5. Close supervision is necessary when theappliance is used by or near children.

6. Do not operate the appliance if youobserve damage to the electrical cord orplug or if the base of the appliance hasbeen dropped or damaged in any manner.If the appliance is damaged, consult the“WARRANTY” section of this manual.

7. Unplug the appliance from the electricaloutlet when not in use, before putting onor taking off parts, and before cleaning.

8. Do not allow the electrical cord to comeinto contact with hot surfaces. Anextension cord may be used if necessary.Care should be taken to position theelectrical cord so that it does not create ahazard by hanging over the table orcounter edge in a way where it might betripped on or pulled by those around theappliance.

7a. Basin Pegs—Hold cylinder in place.

8. Fountain Base—Housing that surroundselectrical components including the motorand the electrical circuit board.

8a Vent Holes (excluding Select model)—Allow hot air produced by the motor andheating element to escape, cooling theelectrical components. The vent holesshould not be covered.

9. Slip-Resistant Legs (excluding Selectmodel)—Reduce movement during useand help prevent marks on tables andcountertops.

10. Adjustable Feet—Screwed into the bottomof the base. Can be tightened or loosenedto raise or lower a particular side of thefountain, adjusting its level.

11. “Whisper Quiet” Motor (not pictured)—Inside fountain housing (8). Designed tobe as quiet and unobtrusive as possible.Some motor and moving parts noise is tobe expected. The motor is equipped withan automatic shut-off in the event thatthe fountain overheats.

Signature and Elite models only:

12. Control Panel—Regulates all functionsof the fountain.

12a. ON/OFF/POWER button—A green LEDlight will be lit when the power is ON.

12b. START button—Starts the motor, causingthe auger to spin inside the cylinder. Agreen LED light will be lit when the STARTbutton has been pressed and the auger isspinning.

12c. HEAT button—Changes the temperaturesettings. Each time the button is pressed,the heat will cycle to the next temperaturesetting, moving from OFF to HIGH. A redLED light will be lit at each temperaturesetting except the OFF position, where theLED light is yellow. The red LED light willblink intermittently as power is suppliedto the heating element.

12d. STOP button—Stops the motor, causingthe auger to stop spinning. A red LED lightwill be lit when the auger is stopped andthe POWER is still on.

Classic and Select models only:

13. HEAT/OFF switch—Turns on the heatingelement inside the fountain base. It is setat a medium heat and should keep thechocolate warm while it is flowing. A redLED light will be lit when the switch isplaced in the HEAT position.

14. START/STOP switch—Starts the motorwhich causes the auger to spin inside thecylinder. A red LED light will be lit whenthe switch is placed in the STARTposition.

and the stainless steel basin in hot, soapywater. Dry thoroughly. DO NOT ALLOWWATER OR OTHER LIQUIDS TO ENTERINTO THE BASE OF THE APPLIANCETHROUGH ANY VENT HOLESLOCATED ON THE SIDES OF THEFOUNTAIN OR THROUGH THEBOTTOM GRATE. DO NOT IMMERSETHE FOUNTAIN BASE IN WATER.

2. Place the base of your Sephra HomeChocolate Fountain on a sturdy, levelsurface. If the fountain is not level it willstill operate, but the fondue will gap on

one side and will not have the “curtaining”effect. The fountain has adjustable feet toassist you in leveling it if your surface isnot level.

Elite, Classic, and Select models only:

3. Align the notch(es) in the top cylinder(3a) with the key(s) in the bottom cylinder(3b) and fit securely together. Slide thecylinder sleeves (3c) onto the basin pegs(7a).

4. While holding the knob at the top of theauger (5) insert the auger into the cylinder.Make sure the auger fits into place overthe spindle centered in between the basinpegs. Twist the auger clockwise to makesure it is properly positioned; you shouldfeel some resistance as you turn the auger.If melting chocolate in the basin, wait untilthe chocolate is completely melted beforeinserting the auger. Failure to do so maydamage the fountain or cause it tomalfunction.

