjoy the fresh country air. Just remember to bring your International Driving Permit.Available from 1st April 2018.

SEGWAYThese machines are designed for the outdoors, with their wide wheels and deep tread. Follow the woodland trails and be at one with nature. Running almost silently, the segway is a great way to experience the hidden wildlife of the forest whilst helping you to feel like ‘Mall Cop’ at the same time. Available all year round.

RAFTINGSuited up in a drysuit to keep you warm, paddle down the River Shiribetsu in a rubber dinghy and feel the water rushing beneath your feet. In April and May, the rivers are at their best - fl owing with melt water fresh from the mountains around Niseko - there are plenty of rapids for you to play in. Make sure you listen to your guide or he might just throw you in the river!Available from 7th April 2018.

BICYCLE HIREIf you are looking to get out and about and in Niseko, why not hire a bicycle for a day. Explore the countryside at your own pace and soak up the fabulous views. Create your own adventure.Available to hire from late April.

STAND UP PADDLE BOARD (SUP)A relatively new water activity which is becoming as popular as surfing. There are so many great places to SUP around Hokkaido, including the beautiful Lake Toya. Get up close and personal with nature and spend a day enjoying the countryside from a different perspective.Available from 1st June 2018.

SNOWMOBILINGWinter may be coming to an end, but there is still plenty of snow around. Power your snowmobile through the winding forest trails and race up the mountainside for a thrilling experience whilst enjoying the fantastic panoramic views which Niseko has to offer.Available until 20th April 2018.

FLYFISHINGAs the countryside changes from white to green, the fi sh become ever more lively and the River Shiribetsu is fi lled with a wide range of freshwater fi sh. Take a guide with you and venture into the wild waters of Hokkaido to have your battle with the wild trout.Available from mid-April 2018

TREE ADVENTURE PARKHiding in the woodlands next to the Grand Hirafu ski area is the largest tree adventure park in Japan! Created with multiple diffi culty levels, a combination of ziplines, tightropes and cargo nets, you are guaranteed to spend an exhilarating day climbing trees.Available all year round.

Favourite thing to do in spring?Sansai picking, there are so many wild edibles that spring up almost as soon as the snow melts.

Best cherry blossoms spots around Niseko?I always head to Hakodate for cherry blossoms. Goryokaku Park and, a few days after, Motomachi Park are simply stunning.

What is a must-eat during the spring season?Tara no me (Japanese Angelica tree) tempura is the king of the wild mountain veggies!

What activity would you recommend for families/children?Rafting in the spring is very fun!

Where would you recommend for photo ops?I would recommend the Shakotan peninsular – the color of the sea there is stunning in any season.

Where is somewhere in the spring you would go off the beaten track for?Probably my favorite off the beaten path location is Garbo no Taki waterfall in Shimamaki. In spring, the road opens up and this waterfall looks like something you would see in the Amazon rainforest. It’s quite a hike even from the car park though and watch out for bears!

Favourite hike/walk during the warm/green season?I love the hike up to Kagami Numa from Hanazono. The lake perfectly reflects the sky and it really does live up to its name which means mirror in Japanese.

Best day trip from Niseko, and why?There are so many to choose! I love driving along the coast from Iwanai to Suttsu, it’s so rugged and there are so many places to try amazing seafood on the side of the road.

Best place for a picnic?Lake Toya is pretty hard to beat for a picnic!

Favourite food to BBQ?Tempeh Dogs from Pura, of course!!

Hot tip for those visiting in the spring?Definitely rent a car, there is so much to see within and easy drive of Niseko in every direction, making it the perfect base for exploring.–
