HoW to MAKe

Ingredients:

3 ears of local sweet corn

1 ripe avocado, cubed

1 pint grape tomatoes, halved

¼ cup scallions, chopped

1 fresh jalapeño

2 T fresh cilantro, chopped

Honey Lime Vinaigrette:

Zest and juice of 1 lime

3 T vegetable oil

1 T honey

1 clove garlic, minced

A pinch of cayenne pepper

Coarse Kosher salt & fresh ground pepper to taste

Remove husks and silk from the corn. Take 6 large, clean pieces of husk and set aside to be used for serving.

Grill corn over medium high heat for 10 minutes until tender and slightly browned. Grill the jalapeño until slightly charred on the surface. Remove the corn and jalapeño from the grill and allow to cool.

Cut the corn off the cob and transfer to a large mixing bowl. Remove the stem and seeds from the jalapeño and finely chop. Add jalapeño to bowl, along with the tomatoes, scallion, cilantro and avocado.

Prepare the vinaigrette by combining lime zest and juice, oil, honey, garlic, cayenne, salt and pepper in a small bowl and whisk until well blended.

Pour the vinaigrette over the corn mixture and toss gently. To serve, line a serving platter with the reserved husks and spoon the corn salad on top.