5. Slide the bottom tier (6) over the cylinderuntil it stops in position. Slide the top tier(2) over the cylinder in the same manneruntil it stops.

6. Slide the crown (1) into the slots at thetop of the cylinder and over the knob ofthe auger. The widest part of the crownshould be at the top of the fountain.

Signature model only:

3. Slide the cylinder sleeves (3c) onto thebasin pegs (7a).

4. While holding the knob at the top of theauger (5), insert the auger into the cylinder.Make sure the auger fits into place overthe spindle centered in between the basinpegs. Twist the auger clockwise to make

5. Slide bottom tier (6) over the cylinder untilit stops in position. Next, slide the blackplastic stabilizer (4) on the top of thecylinder until it stops in place. Slide thetop tier (2) over the stabilizer until it stops.The top tier will rest on the lip of thestabilizer.

6. The crown (1) fits over the stabilizer. Thewidest part of the crown should be at thetop of the fountain.

Preheating the BasinClassic and Select models:

Plug the appliance into an electrical outlet.Move the HEAT/OFF switch to HEAT. Thetemperature is preset to a standard mediumtemperature which will keep the fonduewarm and still be hot enough to meltchocolate in the basin if you choose to doso. Allow the basin to preheat for 5minutes prior to adding any fonduerequiring heat.

Elite and Signature models:Make sure the basin (7) is tightenedsecurely to the base (8) by turning itclockwise. Do not over-tighten. Plug theappliance into an electrical outlet; fountainshould beep once. Press the ON/OFF/POWER button. The green LED lightabove the power button will light upindicating the fountain is on. A yellow LEDlight will be on above the OFF temperatureposition. Each time the HEAT button is

pressed, the temperature will cycle to thenext heat setting. A red LED light willindicate the current temperature setting.This light should blink intermittently whenheat is on. Set the temperature to HIGHfor about 5 minutes prior to adding anyfondue requiring heat. Turn thetemperature down to the operatingtemperature before fondue is added to thebasin.

CAUTION: DO NOT TOUCH THEFOUNTAIN BASIN WHILE IT ISHEATING! DOING SO MAY CAUSEINJURY.

CHOCOLATEPREPARATIONWe strongly encourage you to use SephraFondue Chocolate with your fountain. It hasbeen specially formulated to flow perfectlythrough the fountain when properly melted andhas an exquisite taste and aroma.

You may melt the chocolate in either itsmicrowave-safe packaging, in a microwave-safebowl, in a double boiler, or directly in thefountain basin.

When melting Sephra Fondue Chocolate inthe microwave:ALWAYS MELT ON HALF-POWER ORCHOCOLATE MAY SCORCH. Followinstructions on chocolate packaging. Pourmelted chocolate into the heated basin andallow it to sit for 5-10 minutes; stir occasionallyuntil it reaches a uniform temperature.

When melting Sephra Fondue Chocolate inthe fountain basin:Melting chocolate directly in the basin takesapproximately 45–60 minutes, depending onthe fountain model and heat setting. Meltchocolate chips in the basin one pound at atime. Use a spatula to scrape chocolate fromthe basin and stir every 5-10 minutes whilemelting. Melt Dark and Milk chocolate on highheat (if available on your model) and Whitechocolate on medium heat.

WAIT UNTIL CHOCOLATE ISCOMPLETELY MELTED BEFOREINSERTING THE AUGER OR TURNINGON THE MOTOR.

RecommendedChocolateTemperatures(Signature and Elite models only)

Chocolate will flow best when fountain isoperated at room temperature; coolerconditions may require a higher temperaturesetting. Be sure to follow proper meltinginstructions. Chocolate in basin should bescraped from the bottom of the basin with aspatula and stirred periodically while in use toprevent scorching.

Use the first temperature setting listedunless the chocolate fondue is running toothick.

