Mixx in 2005. Here’s how you can make quick, delicious spring mixes just like Scaglia’s.
White Gold Salad {serves 4-6}Endives provide a low-calorie base for this salad but still pack a whopping amount of vitamins A and K and folate. Heart of palm and asparagus liven up the texture.
2 bulbs Belgian endive2 bulbs (small) fennel1 lb. asparagus (green, white or purple)16 oz. heart of palm1 bunch watercress1 radicchio (small)pinch sea salt and pepper4 oz. shaved Parmesan cheese
Blanch asparagus and chill in ice bath. Set aside. Separate endive, and slice fennel, heart of palm and radicchio. Assemble asparagus and endive in fan pattern on serving plate. Toss fennel, heart of palm, watercress and radicchio in bowl and place on plate. Drizzle tarragon-Dijon vinaigrette over plate, and garnish with shaved Parmesan. Salt and pepper to taste.
CrimSon SWeet GreenS Salad {serves 4-6}Fresh fruits prepare the palate for summer’s bounty, and walnuts add a hint of crunch and protein.
3 heads butter lettuce (also known as Boston/bibb lettuce)2 mangos, sliced2 cups strawberries, quartered2 blood oranges, peeled and segmented1 cup walnuts, toasted6 oz. Maytag blue cheese
Toast walnuts in 350-degree oven until golden brown. Set aside. Clean and separate lettuce leaves. Combine all ingredients and toss with Crimson Berry Vinaigrette. Top with blue cheese.
tarraGon-dijon VinaiGrette
10 tbs. extra virgin olive oil2 tbs. fresh tarragon, chopped4 tbs. white wine vinegar2 tbs. Vidalia onion, minced1 tbs. Dijon mustard2 tbs. organic cane sugarpinch sea salt and pepper
Combine vinegar, mustard, sugar, salt, pepper and tarragon in food processor until blended. Add olive oil until emulsified. Add chopped onion and pulse a couple of times.
CrimSon Berry VinaiGrette
8 tbs. extra virgin olive oil3 blood oranges (juice and zest)3 strawberries2 tbs. local honeypinch sea salt and fresh cracked pepper
Combine strawberries, juice and zest of orange, honey, salt and pepper in food processor. Add olive oil until well-mixed.
