with lusciously sweet and juicy flesh. Look for bright
coloured, firm strawberries, with no soft patches or
blemishes.
Best in Strawberries are delicious eaten fresh
in salads, used to decorate cakes and desserts,

Strawberry & applealmond tartsPrep 10 min + chilling | Cook 25 min | Makes 4
2 cups plain flour
⅓ cup almond meal
⅓ cup caster sugar
150g unsalted butter, chopped
1 egg
2 x 250g punnets strawberries, hulled
and halved
¼ cup caster sugar, extra
1 tsp vanilla extract
385g can Woolworths Select Apple Slices
icing sugar, to serve
1Preheat oven to 190°C. Process flour,
almond meal, sugar and butter in a food
processor until like fine breadcrumbs. Add egg
and process in bursts until mixture forms a ball.
Transfer to a lightly floured bench and knead
lightly until smooth. Wrap in plastic and rest in
fridge for 15 minutes.
2Meanwhile, place strawberries, extra sugar
and vanilla in a saucepan over high heat.
Cook for 2 minutes or until sugar has dissolved
and strawberries have softened slightly. Cool.
3Divide pastry into 4 equal portions. Roll
out each on a lightly floured surface to 3mm
thick and 20cm in diameter. Place on a baking
tray lined with non-stick baking paper. Spread
each with apple and top with strawberries,
leaving a 4cm border. Fold in edges roughly.
Bake for 15–20 minutes or until pastry is golden.
Dust with icing sugar and serve.

Deep fried oysters withcaper mayonnaisePrep 10 min | Cook 5 min | Serves 4
1 egg yolk
1 tbs lemon juice
1 cup vegetable oil
sea salt and freshly ground black pepper
2 tbs small salted capers, rinsed
2 green shallots, finely chopped
2 tbs finely chopped continental parsley
2 tbs plain flour
24 oysters on the half shell
1 egg, lightly beaten
1½ cups fresh breadcrumbs
vegetable oil, for deep-frying
1For caper mayonnaise, process egg yolk
and lemon juice together in a small food
processor until frothy. With motor running,
slowly add oil in a thin, steady stream until a
thick mixture forms. Season to taste with sea
salt and freshly ground black pepper. Transfer
to a serving bowl and stir in capers, shallots
and parsley. Refrigerate until required.
2Season flour with salt and pepper. Remove
oysters from the shells. Pat dry with paper
towel and dip into flour to lightly coat. Dip into
egg then breadcrumbs, pressing breadcrumbs
on well.
3Heat oil in medium saucepan over
medium-high heat. Deep-fry oysters in
batches for 30 seconds to 1 minute until
golden and crisp. Drain on paper towels.
Serve with caper mayonnaise.
To buy Look for oysters that are
plump and creamy beige in colour.
Oysters should have a fresh seafood
aroma.
Storage Oysters are best eaten on
day of purchase.
To prepare Oysters are more often
enjoyed raw drizzled with a light
dressing but they are just as delicious
grilled, pan-fried or deep-fried.
Try this For a dipping sauce for
oysters, mix soy sauce, finely chopped
fresh ginger and coriander leaves.
Or for oysters kilpatrick, sprinkle fresh
oysters with finely chopped cooked
bacon and a dash of Worcestershire
sauce. Grill for 4 minutes or until warm.

golden grape tomatoesTo buy Golden grape tomatoes are a small
variety with, as their name suggests, more of
an oval, grape-like shape than cherry
tomatoes. They are similarly juicy and sweet,
and have a golden yellow-orange skin.
Storage This variety of tomato is best
stored in the crisper section of your fridge
for up to 1 week. However, for their best
flavour, they should be brought to room
temperature before using.
Best in Use them in salads, sandwiches
and pasta sauces, or roast until just tender.

Linguine with sautéedgolden grape tomatoesPrep 15 min | Cook 20 min | Serves 4
300g fresh or frozen broad beans
500g linguine pasta
¼ cup olive oil
2 cloves garlic, crushed
200g punnet golden grape tomatoes,
halved
2 tbs white balsamic vinegar
100g fresh ricotta, crumbled
¼ cup mint leaves
grated parmesan, to serve
1Bring a large saucepan of boiling, salted
water to the boil. Add broad beans and
cook for 3 minutes or until just tender. Remove
using a slotted spoon, refresh in cold water
and peel. Return water to the boil and cook
pasta until al dente. Drain and keep warm.
2Meanwhile, heat oil in a medium frying
pan. Add garlic and cook for 30 seconds.
Add tomatoes and broad beans and shake
pan over high heat for 2 minutes until tomato
skins split and the juices are released. Remove
from heat, add balsamic and season well with
sea salt and freshly ground black pepper.
3Add to pasta with ricotta and mint and
toss well. Divide between bowls and
serve with parmesan if desired.

the salty taste that is present in fetta. The solid,
smooth texture of fetta makes it perfect in
salads, in pastas or served on a platter.

steamed asparagus spears, crumbled fetta,
toasted pine nuts and grilled prosciutto.

