BACKGROUND

Character of the tea and its taste is determined by the soil characteristics, the climate and the rainfall.

Tea affects the taste buds, it is difficult to replace a particular variety with a substitute.

This explains why certain types are favored by certain countries: for example CIS countries favor Indian and Sri Lankan teas where as UK & Pakistan favor Kenyan Tea.

Global tea Industry is largely dominated by India till recent times – the second largest producer and the largest consumer of Tea.

India is succeeded by China and followed by Kenya, Sri Lanka, Vietnam and Indonesia in the production Hierarchy of countries .

Tea contains 4 to 4.5% of caffeine, which is one-third the amount found in coffee. Tea contains small quantities of tannic compounds technically called polyphenols

(not tannic acid used in tanning leather), vitamins and a number of minerals in trace amounts.

The difference is due to intensity of the color and taste as a result of fermentation. The phenolic compounds are oxidized by exposing leaves to varying temperature and humidity.

Black Tea is exposed to fermentation for a longer period while Green Tea is exposed to minimal treatment. Period of exposure for Oolong tea is between the periods of other two types.
