On November 9 – 11, the11th Annual South Carolina Bank and Trust Hilton Head Oyster Festivalreturns to Shelter Cove Community Park. Highlights include oysters, shrimp,chili, chowder, hot dogs, hamburgers, live music, kids activities and more.

Don’t miss the 23rd Annual Taste of the Season, presented by the HiltonHead Island-Bluffton Chamber of Commerce, on November 16 at theHilton Head Marriott Resort and Spa in Palmetto Dunes. Bits of cork floating in the Bordeaux, room tem-perature Chardonnay, inky Zinfandel splatteredacross the white tablecloth.

These are all signs that your perfect bottle of winehas just become your new nemesis. Don’t let thishappen to you! Wine disasters are preventable,easy to fix and even opportunities for you to showthat you’re the host(ess) with the most(ess). Checkout these “home remedies,” which can come inhandy when good wines go bad.

THE DISSOLVING CORKCorks are a lot like people. They’re well inten-tioned, but no cork (or no person) is perfect.Sometimes they will not budge; other times theyjust go to pieces. Some corkscrew models, likethe all-purpose wing corkscrew, are particularlyeffective at extracting even the most resistantcork from a bottle. Even in skilled hands, theseworkhorses of the corkscrew family may grind andpulverize cork into your bottle. However, even apricey titanium corkscrew cannot prevent an agedcork from turning to dust when being pluckedfrom the bottleneck. If there are cork fragmentsfloating in your bottle, simply place a coffee filterover the bottle and decant the wine into anothercontainer. Or, just filter the wine right into your glassand enjoy. Let stand for 1 hour to allow crackercrumbs to absorb excess moisture.

Scoop with ice cream scooper or formcakes by hand. Makes 16, 4-ounce crabcakes.

Cakes can be sautéed in a little butter in anon-stick pan (preferred), broiled, bakedor breaded and deep fried.

Serve with lemon wedges and CaperDijonaise.

ONE OF HILTON HEAD ISLAND’S MOST POPULAR RESIDENTS, ATLANTIC BOTTLENOSE DOLPHINS ARE ABUNDANT IN LOCAL WATERS.

In fact, these incredible marine mammals share so many characteristics with humans it can be arguedthey are our underwater counterparts.

One example is the way they give birth.

Female dolphins give live birth and nurse their young for up to threeyears. Calves often stay with the mother for up to five years, if male,and potentially the rest of their lives, if female.

In the wintertime, the Bottlenose population averages from 200 to 400animals. Early spring through late fall, we are inundated with dolphins

as females from all over the Southeastern coast make an annual trekto the area to give birth. Other females act as midwives and

nannies, often taking turns watching over the young as themother feeds.

Males tag along, following the females wherever they go –yet another human trait!

From a boat, you will often see the young calves swimmingand playing with the other dolphins in the pod. Providing

abundant food for the mothers, Lowcountry waters alsogive the young dolphins a fairly safe environment to

practice swimming and hunting before moving on toother parts of the coast.

Although they lack the gracefulness of an adultdolphin, the calves’ playfulness and energy tendsto remind one of their own youth.

After 40 years of professionalfishing, you would think onewould tire of it. But for somereason I still can’t sleep past 5 a.m. – even when I want to –and I feel out of place when I’mnot heading out for a day offishing.

I have always felt more at homesurrounded by God’s creation thanman’s. I’m not sure if it's the spectac-ular sunrise or the sights, like a BaldEagle sitting on an oyster bank enjoy-ing a fish breakfast or dolphinscoming up beside the boat for agood morning salute. Some thingsare predictable, but nature neverfails to provide something new, some-thing yet unseen after so many years.

That’s exactly what happened onecool fall morning when Jace Spencerand his boys boarded my Bayrunnerfor some big bull red fishing. Thewater bristled in a manner that’shard to describe, a way that usuallyforetold a seasonal explosion of life.

Calibogue Sound was flat calm,like a mirror, as we pulled up to theDaufuskie Island beach in search ofmenhaden. They kept their appoint-ment and, with a few throws of thenet, we had “liveys” in the well and abucket full of “chunkers.” Pointing thebow towards the mouth of the sound,we skimmed the mirror-like surface.

Coming face-to-face withan airborne predator.

Minutes later, out of the corner of my eye, I spotted ashower of fish leaping from the water. I turned hard tostarboard and we watched as a school of mullet contin-ued to burst from the water in unison.

