Dear Rebecca,

How are you? I received your letter last week but did not have time to reply due to The exam that was going on. Now that is over, I am able to write to you the process of making tapioca crisps as you requested.

The basic ingredients used to make the delicious snack are tapioca, starch, salt and chilies. The chilies are optional for those who cannot take the pungency of chilies. The tapiocas have to harvested fresh from the fields but now that is too bothersome to do. So, most crisps manufacturers now prefer to get their supply from the nearby markets. Some manufacturers do their own buying while others depend on their regular supplies of tapioca differs from time to time depending on its availability.

After the tapioca has been cleaned, skinned and sliced, it is mixed with starch. The Tapioca is sliced using a special machine that can slice many tapioca in just short time. This is very convenient and time-saving to use. However, some smaller manufacturers cannot afford to buy the machine. They will then rent the use od slicers from the bigger manufacturers. The starch helps to make the tapioca crispy and crunchy.

Then, the tapioca is pressed and dried in another machine. Smaller manufacturers do this manually by using blocks of wood and air-drying the tapioca. Drying the tapioca before frying helps to maintain the rich flavors of the tapioca. After the tapioca is relatively dry, they are then fried on medium heat. Continuous stirring is necessary to prevent the crisps from sticking together. The heat from the fire must be watched over at all time.

Finally, the tapioca is seasoned with salt and chilies and left to cool on specially prepared racks. Workers will then pack them into customised plastic bags according to various weights. The plastic bags are later sealed and ready tobe sold.
