- Parmesan Cheese

We found this recipe asking an old lady from a small village.

She makes it the way the tradition suggests, every family has his

own recipe and secrets, All the women gather together chatting

when folding cappelletti .In some families they fold cappelletti like

small navels, because it’is very smart and people say it’s better.

This is a dish for particular occasions such as Christmas ,

Easter or New Year’s eve.

They are a tradition in this region called Emilia Romagna, and

they come from Modena. In Reggio Emilia they are called

Cappelletti, in Bologna they are called Tortellini.

Generally they are served with broth or cream.

They’re really good!
