Yellowstone's Grand Canyon is one of the most iconic sites in the region, providing several stunning vistas as you go along. This almost 40 km long canyon is a large and the most famous canyon in Yellowstone.It is hugely popular among visitors due to its scenic views of the Lower and Upper falls,as well as the fascinating pink and yellow coloured rocks. There are several viewpointsand points of interest along the length of thecanyon. The canyon's beautiful shades of colours are an iconic part of Yellowstone. The mineral stains due to the activities of water have given the rocks of the canyon sucha pleasant tint of colours, it is truly a sight to behold. The geology of the canyon is not completely clear. It was created due to erosionover hundreds of thousands of years, and thegeothermal nature of the area is still prevalent,which can be seen by the hot springs throughoutthe canyon.

MANGO MOUSSE CHICKEN BREAD STUFFED ROULADEN
1.Peel the mangoes and make a puree ,keep it aside.2.Dissolve gelatin in little hot milk,set aside.3.Simmer the remaining milk and add mango puree,mix well.4.Add sugar,mix well,when it comes boil add gelatin mixture.5.Finally add the mango Essence,mix well.6.When it comes thick, remove from the fire and cool it.7.Then put it in the refrigerator for three hours,garnished with fresh cherries.

1. 4 no. chicken breasts, pounded to 1/8-inch thickness
2. Freshly ground black pepper
3. 200 gms processed cheese
4. 5 gms oregano
5. 4 no. chopped green chilli
6. 4 no. bread slice, moistened
7. Salt
1. Arrange beaten flattened chicken breasts in a single layer
2. Season with salt and pepper.
3. Layer with grated cheese, oregano, chopped green chillies and optional lemon zest
4. Moisten the bread with as much water as is needed to make moist add seasoning
5. Roll the chicken carefully into a roulade in clingfilm followed by aluminium foil/ muslin cloth
6. Boil in veg stock for 30 min
7. Cool and slice with accompanying sauce / veg of choice

Matt is a renowned winemaker whose skills span 25 vintages – from small luxury wineries to the world’s largest publicly listed wine company to a wine start up that features his own label. And after more than twenty years of winemaking, his skills shine bright with Pinot Noirs in particular.
“I have always loved Pinot Noirs, and this area of Northern California is very special,” states Matt. “The Peterson Vineyard, which was planted in
1999, is in the small mountain town of Comptche. Because it’s eight miles east of the coast and 700 feet above sea level, there is a dramatic cooling effect that promotes slow, even ripening and yields rich, concentrated flavors. We had lots of rain in 2017 and the growing season was temperate, producing very intense, flavorful fruit.”