It soon became obvious that several dolphin and at leastone shark were playing havoc on the hapless mullet. Thedolphin were circling the school, picking them off. Twicewe saw a large shark skyrocket through the middle of theschool. As we neared the school, they remained on topinstead of sounding like they normally would.

I decided some fresh mullet wouldn’t hurt our bait arsenalat all. I grabbed the net and loaded it as Jace circled backto the school. As the bow neared the school of fish, youcould almost see the confusion in the mullets’ eyes. Theywanted to sound, but wouldn’t. I took advantage of theirdilemma and let the net sail.

As the net sank, the forward motion of the boat took thenet towards the stern. I turned towards Jace and the boysannounced that we had definitely secured some mullet.

That’s when it happened. A shark measuring around sixor seven feet and weighing 100 pounds or more wentairborne right off the stern of the Bayrunner! He launchedlike a missile, eight feet out of the water, and landed onthe t-top, making it shudder. The shark rolled off the rodsin the holder, bounced off the engine and fell back intothe water! The sobering thought of what would have hap-pened if a hundred pounds of muscle and teeth had landedin boat broke the trance of awe, and we promptly headedfor the fishing hole.

The picture I chose for this month’s column shows Capt.Mike, a co-captain of the Bayrunner, with another sharkof comparable size, to give you an idea of the heft of theleaping predator we observed that fall morning. In 40years of fishing, I never saw anything quite like that airborneshark bouncing off the boat. And, to be honest, as spectac-ular as it was, I would prefer to see sharks jumping a littlefarther from the boat in the future!

The North Atlantic Right Whale (Eubalaenaglacialis) is the rarest of the large whale species.With a current population of about 300 individuals,this once-abundant cetacean is now endangered.Hunting has diminished their numbers since the1600’s but North Atlantic Right Whales havebeen internationally protected since 1949.

The Right Whales live in the northwest Atlanticand spend their time in shallow coastal waters,near bays and peninsulas. These areas providefood, shelter and security. Right Whales spendtheir summer months in New England feeding.The deep bays of Cape Cod and Massachusettsprovide food and nurseries for these animals. Theycan also be found in the Great South Channelof Cape Cod, The Bay of Fundy, and the Brownand Baccaro Banks off the coast of Nova Scotia.

Beginning in October, pregnant females beginto migrate south into the coastal waters of theSoutheastern United States. The coastal waters ofGeorgia and Florida provide ideal calving andnursery grounds for the Right Whale.

Right Whales are large creatures, growing up to59 feet and weighing up to 60 tons. Generally,females are larger than males. These strikingcetaceans have massive heads with callosities(hard raised skin, actually a type of whale lice)on their jaw. They lack a dorsal fin, but have largepaddle-like flippers. Right whales tend to be strandfeeders with baleen plates and bristles that canmeasure up to eight feet in length. These platesallow them to filter tiny zooplankton to eat.

Without teeth to determine age, research has beendone on ear bones to determine the longevity ofRight Whales. Although not much information hasbeen gathered on the topic, it is thought that rightwhales can live to be 50 years old. Close relativesof the Right Whale are known to live past 100years. Females will reach their sexual maturity at

the age of 10 and experience ayearlong gestation, producing a

single calf. The young will wean from the motherwithin the first year of life.

These whales obtained their names from huntersbecause they were considered the “right” whalesto kill in a hunt. With their body weight being atleast 50 percent blubber, they would float whenkilled, making them more accessible to hunters.These whales were harvested for oil as well astheir baleen. The baleen was popular in makingcarriage whips as well as corsets. These animalswere hunted almost to the point of extinctionbetween 1650 and 1949.

In 1949, the International Convention for theRegulation of Whaling protected these whalesthroughout the entire world. Today, these animalsare still under threat from ship strikes, becomingentangled in fishing gear, invasion of habitat andgeneral pollution. Their only predators are killerwhales and large sharks.

The winter months in South Carolina offer achance to view these animals during their migra-tion. Although a rare sight, once spotted, theseanimals are unmistakable. The Department ofNatural Resources and whale conservation orga-nizations are always looking for volunteers tohelp document these animals. Fall in the Lowcountry

If it weren’t for the drop in temperature andhumidity, one might find it challenging tonotice the shift from summer to late fall in theLowcountry.