Baked fetta with tomatoes& olivesPrep 10 min | Cook 25 min | Serves 8
2 tbs Woolworths Select Greek Olive Oil
2 cloves garlic, sliced
1 tsp dried oregano leaves
finely grated rind and juice of 1 lemon
400g fetta
2 tomatoes, thickly sliced
½ small red onion, thinly sliced
¼ cup chopped green olives
1Preheat oven to 200°C. Combine oil, garlic,
oregano and lemon rind in a small bowl
and season with black pepper. Grease a 2-cup
baking dish with a little of the oil mixture.
2Slice fetta in half through the centre. Layer
into dish with tomatoes, onion and olives.
Pour over oil mixture.
3Bake for 20-25 minutes or until tomatoes
have softened and fetta is heated through.
Drizzle with lemon juice. Serve with crusty bread
as a side dish or appetiser.

Lamb cutlets with lemon& herbsPrep 5 min + marinating | Cook 25 min |
Serves 4
1 lemon
¼ cup extra virgin olive oil
¼ cup chopped continental parsley
2 tsp dried oregano
1 tsp rosemary, finely chopped
1 clove garlic, finely chopped
12 lamb cutlets, trimmed
sea salt and freshly ground black pepper
Potato salad
1kg baby potatoes
1 cup frozen peas
¼ cup extra virgin olive oil, extra
1 bunch watercress, leaves picked & washed
1Finely grate rind of lemon and then juice.
Combine oil, herbs, garlic and 2 tbs of the
lemon juice in a shallow glass baking dish.
Add cutlets and turn to coat. Marinate for
30 minutes. Heat barbecue hotplate on high.
2Meanwhile, cook potatoes in a large
saucepan of salted water over high heat
for 15-20 minutes or until tender. Add peas
for last 2-3 minutes until reheated. Drain, cool
slightly and halve potatoes. Add oil, remaining
lemon juice (1tbs) and rind and toss to
combine. Cover and set aside.
3Remove cutlets from marinade and season
with salt and black pepper on both sides.
Cook for 2-3 minutes each side until cooked to
your liking. Add watercress to potato and pile
onto plates. Serve with lamb cutlets.
To buy Look for cutlets that are light
red in colour and have a rounded eye
muscle that is equal in thickness.
Storage Refrigerate lamb cutlets in
an airtight container for up to 2-3
days or freeze if close to the best
before date.
Fresh tips Add grated lemon rind
and rosemary leaves to olive oil then
brush over lamb chops before
barbecuing or grilling.
• Coat lamb cutlets in ground cumin.
Cook until browned then serve on
pita bread with natural yoghurt,
hummus and tabouli.
• Lamb cutlets are great on the
barbecue. Serve with a salsa made
from avocado, red onion, lime juice
and tomatoes.

Pork chops with pumpkinand walnut saladPrep 15 min | Cook 25 min | Serves 4
4 pork mid loin chops
1 orange, rind finely grated and juiced
2 tbs honey
2 tsp ground cumin
¼ tsp chilli powder
salt and freshly ground black pepper
800g pumpkin, deseeded, peeled,
cut into 3cm cubes
1 tbs Home Brand Pure Olive Oil
60g baby rocket
⅓ cup toasted walnuts, roughly chopped
1Preheat oven to 200°C. Line a large
roasting pan with baking paper. Lay
chops into prepared pan. Combine orange
rind, ⅓ cup orange juice, honey, cumin,
chilli, salt and pepper in a bowl. Drizzle
mixture over chops.
2Line a baking tray with baking paper.
Toss pumpkin in a large bowl with
remaining orange juice and olive oil to coat.
Transfer pumpkin to prepared tray. Roast
pork and pumpkin for 30 minutes basting
occasionally with pan juices. Turn chops
halfway through cooking time and cook
until golden.
3Transfer pumpkin to a bowl. Add rocket
and walnuts. Toss until combined. Serve
chops with pumpkin and walnut salad.
Chicken and rice filledred capsicumsPrep 15 min | Cook 40 min | Serves 4
4 small red capsicum
1 tbs olive oil
1 small brown onion, finely chopped
2 tsp ground cumin
1 tsp ground coriander
1 tsp paprika
¼ tsp ground cinnamon
500g chicken mince
1 cup chicken stock
½ cup uncooked long grain rice
¼ cup toasted pine nuts
1 cup Continental parsley leaves, roughly
chopped
½ cup Greek-style yoghurt
extra paprika, to serve
1Preheat oven to 200°C. Halve capsicums
lengthways and remove seeds and membranes.
Place into a large baking dish.
2Heat oil in a frying pan over medium heat.
Add onion and cook for 3 minutes or until soft.
Stir in spices and cook for 1 minute. Add mince,
stirring with a wooden spoon to break up lumps.
Add stock and rice. Cook for 12 minutes, stirring
occasionally until rice is tender. Stir in pine nuts
and half the parsley.
3Spoon mixture into capsicum shells. Bake
for 25 minutes or until tender. Serve topped
with yoghurt, paprika and parsley.

