For a product to beeligiblefor markingwith tbe Eoo-Mark it shall also carry the Standard Markof BIS forqualitybesidesmeetingadditional environment friendly (EF) requirements, Theenvironment friendly lequirements for dehydnted okra ( BHlNDl ) are,therefore, included through Amendment No.1 to tbis standard.

This amendment is based on tbe Gazette Notification No. 624 (E) dated 6September 1995 for Labelliog Beverages. Infant Foods, Processed Fruits IndVegetable Products u environment friendly, published in tbe Gazette of tbeGovernment of India.'

4.3.1.2 Tbe manufacturer shall produce the consent clearance IS per tbeprovisiollS of Water (PCP) Act, 1974, Water (PCP) Cess Act, 1977 and Air(PCP) Act, 1981 along with the authorization if required under E""ironment(Protection) Act, 1986and the Rules made thereunder to tbe Bureau of IndianStaDelards while applyilll for the BCQ.Mark and the product shall also be inaccordance with the Prevelllion of FoodAdulletltionAct, 19541nd the Rules

o. FOREWORD

0.1 This Indian Standard (Fint Revision) was adopted by the IndianStandards Institution on 31 January 1978, after the draft finalized by theFruits and Vegetables Sectional Committee had been approved by theAgricultural and Food Products Division Council.

0.2 Dehydrated vegetables in various forms arc being increasingly used inoff..season as they retain their culinary quality and palatability. Thedehydrated vegetables are also used by the military in the sizable propor­tion for their near to natural taste besides saving on transportationand ease in storage at different altitudes. The dehydrated okra gives aconsistent taste and flavour and also can be used in convenience foods.This standard is expected to help in exercising proper quality control in theproduction of dehydrated okra.

0.3 Dehydrated okra (BHINDr) shall be prepared from clean, firm, freshokra of appropriate stage of maturity by properly washing, preparing,blanching, sulphiting and dehydrating in a manner which ensures theeffective preservation of the colour, flavour, texture, taste and food value.

0.4 This stllftdard was first published in 1968. In this revision differentstyles of dehydrated okra have been incorporated. Further requirementsfor total ash and acid insoluble ash have also been included. This revisiongives more details of raw material. method of determination of rehydrationratio, reconstitution and modified limit for sulphur dioxide. It alsoincorporates Amendment No. 1 issued to the standard•.

0.5 For the purpose of deciding whether a particular requirement of thisstandard is complied with, the final value, observed or calculated, express­ing the result ofa test or analysis, shall be rounded off in accordance withIS : 2·1960-. The number of significant places retained in the rounded oft'value should be the same as that of the specified value in this standard.

I. SCOPB

1.1 This standard prescribes requirements and methods of sampling andtests for dehydrated okra (BHINDI).

2. TERMINOLOGY

2.0 For the purpose of this standard, the following definition shall apply.

2.1 aelaytiratloD aatlo - Ratio of the mass of the dehydrated materialafter cooking and draining offexcelS water to its mass before cooking.

3. STYLES

S.t Okra used for dehydration shan be in anyone of the following forms:

a) Whole pieces unscrapcd with butts cut off, or

b) Small pieces obtained from whole pieces cut transvenely withbutts removed.

t. REQ,UIRBMENTS

t.l Raw Materlal- Dehydrated okra shall be prepared from clean,firm, fresh okra [ A.b,'mosclaw ,sew,n'," (Linn ) Moench] of proper stage ofmaturity and of a suitable variety. It shall have the characteristic colourand flavour and shall be free from blemishes and damage caused byinsect, pest, disease, etc •

••2.1 Dehydrated okra shall be of light green to dark green colour andshall be free from any added colouring matter. They shall have thecharacteristic odours. The seeds inside the piece. of okra shall be whiteor light green to light brown in colour.

".2.2 Dehydrated okra shall be free from skin discolouration, insects,moulds, rodent excreta and any other foreign matter. It shall also be freefrom any chem'cal preservative other than sulphite and-earbonate ( accord­ing to PFA Rules, 1955). The proportion of the material passing through2-0 mm IS Sieve (s" IS: 460-1960· ) shall not exceed I percent by massin the case of dehydrated okra in whole form and 5 percent by mall in thecue ofdehydrated okra in chopped form.

4.2.3 Dehydrated okra shall also comply with the requirements given inTable 1•

4.2.t ne'onslitution - The dehydrated okra shall reconstitute to a satis­factory boiled product when one part by mass of the dehydrated okrais cooked (simmered) in fifteen parts by mass of one percent of sodiumchloride solution for 15 minutes. The time taken for cooking shan be thetime taken from the start of boiling (simmering). The reconstitutedproduct shall possess tender texture, shall be crisp, practically free fromtoughness and mushiness and shall have a typical flavour, odour and colourof cooked fresh okra.

S. PAOKING AND MARKING

5.1 Packial - The dehydrated okra shall be packed in clean, sound andmoisture proof containers made of tinplate, laminated foils or of anysuitable material which would prevent the ingress of moisture by dehydra­ted okra.

5.2 Marklal - Each container shall be marked or labelled with thefollowing particulan:

a) Name and style of the material.b) Name and address of the manufacturer,c) Net mass,d) Declaration to the effect that permitted preservatives have been

used.e) Batch or code number indicating the date of manufacture. andf) Manufacturer'. ~icence number.

5.2.1 Each container may also be marked with the lSI CertificationMark,

6.1 Representative samples of the material for testing conformity to thisspecification shall be drawn according to the method given in Appendix Gof IS: 4624·1978·,

7.1 Tests shall be carried out as prescribed in the relevant appendicesIpecified in col 4 and 5 of Table 1.

A-I. PROCEDURE

A-I.I Cook (simmer) in a beaker one part by mass of dehydrated okrafifteen parts by mass of one percent sodium chloride solution for 15 minutesand then allow them to cool at room temperature for 45 minutes. Thetime taken for cooking shall be the time taken from the start of boiling( simmering). Drain off excess solution by covering the beaker withwatch glass with convex surface and inverting the container for fiveminutes. Weigh cooled material.
