I am delighted to bring you some very good news in this edition of our magazine. The Interalpen-Hotel Tyrol is the first 5 ***** hotel in the Tirol to be awarded “superior” sta-tus. Naturally we will not rest on our laurels – this award recognises that we have always gone beyond the criteria of a 5 star establishment. Our reputation has also been built on the stability and reliability of our holiday offers, so this new status will not result in an increase in our room rates. On the contrary, we are going to offer even more favour- able seasonal rates in the future.

And on the theme of the seasons, autumn brings a pleasant cooling of temperature, when the woodland of the Tirol’s valleys and hills turns every shade of gold. Na-ture is on show in all its finery and it would be a shame to miss this wonderful spectacle. There are so many ways to enjoy some fresh air in the mountains. Our experienced outdoor experts can show you the best places to enjoy the Tirol’s landscape at their finest.

We are closing for scheduled renovation works from 8 – 30 November, but from 1 December you will find us decked in our Christmas finery and ready for festive and relaxing holidays. We have all kinds of Advent and Christ-mas activities planned, from snow-shoe rambles in roman-tic, sparkling landscapes, to relaxing musical evenings. We are sure that you will enjoy a holiday to live long in your memory.

Autumn beckons!Hiking in the Tirolean Alps

Savour the mild autumnal days and enjoy nature at its most beautiful.

The year slowly draws to an end, but the sun’s rays will still warm our faces for some time to come. The days have lost their summer heat, and this is the ideal season to enjoy some sport and exercise in the fresh air, perhaps some hiking, golf or mountain biking. There are infinite kilometres of hiking trails through the Tirolean Alps just waiting to be explored. Trails start right in front of the hotel, leading across Seefeld plateau, into the Wetterstein massif, through

Karwendel Alpine Park, along the banks of the Leutasch river or through Wild-moos nature reserve. There is the per-fect route and difficulty level for every-one, whatever your experience and condition. And you will almost always come across a cosy mountain hut on your path for rest and refreshment. The important thing is to find your own tempo and enjoy the great outdoors. It is worth stopping from time to time, just to take stock of your surroundings and to

let your gaze follow the extraordinary mountain panoramas around you.

Our outdoor guides are looking for-ward to showing you the most scenic beauty spots on a group ramble or, if you prefer to go it alone, you will find a hiking map at Reception. This is the perfect season to immerse yourself in pristine nature and store up sunshine, before the days get shorter and cooler.

A favourite hike is the route to the Friedensglocke, the largest free-stand-ing bell in the Alps. If you visit in the months of September or October you might also witness the traditional Ti-rolean “Almabtrieb” which celebrates the bringing down of cattle from their summer pastures. Colourfully decorated cows with tinkling cowbells return to the valley to be greeted with lively brass band music. More energetic guests will enjoy conquering the slopes by moun-tain bike. Trails might be gravel, forest floor, rock or grass, and excitement and variety is guaranteed.

On Ganghofer’s TrailLudwig Ganghofer was a great poet who took inspiration from the most beautiful

places in Austria, particularly his hunt-ing lodge in Leutasch. The Ganghofer Hubertus festival in Leutasch is one of the most popular traditional events on the Seefeld Olympia calendar. The week long programme of guided rambles, lec-tures and entertainment with a hunt-ing theme gives an insight into the life and times of the poet, with all kinds of quaint and traditional entertainment on offer: a huntsmen’s breakfast around an open fire, shooting competitions by the local hunting societies, and the blowing of hunting horns to bless the Hubertus stag. And with luck you will be able to hear the roaring of stags in the colourful autumn forests around the Interalpen-Hotel Tyrol – a primeval call of nature.

Saddle of local venison with muscat squash and forest mushrooms

Saddle of venison (recipe for 4 people):

· 400 g fillets of venison, boned and trimmed

· fleur de sel · juniper · rosemary from the

garden · freshly milled black pepper · walnut oil

for browning

Season the venison fillets with salt and pepper,

brown over a low heat, set on a trivet, sprinkle

with crushed juniper berries and rosemary.

Cook at 100 °C (54 °C core temperature).

Allow to rest, and then glaze with fresh foaming

butter, fleur de sel, juniper and rosemary.

Forest mushrooms:

· 150 g mixed mushrooms (if possible porcini,

chanterelle and shimeji) · 2 shallots finely

sliced · 20 g chopped chervil, parsley and

thyme, fleur de sel · grated zest of a lemon

· pepper · butter oil

Clean and finely slice the mushrooms, sauté in

butter oil. Add the chopped shallots, herbs and

seasoning.