1 Woolworths Fresh Free-range
Roasted chicken
40g butter
2 leeks, white part only, thinly sliced
2 washed potatoes, cut into 2cm
cubes
¼ cup plain flour
1½ cups fat-reduced milk
2 sheets frozen ready-rolled puff pastry,
partially thawed
1 egg, whisked
1remove meat from chicken, discarding
skin and bones. roughly chop meat.
2Melt butter in a saucepan over medium
heat. add leeks and potato and cook for
4 minutes or until tender. sprinkle flour over
vegetables and stir until combined. remove
saucepan from heat and slowly add milk,
stirring constantly until sauce is smooth.
return to heat and stirring, bring to the boil.
reduce heat and simmer for 2 minutes.
season with salt and pepper. Cool.
3preheat oven to 200°C. grease 4 x
1½ cup capacity baking dishes. stir
chicken meat into sauce and divide between
dishes. Cover with pastry and trim off excess.
Brush with egg wash and bake for 20-30
minutes. serve.

thursdayChicken breast filled withcamembert and blueberriesPrep 10 min | Cook 25 min | Serves 4
4 chicken breast fillets
100g camembert cheese, sliced
125g punnet blueberries
1 tbs olive oil
1 kg parsnips, trimmed, peeled, chopped
20g butter
¾ cup milk
⅓ cup caster sugar
2 tbs white wine vinegar
1preheat oven to 180°C. Cut a pocket into the
side of each chicken breast. fill with slices
of camembert and half of the blueberries. heat oil
in a non-stick frying pan over a medium heat. add
chicken and cook for 3 minutes on each side or
until golden. transfer pan to oven and cook for
8-10 minutes or until cooked through.
2put parsnips into a saucepan. Cover with cold
water and bring to the boil over high heat.
reduce to medium and simmer for 20 minutes or
until tender. drain. return to pan, add butter and
milk and mash until smooth.
3put remaining blueberries into a small
saucepan with sugar and roughly squash
to release the juice. add vinegar and place over
medium heat. stir until sugar has dissolved and
mixture comes to the boil. simmer for 10 minutes
or until thickened slightly. serve chicken breast
with parsnip mash. spoon over blueberry sauce.
fridayGreek-style roast lambPrep 20 min | Cook 1½ hours | Serves 4
1.5kg leg of lamb
4 garlic cloves, peeled, halved lengthways
8 cloves
2 tbs olive oil
1 lemon, rind finely grated and juiced
2 tsp dried oregano
2 tsp Greek seasoning
250g haloumi, cut into 1cm thick slices
4 tomatoes, sliced
1 small red onion, thinly sliced
1 cup pitted kalamata olives
mint leaves
¼ cup extra virgin olive oil
1preheat oven to 200°C. place lamb into a
roasting pan. Using a small sharp knife, make
8 deep cuts into lamb. insert a piece of garlic and a
clove into each cut.
2Combine oil, lemon rind (reserve juice), oregano

Beaurain’s first day at
Jindi Cheese was not
one he will easily forget.
“It was Valentine’s Day
but it was just one week after the Black
Saturday fires so everything was black
and dry. Coming from the green of New
Zealand, it was a big shock,” he says.
Luckily the Jindi factory at Jindivick,
in the rolling hills of Victoria’s west
Gippsland region, was spared from the
inferno and production was soon back
in swing — something Franck believes
is due to the resilience of the local
community.
“They are very determined and
dedicated, the people here. There’s no
way I can make good cheese with poor
milk, but these Gippsland farmers are
very good,” he says admiringly.
After spending more than twenty years
making cheese, the French-born Franck
is still fascinated by his craft. “I like my
food and wine,” the 47-year-old says
with a laugh. “And I’m still not bored by
cheesemaking. I find it fascinating that
so many cheeses can be made from the
one thing: milk.”

