It’s that time of year again. The smell of roasted turkey and pumpkin pies are in the air. When the year has

turned its circle, the Halloween pumpkins are gone, the leaves have all fallen to the ground and the chilly north

wind blows, we all know Thanksgiving will soon be around.

The Saratoga Resort & Spa staff are gearing up for another great holiday season. The kitchen will be whipping up

everyone’s favorite traditional Thanksgiving dinner with all the trimmings. Fireplaces will be burning brightly

making the Resort warm and cozy. There will be plenty of hot chocolate, baileys with coffee, hot tea, and espresso

to keep the crisp fall chill at bay.

Following Thanksgiving we gear up for the next big holiday: Christmas. Christmastime brings out the best in the Resort

with the festive décor, warm feather mattresses, the steam floating off the hot pools day and night, and with a few

snowfalls under our belt we’ll have begun to light the fireplaces more often and stock up on hot cider and hot cocoa!

With the mountains all covered in snow there will be plenty of winter activities to enjoy and beautiful scenery to

photograph for the perfect winter memories. Planning to getaway for the holidays? Check out this month’s edition for our

holiday menus, annual Ugly Christmas Sweater Party, and great gift giving ideas.

The Resort had just what you need if you’re in search of some adventure during your stay. Our

rentals include snowshoes, cross country skis, snow sleds and snowmobiles. Just $20 will get you

your own pair of snowshoes or skis and some great trail maps to explore the Snowy Range or

Sierra Madre. During the month of February we offer ROGO. Rent one pair of snowshoes or skis

and get the second pair free!

Snowmobiling is the most popular pastime during the winter months here in Saratoga. Take a Self

-Guided or VIP Guided Tour of the Snowy Range and you will quickly find out why. Explore over 500 miles of

snowmobile trails, great views, and super photo opportunities. With the VIP Guided Tours you’ll

be given a short safety training session, a helmet, and off you go with your certified snowmobile

guide. Experience the thrill of driving a snowmobile on the fresh powder of the Snowy

For all our hunters out there, I hope you had luck this season getting that trophy mount and stocking up on some great meat

for the winter. If not, there is always next year! Last month we touched on all the hunting opportunities the Platte Valley and

surrounding ranges have to offer. This month it’s all about the holidays, which are fast approaching. We’ll be cooking up a

Butternut Squash Soup with Pumpkin Butter

As soon as the fall nip appears in the air I start

looking for fresh butternut squash at farmer’s

markets just so I can make this soup.

This is an easy 3 step roast-blend-simmer soup.

Like apple butter, pumpkin butter is gently

cooked with sugar. To save time, pumpkin

butter can be found at most grocery stores near

the jams and jellies. Or you can substitute with

sour cream.

Ingredients:

Vegetable oil spray

1 2lb. butternut squash, halved lengthwise and

seeded.

2 cups low-sodium chicken broth

1/2 tsp. ground cinnamon

1/2 tsp. dried marjoram

1/2 tsp. dried thyme

Pinch of grated nutmeg

1 cup milk or half-and-half

Kosher salt and freshly ground black pepper

1 10 oz. jar pumpkin butter

Chopped pistachio nuts

Preparation:

Preheat oven to 375*. Spray a 9x13 inch baking

dish with the vegetable spray. Place the squash

halves, cut side down, in the dish. Pierce the skin

sides several times with a fork. Bake until the

squash is tender, about 45 minutes. Set aside until

cool enough to handle.

Using a large spoon, scrape the flesh from the

cooked squash into a food processor. Discard the

skins. Add 1 1/2 cups of the chicken broth,

cinnamon, marjoram, thyme, nutmeg and puree until

smooth. Transfer the puree to a large saucepan.

Whisk the milk into the soup over medium heat.

Season to taste with salt and pepper.

Ladle the soup into warmed bowls. Top with a dollop

of the pumpkin butter and sprinkle with chopped

pistachio nuts before serving.
