First club you played in Dubai? Casa Latina, a venue I found (I liked the name because of my Latin roots) at the back of a restaurant in a then 2* hotel where nothing was going on and built it up from scratch.

First track you played? Ever?!!??? Damn, I think it was Thunder & Lightning - Bumpin Bus Stop.

Best change in the city’s club scene? The rise of the independent nights, trying to build small scenes for genres that were previously not catered for.

Worst change in the city’s club scene? More big name brand clubs trying to be in Ibiza when really they are in a totally different and in many ways much more interesting place culturally. That and the rise of the hipster DJ culture and Portlandia style DJ nights where everyone now has their own DJ night, minus the DJ skills and years of musical selection. Also DJs who are jack of all trades but masters of none. Trying to be relevant in every scene usually lands you flat on your face or waters down the integrity of those scenes.

Best club still running from when you started (or best you’ve played if it’s since closed)? Well I would have to say the vibe we have at our Deep Crates Cartel nights wherever they are. It started at Casa but that place has changed and although it’s not bad, it will never be the same as it was. But all our DJs have improved massively and can create a perfect vibe wherever they are, it’s about the music and lack of pretentiousness rather than the club itself.

Key to longevity as a DJ is… Being in it for the right reasons is key, if it ever stops being about the music and artform then quit, or kill yourself. Good music is timeless and so is a DJ that plays it in innovative and evolving ways. Never rest on your achievements and always stay humble, don’t compare yourself to other Dubai DJs, find your own style and listen to the greats.

The last pop star I liked was… Pop Star?! Probably, if you can describe her as a Pop Star, Amy Winehouse. I thought she had a unique vintage sounding voice that always took me back to the 50s. What a loss.My sound is best described as…Riff Raff have recently been described as a ‘Sonic Kick in the Balls’ I kind of liked it over the usual ‘Guitar Rock Band’ thing. Best piece of advice you’ve received? Honesty is the best (and only) policy.What’s your musical guilty pleasure? Having a very understanding wife that allows me to indulge and invest in my hobby. Which I do, regularly.When I make it, the one thing I want on my rider is… I want to say a coffin full of orange Smarties, but that was one of my old buddies fetishes, so I will go for ‘someone to change the kit over from right handed to left handed for me’. Being a ‘lefty’ this is always a painful experience for me and the sound engineer, especially when we are one of the middle bands.My musical motto is… Play how you feel at the time. Riff Raff enable me to do this and give me the latitude to jam a little. As long as it is in keeping with the song, no one pulls you up for it.Best gig you’ve played? The Fridge gig for the launch of a charity compilation album ‘Inside Looking Out’. It was then I decided, much to the surprise of our then bass player Sean Allison, to experiment with ‘drummers face’ whilst playing. I though it looked cool; he thought I was in labour. And the worst? One of our Ratsky gigs that I am trying to erase from my memory. Riff Raff being ‘Rock’ found ourselves headlining (playing last some call it) a Death Metal night. It coincided with the 40th anniversary of the release of Mike Oldfield’s Tubular Bells so Sean Allison decided that he wanted to pay tribute to Mike and do a mash up of ‘Whole Lotta Love’, with Tubular Bells taking the place of the weird bit in the middle. We played terrible and it just sounded weird. Best lyrics of all time? Porcupine Tree from the song ‘Remember Me Lover’ from the album The incident. ‘I didn’t want to feel like a slave to your mood swings, and I’m not going to say anything I wouldn’t say behind your back’.

haired EDM star is back in the Emirate, this time bringing his DJ – and cake hurling – skills to the grand opening of the new Cheesecake Factory on Jumeirah Beach Road.A PR for the chain confirmed that Steve would be flinging

tougher, pre-baked cakes which held together better when hurtling through the air. The news has already hit social media, with one commenter, Mary Berry, arguing that Steve’s cake was likely to be ‘soggy and deflated’ much like his stale DJ routine. Steve Aoki could not be reached for comment.

The Westin hotel has sat proudly at the bottom end of Dubai Marina for many years and is home to a number of great restaurants and one great brunch. Nestling in the left hand corner now sits El Sur, a restaurant with a Spanish edge and the promise of some unique experiences.

El Sur has launched an elBulli night every Monday and for those who are unfamiliar with this name, it was a restaurant in Catalonia until it closed in 2012. But to call it just a restaurant does it a disservice, it was perhaps one of the greatest places to eat in the world, ever. Ferran Adrià and his team created 40+ new dishes every year for a tasting menu that would revolutionise modern kitchens and impact food forever. No pressure then.

After walking through the entrance foliage, we were shown to our table out on the terrace with a lovely view across the water and The Palm in the distance, given some menus and left to soak it all in. The first thing that hits me was yes, there are 8 courses but apart from our wine nothing stands out as Spanish. Which is a shame as it’s a country rich in produce and dishes. But the arrival of a tart/sweet gin fizz cocktail, with a lovely meringue-like foam on top made us forget our complaints.

The 2nd course was made up of mouth size bites of caramelized peanuts with a chocolate and curry coating. Sadly, our waiter didn’t know what they were which is always a concern, plus they didn’t really work: the flavours were indistinguishable and left just a dry nut taste in the mouth. We moved on to an olive Oreo biscuit with a cream filling, which was very pleasant.

Next up was a spoon containing a liquid mozzarella. This spherefication technique was invented by Ferran so they had better get it right and they’d nailed it – a rich, creamy cheese that popped in the mouth, utterly delicious.

Next was some beautifully prepared tuna with a blackcurrant jelly and then my favorite dish, the duck breast with seaweed and vegetable scallops, which was well executed and packed full of flavour. For desert we returned to spherefication but this time with a mango puree filling masquerading as an egg yolk on the menu and then some coconut ice cream and a raspberry lime sauce. A very good way to end the meal and cleanse the palette.

Billing your night as elBulli is a bold claim, and to a certain degree, it sets the expectation levels almost impossibly high. Being picky, some of the dishes need a bit more attention to detail, and waiters should really know what food they’re serving and how the dishes are prepared and taste. That said, they have met a high standard of cooking and if you’re interested in experiencing this type of modern cooking, then El Sur is a great start to your journey.