In the year since Franck took the role of
Group Executive Manager and Head of
Cheese Making at Jindi, eight new cheeses
have been released — and two received
three gold awards at the prestigious annual
Guild of Fine Food World Cheese Awards.
“It’s very important to give the customers
new things every year, Woolworths is
also very keen on that,” he explains. “I’ve
worked closely with Woolworths over the
years when developing new products and
they are very helpful.”
With such a range to choose from, what
does Franck like to serve at his table?
“It’s hard for me to say I have a favourite
cheese,” he says. “But I like to get at least
four different ones on a platter.”
And in the typical French way, cheese is
always served after the meal, not before,
in the Beaurain household!
Baked Jindi BriePrep 5 min | Cook 25 min | Serves 2
Preheat oven to 180ºC. Line a baking tray with baking paper. Cut 2 x 125 wedges Jindi
brie in half horizontally through the centre. Cut 2 partially thawed sheets frozen puff
pastry in half from corner to corner. Wrap each portion of brie in pastry, trimming where
necessary and brushing edges with beaten egg yolk to help seal. Place parcels onto
baking tray. Brush top with egg yolk and sprinkle with flaked almonds. Bake for 25
minutes until golden. Serve at once with a salad and a glass of riesling or sauvignon blanc.
FRESH TIP: You could add a spoonful of onion marmalade or tomato chutney to the
parcel for extra flavour.

according to packet instructions. Place 1kg small potatoes

white choc melts and ¾ cup thickened cream in a small
saucepan over gentle heat. Roughly chop 125g packet Home
Brand Vanilla Wafer Biscuits. Place into a bowl with
½ cup full cream milk powder, ½ cup desiccated coconut,
100g chopped dried strawberries and ¼ cup toasted
slivered almonds and stir to combine. Pour over melted
chocolate and stir until combined. Spoon into prepared pan

and refrigerate for 1 hour until set. Remove from pan, cut

Pasta with crisp salami and olivesPrep 5 min | Serves 4
Shred 200g sliced Hans Peperoni. Cook 500g fusilli pasta in a large saucepan of boiling salted
water until al dente. Drain and return to pan. Meanwhile, heat 2 tsp olive oil in a medium frying pan
and cook salami until crisp. Add 1 sliced red capsicum, 2 tbs sliced black olives and 2 diced
tomatoes. Cook for 2 minutes then add to pasta and stir through to combine. Divide between serving
bowls and top with basil leaves and shaved parmesan.

blended with whole peppercorns, italian spices and chilli, hans peperoni has fast
become an aussie favourite! peperoni salami descended from the spicy salami made
in the southern italian areas surrounding naples. following
these traditional recipes, hans peperoni is a fully-cured
and lightly smoked salami which adds a full-bodied flavour
when used in your favourite recipes. peperoni is often used
as a pizza topping, however it is a versatile salami that is the
perfect ingredient to add spicy zest to a fresh salad or pasta
dishes. it is also fantastic served freshly sliced with crackers
and a good-quality, matured cheese. available from the

preheat oven to 250°c. spread 6 small
pizza bases (see note) with 1 tbs

Italian meatballsPrep 15 min | Cook 20 min | Serves 4
500g pork mince
100g chicken mince
1 small red onion, finely chopped
2 garlic cloves, crushed
3 tsp Italian seasoning
finely grated rind of 1 lemon and 2 tbs
juice
¼ cup continental parsley leaves,
finely chopped
olive oil cooking spray
500g linguine
575g Napoletana pasta sauce
shaved parmesan, to serve (optional)
1Combine mince, red onion, garlic,
seasoning, lemon rind, lemon juice and
parsley in a large bowl. Season with salt and
pepper. Roll 2 tsp of mixture into balls and
place onto a tray. Continue with remaining
mixture.
2Heat a little olive oil in a frying pan and
cook the meatballs in a few batches until
browned all over. Add all the meatballs into
the frying pan and cover with the sauce,
bring to the boil and simmer on a low heat
for 10 minutes until cooked through.
3Meanwhile, cook the pasta in a large pot
of boiling salted water until just tender.
Drain the pasta and toss through the sauce
and meatballs. Garnish with fresh parmesan
and torn parsley leaves.