Using Other ChocolateThinning directions for chocolate otherthan Sephra Fondue Chocolate. Most other chocolate will require thinning tobe able to flow properly through the fountain.The most common thinning agent is a flavorlessoil such as vegetable or canola oil. Cocoabutter may also be used. For every 5 poundsof chocolate you will need to useapproximately ½-1 cup of oil to obtain theproper consistency. The amount of oil requiredwill vary with the type and brand of chocolate.For best results, begin with a chocolate that iscouverture (made with at least 32% cocoabutter). Thinning agents will noticeably dilutethe taste and aroma of the chocolate. Neveradd water to chocolate as this will cause it toharden!

Checking the Fondue’sViscosity (Consistency)Sephra Fondue Chocolate, when meltedcorrectly, will not need to be tested with theviscosity funnel. A viscosity funnel has beenincluded with your fountain. Prior to startingthe fountain, check to see that the fondue you

are using is the right viscosity to flow throughthe fountain. Simply fill the viscosity funnelwith the fondue and time how quickly it drainsout. It should drain completely in 8–10 seconds.If the fondue drains in less than 8 seconds, itmay need to be thickened. If the fondue takeslonger than 10 seconds to drain it needs to bethinned. For chocolate fondue, add additionaloil. For other fondue recipes, thin with anyliquid consistent with the fondue’s flavor (i.e.milk, juice, cream, water).

STARTING THEFOUNTAINTime to have some fun!1. Ensure that the fountain is on a sturdy,

level surface.2. Make sure you have followed the

“PREHEATING THE BASIN” directionson page 10.

3. Turn the motor on. For Signature and Elitemodels, press the START button. ForClassic and Select models, move theSTART/STOP switch to the STARTposition. The auger will carry the fondueup through the cylinder, allowing it to flowdown over the tiers and back into thebasin. Air is often trapped inside thecylinder when the fountain is first turnedon. Air in the cylinder will cause thefondue curtain to gap. To remedy this,simply turn the fountain off for about 15–30 seconds and then turn it back on.Repeat this procedure if necessary.

4. Scrape the chocolate from the basin witha spatula and stir occasionally throughoutuse to avoid scorching.

5. Enjoy dipping a variety of foods into thecascading fondue. See the list ofsuggested dipping items in the manualintroduction for ideas. Reusable forkedskewers are provided with your fountain.Additional skewers may be ordered onlineat www.sephra.com.

Adding AdditionalFondue to the FountainFor chocolate:As the chocolate is depleted, add more meltedchocolate to the basin. DO NOT ADDUNMELTED CHOCOLATE CHIPS TO THEFOUNTAIN UNLESS YOU FIRST STOP THEMOTOR AND ALLOW TIME FOR THE CHIPSTO THOROUGHLY MELT. Failure to do so maycause the fountain to malfunction!

For other fondues:When running other fondues, be sure thefondue you are adding is near the sametemperature as the fondue running throughthe fountain. Adding fondue of a differenttemperature could affect the flow. Always checkthe viscosity of the fondue with the viscosityfunnel provided before adding it to the basin.

CLEANING ANDMAINTENANCEClean each fountain component thoroughlybefore and after every use. This will help keepthe fountain in excellent working condition foryears of continued use and enjoyment. Neveruse abrasive scouring pads or scouringpowders to clean the stainless steel basin ortier set components.

If tier set is plastic, be careful to pull piecesapart rather than twist them as plastic maycrack if twisted against notches.

1. When finished using the fountain turn itoff. On Elite and Signature models, pressthe POWER/ON/OFF button. On Classicand Select models, move the START/STOP switch to the STOP position andthe HEAT switch to the OFF position.

2. Always unplug the power cord from theelectrical outlet before cleaning thefountain. Never permit the electrical cordto come into contact with water. Allow thefountain to cool approximately 10 minutesbefore cleaning as fountain basin will behot.

