Testing & Certifi cation:Testing of knowledge gained during the winter training will take place at the end of each session and students will be graded with a pass or referral. A 70% or better score in each test is equivalent to a pass. Less than this is a referral and subject to a performance assessment during the on-the-job session where both knowledge and practice are assessed. The certifi cation process involves the assessment of competence to operate equipment safely and effi ciently to standards that have been set within performance objectives. Performance objectives are both practical and knowledge-based skills leading to competence.Competence is defi ned as follows: A student’s ability to consistently apply qualifi ed skills and knowledge to a given job activity.Hennepin Technical College verifi es the recommendation and provides Certifi cates of Completion.

Program content:• Introduction to Equipment Operation• Compaction of Soil, Aggregate

& Hot Mix Asphalt• Grades and Blueprints• Equipment, Maintenance, Trouble

Shooting and Costs• Front-End Loaders and Rollers• Bulldozers and Rollers• Backhoes, Excavators and Rollers• Pavers and Rollers• Motor Graders and Rollers• Scrapers and Rollers

Program delivery: This unique program is delivered in 2 parts.1. Interactive classroom instruction which takes

approximately 10 days to complete and will take place during the winter, non-construction season.

2. On-the-job instruction that focuses on all aspects of the actual running and operating of a selected piece of equipment with the close supervision of an experience instructor/operator who will teach specifi c skills required for competent operation and certifi cation. As part of the operation, the student will put into practice many of the skills learned during the winter training session.

Probably more grumbling and groaning than cheering. Rather than sitting in a boardroom or classroom, why not disguise your team-building training with an activity that everyone enjoys – eating! And what better way to get a group together than over food.

Good food, good company under the tutelage of a fabulous chef/trainer is in store for your team!

Chef Dave will meet with you to devise a strategy to put together teams in the kitchen, assign them tasks and get them working together to prepare a wonderful meal and experience. The fi nale is in the meal! You will work with Chef Dave to determine a menu, timing and issues that you may want to resolve in building your team. Not only does he have great experience and insight into integrating teamwork into cooking, he also makes it tremendously fun!

Cooking up Success!

Dave Eisenreich has 33 years hospitality experience as cook, sous chef, and chef. He continues his industry involvement as an on-call chef for two caterers and as personal chef. During his 10 years at HTC,

Dave has taught many courses, among which are baking, decorative works, global cuisine, fundamentals of wine, cooking with ale and lager, bar and beverage, and human relations management.Representing Hennepin Technical College, Dave was nominated for Award of Excellence in 2006 and Chef of the Year 2008 by the American Culinary Federation, Minneapolis Chapter. Your computer center was part of my life for months and it makes me sad I will not be taking any more classes. I want to thank you for the professional and friendly environment you provided me and continue to provide for other students. When I fi rst met with you about the classes and you explained how the learning model worked, where the student would learn at his/her own pace, I was a little skeptical because I had always attended structured classes of short duration.

During my very fi rst class, which happened to be a PowerPoint class, I was amazed at how much I learned. I liked the self-pace methodology because I did not feel pressured to keep up with other students. Following the book instructions and samples was a very effi cient way to spend my time, and having you and/or Brenda present to help whenever I had questions or ran into problems, was amazing. I have taken computer classes in the past and I can honestly say that I had never learned as much before as I did in your classes.

I am blessed to have had the opportunity to attend Hennepin Technical College as much as I did. I am practicing my newly acquired skills and love my confi dence and self-suffi ciency.”

Fireground StrategiesIncident Command, Fireground Organization & Size-Up This course covers the fi reground experience from arrival through termination. What acts or failures to act cause deviation amplifi cation that pushes the fi reground action plan to look much different than what was originally intended. This course will examine the routine operations that are overlooked, tossed out the window as not important, or carried out in a haphazard manner due to complacency or apathy. It will show how paying attention to the little, many learned in Firefi ghter 1, keep the operation on track and safe. Catering FundamentalsDesigned for those interested in operating a Food Cart, being a Personal Chef, running a Catering Service or gaining an understanding of licensing a food service operation. What you’ll cover: • Why do you want to start a food business in Minnesota? • Overview of Food Safety. • Licensing, who needs one and how to obtain one for a full service restaurant, food cart, personal chef or temporary vendor. • Cooking for a crowd offers challenges that require planning and care. This course will give you practical techniques to make the catering process easier and safer. 0.9 CEU539: R, March 22 – March 29, 5:30 pm – 9:30 pmEisenreich, BPC2 sessions, $150

Cooking for Health and WellnessEveryone seems to know that some foods, in excess, are not good for you. Ingredients that supply a lot of fat can create a dish that is satisfying and tasty. Alternatively, low fat ingredients often are good for you, but lack a pleasing “mouth feel” and leave the diner unsatisfi ed. This course is designed to use elements in cooking that add texture, fl avor and color to make meals more enjoyable and are also good for you. Inspiration for the dishes that you will prepare come from a global perspective of food preparation and technique. Menus from Asia, regional cuisine of the United States and the Caribbean give us a multitude of choices. Jerk pork, for example starts with a lean cut of pork loin and develops it’s fl avors using spices and cooking technique that results in a fl avorful, satisfying and healthy treat. The classes will explore salads, soups, entrees, breads, side dishes and desserts. Beyond the enrollment fee, the course also requires $50 lab fee for ingredients. Note: bring supply containers for yourself since there will be enough food to bring some home. If you have a favorite knife you like to work with, please feel free to bring it. Wear comfortable shoes and clothing. 0.8 CEU538: R, February 9 – February 16, 5:30 pm – 9:30 pmEisenreich, BPC2 sessions, $95
