Popular Indian Recipes South Indian snack - Medu Vada

Urad dal - 1 cup Green chillies - 1 (chopped into small pieces)Pepper corns - 3 to 4 or 1/4 tsp freshly powdered black pepper Onions - 2 table spoon (chopped fine)Baking soda - 1/4 tspSalt to tasteOil for frying

Ingredients:

Method:

Soak urad dal in water for 5-6 hrs. For those looking to speed up the process, you can soak it in hot water for an hour instead.

Wash and clean the dal and grind to a smooth paste in the mixer(with approx 1/4 cup water). Make sure that you use very little water or else you would not be able to shape your vadas perfectly. The right consistency of the batter is extremely important to get the shape right and also for the texture of your medu vadai.

Take out from the mixer, add in the chopped onions, green chillies and salt and mix well. Make sure to mix rapidly and continuously for about 5 minutes. This is to make sure that the batter has enough air trapped in it to give you vadas that are crispy on the outside and soft on the inside. This is especially important for those grinding in the mixer.

Apply some water on your palms. Take a small quantity of the batter and make a ball with it. Now with your thumb flatten it lightly and make a hole in the centre. Fry in hot oil till golden brown.

Serve hot.

Hampi is a town in North Karnataka and also a UNESCO World Heritage Site. It was the capital of the erstwhile Vijayanagara Empire (the largest empire in post-mogul India) which stretches over at least three states - Karnataka, Maharashtra, and Andhra Pradesh. Hampi lies on the banks of the Tungabhadra River, and it is dotted with the ruins of over monuments. The ruins date back to the 15th Century and are spread over an area of 25 square kilometres. Hampi has numerous temples, monolithic structures, figures and monuments – all exhibiting rich Hindu architectural culture. The Vittal temple, Virupaksha temple, and Kodandarama temple are examples of the same. Most of the ruins are along the road leading from Kamalapura to Hampi. Three kms down the road, on a commanding site, stands the temple of Malyavanta Raghunathaswamy. It is built in the Dravidian style. Strange-looking fishes and marine monsters carved along its outer walls are worth noticing.