3. With a paper towel or food handler glove,remove the crown from the top of thecylinder and lift the auger out of thecylinder. Use a spatula to scrape excesschocolate from auger back into thecylinder as you lift it out.

4. Using a rubber spatula, scrape anyremaining chocolate or fondue off thetiers, allowing it to flow down into thebasin.

5. Remove the tier set and transfer it to asink to disassemble. Rinse parts off with

hot, soapy water. All removable fountaincomponents are dishwasher-safe. Plasticcomponents will stay looking newer if youwash them by hand in hot, soapy waterand then rinse and dry them thoroughly.ALWAYS USE THE TOP RACK OF THEDISHWASHER WHEN WASHINGPLASTIC FOUNTAIN COMPONENTS.IF THE HEAT ON YOUR DISHWASHERIS TOO HIGH, IT MAY WARP THEPLASTIC PARTS.

6. Pour the leftover chocolate into a sturdyplastic bag for disposal and scrape out ofbasin with a spatula. NEVER POURCHOCOLATE DIRECTLY DOWN THEDRAIN. Chocolate poured down a drainmay harden in the pipes and result indamage and blockage of the drain system.For sanitation purposes, we do notrecommend reusing the chocolate.However, letting the chocolate harden andremelt will not compromise its quality.

7. Wipe the base of the fountain with a warm,damp cloth to remove any residue and drythoroughly. DO NOT IMMERSE THEBASE OF THE FOUNTAIN IN WATEROR ALLOW LIQUIDS TO ENTER ANYVENT HOLES IN THE HOUSING. Doingso will cause damage to the electricalcomponents and void the productwarranty.

TROUBLESHOOTING1. The fondue is not flowing evenly over all

of the tiers:This may be because:a. The fountain is not level. If the fondue

is flowing to one side more thananother, move the adjustable feet toraise that side of the fountain.

b. Air is trapped in the cylinder. Turn thefountain off for 15–30 seconds andallow the air to escape. Turn thefountain back on. Repeat if necessary.

c. There is not enough fondue in thebasin. The Signature, Elite, and Classicmodels require 4 pounds of chocolateor 7 cups of fondue in them at all timesto create a solid curtain. The Selectfountain requires a minimum of 3pounds of chocolate or 5 cups offondue. If you start to see gappingduring your event, add melted SephraFondue Chocolate or other fondue tothe fountain.

d. A food item is blocking the flow offondue at the base of the cylinder. If afood item fell into the basin and couldbe blocking the flow, simply stop thefountain motor, remove the food itemwith a spatula, and start the motor againto resume the flow. Air may becometrapped in the cylinder as a result. Ifthis happens, refer to the instructionsabove (1b).

e. The fondue is too thick or thin. Refer to“CHECKING THE VISCOSITY OFTHE FONDUE” on page 11.

f. The White or Milk chocolate hasthickened. If White or Milk chocolategets too hot it can scorch and thicken.Add vegetable oil or cocoa butter alittle at a time to thin it out. If it hasbecome very thick you may have toput it in a blender on medium speeduntil it is thoroughly mixed beforereturning it to the fountain.

g. Small food particles are mixed in withthe flowing fondue. If you use dippingitems that have crumbs, such ascookies or cake, the crumbs may comeoff in the fondue. Small crumbs will not

damage the fountain, but they maycause gaps in the fondue curtain. Ifthis occurs you will need to wait untilyour event is over and dispose of thefondue.

2. My fountain will not turn on: Ensure thatthe electrical plug is placed securely inthe outlet and try the fountain in variousoutlets. If this does not work, check thecircuit breaker controlling the electricaloutlet. On Elite and Signature models,make sure the POWER/ON/OFF buttonhas been pressed and that the fountainbasin is securely tightened on the base.

3. My fountain motor has stopped working:The motor is equipped with an automaticshut-off mechanism which is activated ifthe motor overheats. Overheating occursif the fondue is too thick and is puttingextra stress on the motor. Turn the motorand heat off and allow the fountain to sitfor approximately thirty minutes beforerestarting. With the viscosity funnel,check to be sure that the fondue is theappropriate consistency before runningit through the fountain again.

