NEW COCKTAIL MENU More recently, Honi Honi has taken the best elements from their all-time favourite drinks menu and provided fresh updates with modern twists to their new menu. Expect to see firm favourites such as Kung Fu Master #3 making an appearance, as well as 15 new Tiki characters, highlights include: Jamaican Wela, Kalani, Mister Honi and Spicy Fifty Too. Re-focusing on the quality of alcohol and the balance within each drink, Honi Honi seeks to represent the authenticity of Tiki culture through the freshness their ingredients and to “live the island way” – providing a much needed tropical escape in the heart of Hong Kong.

Using the freshest juice, squeezed on the day, Honi Honi incorporates bespoke syrups (many of which are homemade). No juices from concentrate or with added sugar are used. Fuelled by island stories, fables and ancient gods, Honi Honi has updated with a few of their Tiki ‘characters’ - shedding new light on cocktail favourites and budding new creations. Each cocktail is part of the history that collectively makes up Honi Honi’s island culture. Jamaican Wela for example is representative of the “sun” in Hawaiian - artfully radiating it’s rays through its delicate slices of garnished apple. Mister Honi is one of Honi Honi’s new playful cocktails with a mini bamboo hat, combining Mitchter’s Rye Whisky, Mancino Amaranto Vermouth with Cartron Peach Liqueur, Cointreau, cinnamon syrup and a dash of Angostura Bitters. Similarly Kalani is representative of the “sky” with a bright tropical aqua blue. Single-handedly spearheading the rum rival in Asia, Max Traverse has over 14 years of experience in the high-end mixology sphere at the leading bars and lounges across France and London. Max began his hospitality career in France serving European royalty and celebrities in five star establishments, namely Trianon Palace (Versailles), The Village Montana (Tignes), Golf Plaza (Ste Maxime) and the renowned Miramar Beach Hotel (Cannes). He later moved to London, a booming scene of cocktail innovation, mixology and the birthplace of lounge culture. Stephane Levan is the General Manger of Honi Honi Tiki Cocktail Lounge. He has been working in the bar scene for a decade, working behind world class bars in France, Belgium, UK and the Middle East before moving to Hong Kong. These included the world famous Hotel de Charme “Les Airelles” in the French Alps of Courchevelles, Sainte Maxime in Golf Plaza, Loui Bar in the Conrad Hotel in Brussels, The Hoxton Pony in London and in Atlantis The Palm, Royal Mirage in Dubai.

MARIO CALDERONE | BAR MANAGER, HONI HONI TIKI COCKTAIL LOUNGE

Born and raised in Sicily, Mario has over 10 years of experience working behind the bar in renowned dining establishments and award-winning cocktail bars across London, Australia and Hong Kong. Rising up the ranks as a master craftsman in the art of mixology, he has held senior bar positions in!Novikov Restaurant and Zuma, two of London’s biggest A-list haunts as well as the Hoxton Pony, and Bar Lafayette in Australia. Making the move to Hong Kong in 2015, Mario has always been an avid fan of Honi Honi and since 2016 has grown to become an integral part of the team.

Tiki culture took off in the 1930’s when Don the Beachcomber opened his self-named Polynesian-themed bar and restaurant in southern California. Don quickly became famous for his unique rum and fruit juice cocktails, making his restaurant a hot spot for celebrities and Hollywood elites. Interest in Tiki culture exploded after WWII, when soldiers returned from overseas and brought back exotic stories of island life.
