barnsseemparticularlywell-suitedtobein-corporatedintoinns.Allofusarefamiliarwiththeoldadageaboutclosingthebarndoorafterthehorseshaveescaped.Inthehospitalityindustry,innkeepershaveopenedtheirbarndoorstoguests.

AperfectexampleofthisisThe Inn at the Round Barn FarminWaitsfield,Vermont.The19thcenturyfarmhouse,andattachedhorsebarn,wereconverted,in1986,toaninnbyJackandDoreenSimkowiththeirdaughterAnneMarieDeFreest,endingthe155-year,seven-generationJosylnfamilystewardshipoftheproperty.AnneMarienowrunstheinnwithpartner,TimPiper,andtheirdedicatedstaff.

STRAWBERRY MARSALA SAUCE of the Fairville Inn

Thisversatilesauceisveryeasytomake.AttheInn,weoftenpairitwithourpear-raisinFrenchtoastsoufflé(pictured),aswellaswithavarietyofwafflesandpancakes.Italsomakesawonderfuldesertsauce(tryitwithpoundcakeand/oricecream).Whileyoucanusefreshstrawberries,wepreferfrozenforthisrecipe.Thesaucewillfreezewellformonths.Makesabout4cups

Ingredients:2-1/2 lbs. (40 oz.) frozen strawberries1-1/2 cups sugar1 cup Marsala wine (or more to taste)2-3 tbsp cornstarch1-3 tsp fresh lemon juice (optional)

Method:1.Inalargepotcombinethestrawberries

andsugar.Addwatertocoverbyaboutoneinch(about5-6cups).Bringtoaboilovermediumheat,stirringoccasionally.Reduceheatandsimmer,partiallycovered,foronehour,stir-ringoccasionally.

2.Strainthestrawberrymixtureintoabowl.Pressthesolidswiththebackofalargespoontoextractasmuchliquidaspossible.Discardthesolids.

3.Rinsethepotinwhichthestrawberrieswerecooked.Returntheliquidtothepot(youshouldhave4-5cups).AddtheMarsalaandsimmeruntiltheliquidisreducedtoabout4cups.Blendthecornstarch(usingthehigheramountforaslightlythickersauce)withanequalamountofMarsalaorcoldwater,andquicklystirthemixtureintothesauce.Bringthesaucetoaslowboil,stirringfrequently,untilitthickens.

4.Letthesaucecoolforafewminutesandthentasteforacidity.Ifnecessary,addtheoptionallemonjuice,oneteaspoonatatime,totaste.

IntheFallof2011myhusbandandIwerefacedwithadecision.Letmefillyouinonafewdetails:wehaveaninvestmentproperty.Behindthemainhouse,wasalargegaragethathadoncebeenare-

upholsteryshop.Thesedays,ithasjustbeenusedforstorage.(Italsowashometosomeraccoonsandsquirrels!)Ourcontractorhadsaidtous,‘Youneedtodecidetofixthisbuildingup,ortearitdown!’

So,weaskedhimforaquotetoturnthespaceintoaluxurybedandbreakfastsuite.Ithadallthebones,water,hydroandsew-ageallwithinit.Withsomedesigndecisionsandourfingerscrossed,wewentaheadanddecidedtoresurrectthespaceintosome-thingwonderful.

Wedecidedon700squarefeet.Thatwouldstillleaveusaspaceontheendofthebuildingforstorage.Thetearingoutoftheoldwood,fixtures-wallsuponwallsofdamageddrywallandinsulationfilledfourdumpsters.SurprisingwhatyoufindinaRenoisn’tit?Whatwentbackinfilledtwopick-uptrucks.Astherenovationstartedtotakeshape,Idecidedwherethewallsand

roomsweregoingtobe.Itwasveryexcit-ing.Thegoodnewsisthatthereweren’tmanyglitches,andthecontractorsworkedfast.Infactittookonlyamonthtohavethespacetotallytransformed!

IwasafrequentshopperattheReusestoreandatthelocalbuildingstores.Wefoundafivefootluxuryshowerforhalfprice.Thewindowscamefromawindowcompany,whichwasputtingnewsamplesintheshowroom.Ourbestfriendsgaveusthebeautifulfrontdoorthattheyhadneverused.Weboughtacosyfurnacethatfitperfectlybetweenthestuds.Beforeweknewitwewereatthepaintingandfinish-ingstage.

WelovetheEcopaintline,asitisarecycledpaintthatisinexpensiveandgoesonlikeadream.Myhusband,John,isagreatpainterandwenttotownpaintingthesuite.WeputanelectricDimplexFeath-erstonfireplaceinthelivingroom-itaddsgreatambiencewithoutthehassleofawoodfireplace.

Timetostagethesuite.Thebedroomwassolarge,22x16,iteasilyaccommo-

datedaSertaKingbed,achaise,anddeskandchair.ThekitchenettewasfurnishedwithalovelywroughtironsetthatIboughtfromanestatesale.IcoveredthechairswithSurefitcottonchaircovers.Thelivingroomwasagrouping:asofabedthatIboughtfromafriend,andtwocomfychairs,onefromaneighbor,andtheotherwescoredattheReusestore.Wesavedagreatdealofmoneyasthekitchenweputincamefromourhouse.(Weweregettinganewone.)Ourbudgetwasfor20kanditcameinat30kduetounexpectedsurprisesandthemanydumpsterloadsthatwereremoved.