Pumpkin French toast:

· 2 slices of toasting bread · 200 g muscat

squash · 30 g butter · 50 ml orange juice · zest

of an orange · star anise · 30 g pumpkin seeds

· 1 dsp honey · 30 g mascarpone

Cut the pumpkin into wedges, gently roast at

200 °C in a closed pan with the butter, salt,

orange juice, zest and star anise. Remove the

pumpkin flesh, combine with honey, mascar-

pone and chopped pumpkin seeds and spread

between the 2 pieces of bread. Dip in flour,

egg and walnut crumbs and fry in butter oil

over a moderate heat.

· 1 whole egg · 50 g flour · 20 g walnuts · 30 g

breadcrumbs · butter oil

Christoph Zangerl sums up his cooking philosophy: “quality and fla-vour speak for themselves”. With this in mind he pays close attention to the sourcing of his ingredients. “To create extraordinary cooking you need out-standing ingredients. And why should you buy elsewhere when you have the best quality on your doorstep?”

Much of the fish on our menus comes from the crystal clear mountain stream waters of nearby Leutasch and fresh game is sourced from the forests around the hotel. Meat, dairy produce, fruit and vegetables are provided by farmers local to the Interalpen-Hotel Tyrol. And members of the kitchen team are not averse to foraging for woodland mushrooms themselves.

by personal contact with his produc-ers and suppliers – one of the great ad-vantages of buying locally. “I can chat with the farmers about the rearing and feeding of their livestock. That in-creases my trust in the quality of the produce.” Moreover, there are many farmers in the Tirol who farm organi-cally, a standard held in great regard by the Interalpen-Hotel Tyrol. This

close relationship with the region’s providers is reflected in the menus of the Interalpen-Hotel Tyrol’s restau-rants.

Seasonal dishes are always on the menu, with fresh ingredients that im-part dishes with an unmistakable fla-vour of the Tirol. And regional produce not only tastes delicious, but is also beneficial for the environment.

The organic and natural produce we order is produced with highest con-sideration for nature and short deliv-ery journeys reduce our carbon foot-print to a minimum. In addition the Interalpen-Hotel Tyrol pays attention to the quality and orgin of products that cannot be sourced locally: im-ported foods such as rice, bananas, tea or coffee must all be fair trade.

Personal tips from the head chefIt is no surprise that Christoph

Zangerl insists upon the best quality for his ingredients; after all, the Gault Millau guide has awarded him three toques and a heady 17 points. If you want to experience the exquisite cook-ing of our head chef for yourself, you need only come and try our half board. Under Zangerl’s direction the kitchen team produces a magnificent 6-course à la carte menu every evening. You can savour the master in action at our Chef’s Table restaurant, where Zangerl will cook for you in person and share some of the gourmet secrets of his suc-cess.

Our head chef Christoph Zangerl who holds three Gault-Millau “toques” invites other star chefs to conjure up exquisite dishes for guests once again this year as part of the Interalpen- Culinarium. From 24 – 27 October 2010 these stars of the kitchen will take our guests on a culinary journey full of creativity and sophistication, a feast for the senses that no gourmet should miss. The exclusive kitchen party on

26 October is particularly popular, when you can watch the masters at work, from such close quarters that you can peep into the saucepans, ask questions or just taste the fabulous food created.

Participation in this special event is without supplement as part of your half board arrangement.

Snow-covered slopes, magnificent pistes and cross-country ski trails, exhilarating toboggan runs – winter fun is guaranteed on a holiday at the Interalpen-Hotel Tyrol. 2011 rates unchanged However one thing remains un-

changed and that is our room rates for 2011.

We aim to make not only your holiday but also your ho-liday planning as enjoyable as possible. So from 9 January 2011 we will not longer have winter and summer seasons. You will be able to choose whatever date suits you to come and enjoy some rest and relaxation. Various price zones will be available all year round, offering many ways to book a favourable room rate. And the early part of the week will be even better value at certain times. The individual price zones have been categorised with 5 letters and the new price list will be available at the end of the year.

We are renovating our 50 metre long pool and cre-ating new relaxation areas for you. This means that the swimming pool will not be available from 19 April – 27 May 2011. The last five weeks are a “drying out” period, and there will be no building work to disturb your stay. The sauna, saltwater pool and relaxation room will be open as usual during the whole period.