4. The auger is not turning or is turningslowly: The auger must fit into place overthe spindle centered in between the basinpegs. Twist the auger clockwise to makesure it is properly positioned. You shouldfeel some resistance as you turn the auger.If your auger rests on a center spindlewith a horizontal pin in it, make sure thepin is centered in the spindle. This pincan be adjusted with an Allen wrench ifneeded.

5. Chocolate has hardened in my fountain:If the fountain is not cleaned immediatelyafter use, the chocolate will harden. Whenthis occurs, DO NOT TURN ON THE

MOTOR. Doing so will cause the motorto burn out. Turn on only the heatingelement to remelt the chocolate in thebasin. When the chocolate has melted,remove the tier set and soak it in hot, soapywater. DO NOT MICROWAVE TIER SET.

6. My fountain is loud: If there is no fonduein the fountain, the auger will make a noisewhen moving against the cylinder. This isnormal and the fountain should operatequietly once fondue is inside the cylinder.

ADDITIONAL TIPS1. Always observe proper fondue etiquette

when using a Sephra Home ChocolateFountain. Provide each guest with a plateand skewers. Two-pronged plastic, metal,or wooden skewers may be ordered atwww.sephra.com. Guests should use aseparate skewer for each food item. Forhealth and safety precautions, it isrecommended that food not be eatendirectly from the skewer but transferredto the guest’s plate and then eaten.Always provide a generous supply ofnapkins.

2. Cut all dipping items into small, bite-sizedpieces so they may easily be placed onthe skewers. Those enjoying the fondueshould never “double dip” and place afood item that has been bitten back intothe chocolate or fondue flow.

3. Oil-based colorings and flavorings maybe added to chocolate for a unique touch.These can be ordered online atwww.sephra.com or at craft or bakerysupply stores. Water-based colorings andflavorings found at most grocery storeswill cause the chocolate to harden.

4. Do not add chocolate or fondue that willexceed the basin’s maximum capacity.

Doing so will cause the fondue to overflowfrom the basin when the motor is turnedoff.

5. If not cleaning the fountain immediatelyafter use, make sure to remove the tier setfrom the fountain so chocolate will notcause the parts to harden together.

ADDITIONAL FONDUE RECIPES

Every fondue will have a different visual appearance when run through the fountain. Many fondues willnot curtain as well as chocolate does. This is normal and due to the natural variances in different foodproducts. Always test the consistency of your fondue with your viscosity funnel before use. See“CHECKING THE FONDUE’S VISCOSITY” on page 11.

CARAMEL5 parts liquid caramel

1 part waterMix caramel and water in saucepan over low heat and then transfer to the fountain. Caramel naturallythickens as it is heated and worked with. Periodically thin out with water throughout event (approx. every 45minutes or as needed). Caramel should be stirred occasionally in the basin to help prevent air bubbles fromforming.Heat: Varies depending on type of caramel used

Suggested dipping items: Apples, pears, chocolate-covered pretzels, cookies

NACHO CHEESE5 parts canned nacho cheese1 part water

Start with any store-bought liquid nacho cheese. Large cans are available at many wholesale stores. Mixcheese and water in a saucepan over medium heat. Stir frequently to achieve the correct consistency, andthen transfer to the fountain. Add more water as needed.

Heat: Medium

Suggested dipping items: Tortilla chips, mini tacos, breadsticks, cocktail sausages

BBQ SAUCE6 parts medium-grade* BBQ sauce

1 part water or apple juice

Mix BBQ sauce with water or apple juice in a saucepan over medium heat. Stir well and add to the fountain.

*Premium-grade BBQ sauce will require additional thinning.

Suggested dipping items: Buffalo wings, ribs, chicken strips

Some brands of ranch need to be thinned with water to flow properly. Thin if necessary and add to fountain.