Since our maritime forest is dominated byevergreen flora, the customary signs of fall, likeleaves turning yellow to crimson to goldenbrown, are all but absent. So what does autumnin the coastal Lowcountry look like? And howcan those of us who originally hail from north-ern climates recognize the signs of this moresubtle change of seasons?

Ah, look to the grasses. The smooth cordgrassprairie. That vast expanse spreading across thelandscape between island and mainland,along narrow saltwater creeks and inlets. SouthCarolina has more of it than any other state,and Beaufort County has more cordgrass prairiethan any other county in the state. It’s beautiful,it’s abundant, and it reveals the season to us ina very subtle, yet obvious way. Lush or decaying,it serves the flora and fauna in important ways.

Look now, and it appears rather lackluster. Thegolden colored seed heads have been ravagedby seed-eating birds or cast over the marshwith the winds. Soon, the marsh will appearbrown-gray as the stalks dry and die. Duringthe winter months, brittle grasses break off,decompose and fertilize the mud. Deterioratinggrasses also add crucial nutrients to the water.Have you ever noticed all the tiny particlessuspended in our rivers and marshes?

Come January, seeds that have germinatedover the winter begin to spout. Fresh greenshoots rise from the mud, replacing last year’scrop. As spring advances to summer, the

marsh becomes a rich verdant green.

Dead grasses accumulate in floating wracksand are swept with the tides onto ourbeaches. Here the wracks form thefoundation of the dune system and offer asmorgasbord of nutrients for plants and animalsinhabiting the Atlantic shore of our island.

The dead grasses also serve as an importantnesting material for a wide variety of birds.One to look for now is the Bald Eagle, whichreturns from summer refuges to the north atthis time of year to re-establish pair bonds andfreshen up the nest.

Eagles inhabit the same nest year after year,and dry cordgrass serves as an excellent build-ing material. In nests measuring six to eightfeet across (weighing up to a ton!), the pairwill likely lay two eggs.

In late winter, chicks the size of adult eagleswill start to stretch their wings and prepare tofledge. Once the family moves on, well mani-cured eagle nests are frequently inhabited byother birds. Look for them high in the treetop.Perhaps you’ll observe an eagle soaring with abunch of cordgrass held tight in its talons. Nowyou’ll know what they’re up to. Get outside!

Hybrid PowerBy Doug Weaver, Palmetto Dunes Oceanfront Resort

Hybrids are hot. Golf Digest recently reportedthat half of all golfers use at least one hybridgolf club. The latest Darrell Survey found thatthe majority of PGA TOUR pros carry at leastone hybrid in their bag.

Why should you consider using a hybrid? It’slike free money or like someone handing youfree strokes. That’s because the hybrid com-bines the ease of a wood and the loft of aniron, doing the hard work for you.

A hybrid club makes life easier by helping getthe ball off the fairway and into the air. Ironscan be tricky for many golfers due to the smallface of a low-loft clubhead, but they help getthe ball up in the air quite effectively. A hybridoffers the stability and ease of a wood pairedwith the loft of an iron. It truly is the best ofboth worlds.

Many players have difficulty handling long irons,preferring fairway woods which have a largersweet spot. However woods with longer shaftshave a different swing mechanic that can bedifficult to master. The long shaft of a fairwaywood also requires plenty of room to swing,making it unsuitable for tighter lies.

Plus, the clubface of the fairway wood is fun-damentally designed to skim over turf, insteadof cutting through it, which makes it undesirable

for shots from the rough. The answer to thisdilemma, for many players, is to replace the1-4 irons with hybrids.

A hybrid typically features a head that is quitesimilar to a fairway wood, but is made of hol-low steel or titanium with a shallow, slightlyconvex face. The shallower head does notextend as far backwards from the face as afairway wood, but features an iron-like lie angle.Hybrids are available with a teardrop-shapedor square-shaped head, depending upon yourpersonal preference.

Generally speaking, the hybrid has a lowercenter of gravity. This makes it easier for theball to get height and come down soft. Theseinnovative clubs – and an excellent golf instruc-tor – can restore the joy to your golf game bygetting the ball to stop on the green. Hybridscan be used in the rough or on long par-threeholes. Either way, they can be your best friendout on the course.

Whatever clubs you choose to play with, makeNovember the month to have fun on the green,to relax and to improve your game. As the tem-peratures cool down this fall, it’s the perfecttime of year to enjoy Hilton Head Island, oneof the nation’s top destinations for golfers ofevery skill level.
