We are excited to attend Farm Sanctuarys Country Hoe Down in Watkins Glen New York this comingweekend August 3-4 We will see Fanny and Sonny and Julia three of the very special rescued animalsfeatured in the documentary We will also see many wonderful humans Looking forward to good fooddancing and being inspired

Alexander was a downer at a stockyard - I got him right before Christmas 3 years ago He was beingauctioned off and continued to collapse over and over during the sale so no one would buy himHehad to have the same surgery as Sonny - the removal of the umbilicus He also had to have multiplesurgeries on his back legs - both joints were infected and the assumption was he could not be able towalk or recover fully He thankfully beat the odds He is a very solitary boy - and the tallest of thecattle right now He loves playing with Sonny and Orlando

Pasta alla Checca is a perfectsummertime meal that uses rawvegetables at their peak EvenRosemaryrsquos Italian Greyhoundsapprove
If you donrsquot have a ldquoSpiralizerrdquoyou can use a potato or vegetablepeelermandolin to make thinslices of zucchiniThis tasty dish is adapted fromMimi Kirkrsquos recipe who hasdeveloped her own raw versionof this Italian classic This aswell as many others are includedin her book Live Raw
ldquoPastardquo Alla Checca
2 large zucchinis2 large tomatoes diced or smallcherry tomatoes cut in half1 clove garlic minced or crushed12 cup olives (green kalamataor italian olives) coarselychopped14 cup capers1ndash2 teaspoons herbs thymerosemary marjoram or Italianherbs of choice15 fresh basil leaves ribbon-sliced or torn14 cup extra-virgin olive oil totaste (and you can add lemonjuice or white balsamic vinegar)Himalayan salt to tasteBlack pepper to tasteChili flakes (optional)
Spiralize zucchinis or use apotatovegetable peeler andmake long flat fettuccine-typenoodles
Put tomatoes garlic olivesherbs capers olive oil basil saltand pepper in a large bowl
Place spiralized zucchini on topand toss until well combined
Top with some of the choppedtomatoes more basil if you likeand sprinkle on Parmesan nutcheese
Cashew Parmesan Cheese
1 cup cashew (can substitutealmonds or walnuts)1 clove garlicSalt to tastePlace all ingredients in foodprocessor until the ingredientsresemble very small pieceslike Parmesan cheese
Store in a glass container forfuture use
